LOW-CARB SESAME GINGER DRESSING



Low-Carb Sesame Ginger Dressing image

This recipe for Low-Carb Sesame Ginger Dressing makes a tangy salad dressing loaded with ginger and garlic goodness. This dressing can be a part of a low-carb, keto, Atkins, gluten-free, or sugar-free diet.

2 tablespoons raw ginger (peeled and minced*)
2 cloves garlic (crushed*)
2 tablespoons low-sodium, gluten-free soy sauces ((may substitute tamari or coconut aminos) )
1/4 cup rice vinegar
1/4 cup avocado oil
1 teaspoon toasted sesame oil
1 tablespoon almond butter ((may substitute miso))
2 teaspoons allulose ((see write-up above for substitution information))
1 teaspoon sesame seeds ((optional))

Steps:

  • Put the ginger and garlic in a food processor. Cover and pulse a few times to mince.
  • Add the soy sauce, vinegar, avocado oil, toasted sesame oil. almond butter, and allulose to the food processor. Cover and process until smooth.
  • Add the sesame seeds to to food processor. Cover and pulse once to stir in the seeds.
  • This dressing may be served immiediately. If not serving the dressing right away, put it in an airtight container and refrigerate. Shake before using.
  • If you don't have a food processesor, whisk the ginger, garlic and almond butter together, then slowly add the soy sauce, whisking to keep the mixture from separating.
  • Gradually whisk in the avocado oil. Once the mixture is smooth, stream in the vinegar while whisking. Whisk in all remaining ingredients.

This is almost identical to one of my favorite salad dressing at the resturaunt Bread and Company. There, it is served on a strawberry fields salad, but it makes a delicious dressing on any salad, fruity, oriental, or as a mariande. Just like at the resturaunt it is oily, but thats what makes it so tasty! Shake well before using, and try not to eat it as soup!

Number Of Ingredients 5

1 cup sesame oil
1/2 cup rice vinegar
2 tablespoons chopped ginger (fresh or in a jar)
1 tablespoon soy sauce
1/4 cup toasted sesame seeds

Steps:

  • Toast sesame seeds in a dry, hot skillet just until they turn brown and begin to pop.
  • Be careful not to burn them.
  • In a food processor blend vinegar, ginger, soy sauce and sesame seeds.
  • Slowly blend in sesame oil until emulfisified.
  • Refrigerate and Enjoy!

  • In a mixing bowl large enough to fit all of the ingredients, make the dressing: whisk together the rice vinegar, vegetable oil, brown sugar, soy sauce, lime juice, sesame oil, ginger, garlic, and jalapeño.
  • Snap or cut off the tough ends of each asparagus spear. Cut the asparagus on the bias into very thin slices (about 1/8-in thick), leaving the tips intact. Add the sliced asparagus to the mixing bowl and toss with the dressing. Add the scallions, cilantro, mint, and sesame seeds and toss again. Taste and adjust seasoning with salt, if necessary. Refrigerate for at least 2 hours or overnight. When ready to serve, stir in the almonds and then taste and adjust seasoning (you will likely need to add more lime or rice vinegar, as the flavors mellow).
  • Note: When handling jalapeño peppers, be sure to keep your hands away from your eyes and wash your hands immediately afterwards so the juices don’t irritate your skin.
