GINGERBREAD COOKIES
These holiday gingerbread cookies have less than half of the fat than most gingerbread cookies but the same great flavor and are super easy to make!

Steps:
- In a large mixing bowl, beat the butter, sugar and applesauce until smooth.
- Add the egg and molasses, mix well.
- In another large bowl, combine flour, baking soda and spices.
- Add to sugar and molasses mixture, stirring well.
- Divide the dough into two flat balls; cover with plastic wrap and chill in the refrigerator for at least 2 hours.
- Preheat oven to 350°F.
- Generously dust the surface of your working area with flour before rolling out the dough.
- Work with one ball of dough at a time, keep the other refrigerated while you do so.
- Roll the dough out to 1/4 or 1/8-inch thickness, sprinkle a little flour on top of the dough if it's a little sticky.
- Cut the gingerbread with a cookie cutter shape of your choice.
- Place cookies 1 or 2 inches apart on a silpat-lined baking sheet.
- Bake 10-12 minutes.
- Mix the egg whites with lemon juice.
- Combine with powdered sugar, mixing well. If the icing is too thin, add more powdered sugar, if it's too thick add a drop of lemon juice.
- Add to a piping bag to decorate cookies when cookies are cooled.

- Mix it all together, roll into balls, press with a fork dipped into sugar.
- Bake at 300F about 12 minutes.
ALMOST FAT-FREE GINGER COOKIES
Steps:
- Preheat oven to 350℉ (180℃). Into a medium bowl, sift together flour, ginger, baking soda, cinnamon, cloves, and salt. In a large bowl with electric mixer, beat Prune Butter and sugar until well-blended. Beat in egg and molasses until well-blended. Stir in flour mixture until completely mixed. Place a little sugar in a medium bowl. Scoop out heaping teaspoonfuls of mixture. Using your palms, roll into ¾ inch balls and drop into the sugar. Roll to cover the surface completely; then place balls 2 inches apart on ungreased baking sheets. Bake until cookies are slightly rounded and tops appear lightly browned and crackles. Remove baking sheets to wire racks to cool slightly. The, using a metal pancake turner or palette knife, remove cookies to wire racks to cool completely. Repeat with remaining cookie dough and sugar. Make about 8 dozens. Store in airtight containers.

FAT-FREE CHEWY CHOCOLATE COOKIES
These are so fudgy and chewy they almost melt in your mouth. I was looking for a low-fat chocolate cookie but never expected to find something this good. These make me feel like I'm in chocaholic's heaven! I found these online, but they're originally from a Karo pamphlet.

- Spray cookie sheets with cooking spray.
- In large bowl, combine flour, sugar, cocoa, baking soda and salt (I like to sift them together to destroy any lumps in the cocoa).
- Stir in corn syrup and egg white until blended (dough will be thick and slightly sticky).
- Drop by rounded teaspoon onto prepared cookie sheets.
- Bake at 350 degrees for 7 to 9 minutes or just until set (cookies will be soft when pressed).
- Do not overbake.
- Cool on wire rack.

- Set aside.

- Preheat oven to 350 degrees F (175 degrees C). Sift together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
- In a large bowl, cream together the margarine and 1 cup sugar until light and fluffy. Beat in the egg, then stir in the water and molasses. Gradually stir the sifted ingredients into the molasses mixture. Shape dough into walnut sized balls, and roll them in the remaining 2 tablespoons of sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.

I HAVE BEEN LOOKING FOR A GOD FAT FREE COOKIE RECIPE AND I FOUND IT!! LOOK NO MORE!these don't necessarily have to be sugar cookies that you are making, these would probably work with molasses, cinnamon, cloves and ginger for a gingersnap or cocoa for a chocolate fudge cookie.

- Preheat oven to 450°F.
- combine the flour, baking soda, cream of tartar, and salt in a large bowl. mix throughly with a fork, slightly fluffing the flour to create mild pockets of air in the mixture.
- Add Splenda and mix again.

GIANT LOW FAT GINGER COOKIES
These are wonderful soft and chewy ginger cookies. They make a lovely afternoon treat or could be put in a lunch box. They are originally from "Hey, Mom! I'm Hungry!" by Susan Powter and were supposed to be cookies to use to make ice cream sandwiches. Honestly, though, they never last long enough in our house to put ice cream between them! They are gobbled up as soon as they are cool enough to hold!
