ALMOST-FAMOUS SPICY FRIED SHRIMP
When Bang Bang Shrimp first hit the menu at Bonefish Grill eight years ago, it was a flop. The dish - crunchy fried shrimp in Thai chili sauce - wasn't the problem. The name was. After chain founder Tim Curci changed the name from Creamy Spicy Shrimp to Bang Bang Shrimp, the appetizer became the restaurant's best-selling dish. And as the shrimp exploded in popularity, so did Bonefish Grill. The chain now has more than 150 locations across the country. Regulars everywhere have a nickname for the signature snack: They just order a "Bang." Many of these fans, including Lori Piscopo from Valley Township, PA, wrote to us asking for the recipe, and while Curci remained tight-lipped on the details, Food Network Kitchens managed to create this perfect imitation.

- Make the sauce: Mix the mayonnaise, chili sauce, honey, 1/4 teaspoon salt and 1 tablespoon water in a large bowl; set aside.
- Prepare the shrimp: Heat about 2 inches of vegetable oil in a heavy-bottomed pot or Dutch oven over medium heat until a deep-fry thermometer registers 350 degrees F. Meanwhile, whisk the eggs in a shallow bowl. Whisk the flour, cornstarch and 1 teaspoon each salt and pepper in another shallow bowl.
- Working in batches, dredge the shrimp in the flour mixture, shaking off any excess, dip in the beaten eggs, then return to the flour mixture, turning to form a thick crust. Fry the shrimp in the hot oil until lightly golden, 1 to 2 minutes, adjusting the heat as needed to maintain the oil temperature. Transfer to a paper-towel-lined plate with a slotted spoon.
- Toss the shrimp with the prepared sauce. Arrange the lettuce in a shallow serving bowl or on individual plates. Top with the shrimp and garnish with scallions.
SEAFOOD NEWBURG

- To make the Newburg sauce, combine the flour, paprika, curry powder, nutmeg, cayenne, and salt, to taste, in a small bowl and set aside. Melt the butter in a large saucepan over low heat. Add the shallot and cook for 3 minutes until it begins to brown. While the shallot is cooking, bring the milk and tomato paste to a simmer in a small saucepan over medium heat; be careful not to let it boil over. Add the flour mixture to the browned shallot and stir until mixed well with the butter. Add the sherry and whisk until smooth. Add the hot milk mixture to the flour mixture slowly, whisking constantly until the mix is creamy and thick. Remove from heat and set aside.
- Put the water, salt, bay leaves and peppercorns in a large saucepan and bring to a boil over high heat. Add the scallops and boil for 3 minutes. Remove immediately and set aside. Do the same with the shrimp and lobster tail meat.
- Add the cooked shell fish to the Newburg sauce and bring to a simmer over low heat.
- Serve over white rice, garnished with the Gremolata and a side of Sea Salt Roasted Asparagus. If serving the Newburg on a large platter, arrange the asparagus around the platter edges.
- Mix all of the ingredients together in a small bowl. Refrigerate until ready to use.
- Preheat the oven to 400 degrees F.
- Trim the ends off the asparagus and toss the spears with the olive oil in a mixing bowl. Put the asparagus onto a sheet pan, sprinkle with the salt and put in the preheated oven until they begin to brown, about 15 to 20 minutes. Remove from oven and divide evenly among the 4 dinner plates.

Steps:
- Heat 1 teaspoon oil in a large non-stick skillet over medium-high heat.
- Add shrimp.
- Saute 3 minutes and remove from skillet.
- Keep warm.
- Add 1 tsp oil to skillet.
- Add bella mushrooms and saute 5 minutes.
- Combine milk, flour, sherry, and egg yolk, stirring well with a whisk.
- Add to the mushrooms.
- Bring mixture to a boil, reduce heat and simmer until thick (about 3 minutes), stirring constantly with a whisk.
- Return shrimp to skillet and stir in salt and peppers.
- Cut each toast slice in half diagonally.
- Arrange 4 toast triangles on each of 2 plates.
- Top with 1 1/2 cups shrimp mixture, and sprinkle with chives.

BAKED SHRIMP NEWBURG
Ever since I can remember my mother has made a "quickie" version of "Shrimp on Toast" for a fast lunch. It was buttered toast, canned shrimp and a cream sauce. Fast to do, and tasted fast. Tonight I'm ratcheting it up a few notches for her. Hope she will like it. I know there are other baked versions of Newburg but I don't seem to be able to find one quite like this.

- Preheat oven to 350°F
- Slice the bread on the diagonal about 1/2 inch thick, and toast. You have to have enough slices to cover the bottom of a 9x9 ovenproof pan twice. Set toast aside.
- Peel the shrimp and roughly chop. Set aside.
- Heat the butter in a medium saucepan and sauté the onion and celery until softened. Add the flour and whisk. Slowly add in the milk and simmer until thickened. Let cook for one minute to get rid of the raw flour taste.
- Stir in the sherry, water, curry, paprika, pepper and salt. Remove half of the sauce and set aside. (Note: the better the sherry the better the sauce will taste.).
- Reheat remaining sauce in the saucepan to a simmer and add the shrimp and half the cheese. Cook until shrimp are almost done, about 1-2 minutes.
- Place one layer of the toast in the bottom of the pan. Pour the shrimp mixture over the top and smooth out. Arrange remaining toast on top. Pour reserved sauce over the final layer of toast and sprinkle on remaining 1/2 cup of cheese.
- Bake for about 25-30 minutes, or until bubbly on top.

- In large skillet over medium heat, melt butter; add onion and cook 3 minutes.
- Add shrimp and cook until barely pink.
- Stir in soup, milk, cream cheese, sherry, thyme and peas.

- Make white sauce by melting butter, add flour and cook until it bubbles, add onions, simmer a minute.
- Add hot milk and cook until sauce thickens.
- Add peeled raw shrimp, pimentos and liquid from one whole can, 2 tablespoons Lea & perrins sauce and beef bouillon cubes disolved in hot water, dry mustard, chopped onion tops, dash of tabasco sauce.

- Spray a large sauce pan with cooking spray and heat over medium heat.
- Place shrimp in pan and sprinkle with seasoning salt.
- Cook for 2 minutes, while stirring. Remove shrimp from pan, set aside.
