- Cut a slit into each date. Set the nuts into the dates with the nuts resting lengthwise on the dates. The shapes of the almond and date are similar. Don't wedge the nut too deep. It should rest half-in and half-out of the date. Arrange filled fruit on a small serving plate.

I found this recipe looking for Middle Eastern recipes for ZWT6 and realized that as far back as I can remember this was exactly the way my mom and paternal grandmother made stuffed dates for the holidays using our Louisiana pecans. So very good considering its simplicity.

- Heat oven to 425ºF.
- Cut slit in long side of each date, being careful to not cut completely through date. Remove and discard pits. Cut cheese into 16 (1x1/4-inch) sticks. Stuff each date with cheese and 2 nuts.
- Wrap 1 bacon piece around each date, completely enclosing cheese. Place on rack of broiler pan.
- Bake 14 to 15 min. or until bacon is crisp, turning after 8 min. Cool 5 min; transfer to plate. Serve warm or at room temperature.

- Carefully remove the pits from the dates, replacing each one with a whole almond.
- Pour the honey into a heavy saucepan and place it on low heat.
- When the honey is liquid, add the cinnamon and pepper; stir well.
- Put the stuffed dates in the honey and stir gently to coat. Leave on very low heat for 5 minutes until the dates are hot. Watch the sauce so that it doesn't boil or even simmer.
- Serve warm, or let cool and eat. Enjoy!
MOROCCAN STUFFED DATES
Stuffed dates are a Moroccan sweet traditionally served during Ramadan and special occasions. Orange flower water and cinnamon are used to flavor the almond paste filling. If you prefer, you can replace the orange flower water with lemon zest. Garnish the stuffed dates as desired with granulated sugar, walnut pieces or even a little shredded coconut. Select firm, chewy dates.

- Blanch and peel the almonds. Bring some water to a boil in a small pot. Add the almonds and leave to boil for one or two minutes. Remove the almonds from the heat and drain. While the almonds are still warm, remove the skin by pinching individual almonds between your forefinger and thumb. Leave the skinned almonds to cool.
- Make the almond paste. Process the almonds, sugar and cinnamon in a food processor until the almonds are a powdery mixture which is moist enough to pack. Add the butter and orange flower water and continue processing until a smooth paste forms around the blade. Remove the paste from the processor.
- Stuff the dates. Roll small cylinders of almond paste the same length as your dates, but only about 1/3 the diameter. Take a date, make a vertical cut deep enough to remove the pit, but not so deep as to cut the date in half. Discard the pit, insert a cylinder of almond paste, and press the sides of the date firmly around the paste, while leaving a portion of paste exposed. Repeat with the remaining dates and almond paste.
- Garnish the dates. This is an optional step; you might try one of the following methods or be creative and come up with your own:.
- Top the exposed paste with a piece of walnut, shredded coconut, or light dusting of cinnamon.
- Roll the stuffed date in granulated sugar.
- Score the exposed almond paste with the dull side of a paring knife, then roll the date in sugar.
- Store the stuffed dates in an airtight container in the fridge. Bring them to room temperature before serving.

Don't let anyone tell you otherwise...THESE ARE WONDERFUL. They are always the very first thing to go at a party. When I catered I always told my customers to order 2-3 times more of these than anything else. Most people expect scallops but are pleasantly surprised by the sweet wonderful flavor inside. A combination of sweet, crunchy, salty and smoky is a real winner! You won't be sorry you went out on a limb to try these. You can prep ahead of time, freeze and then pull them out of the freezer and bake right before the party.

Steps:
- Stuff each date with one almond.
- Cut bacon into half or thirds.
- Wrap bacon around date and secure with a round toothpick.
- Preheat oven to 400 degrees.
- Place dates on a foil lined (they are messy and this makes them much easier to clean up) baking pan and cook until bacon is crispy (around 15 minutes).
- Drain on paper towel and serve warm or room temperature.
- Watch them disappear!
