EASY SAUSAGE AND RICE CASSEROLE
Easy Sausage and Rice Casserole is simple to make and big on flavor! Sausage, rice, celery, and onions all baked in a creamy sauce and the result will wow the entire family!

Steps:
- Preheat oven to 350 degrees. In a medium-sized skillet over medium-high heat add the sausage and cook halfway. Add the onion, celery, and garlic and continue to cook until the vegetables are tender and the sausage is no longer pink.
- Add the sausage to a 2-quart casserole dish. In a small bowl, whisk together the chicken broth and cream of celery. Add the rice to the sausage and soup. Mix together until incorporated. Top with slivered almonds. Cover tightly with aluminum foil and bake for 60 minutes. Let rest for 10 minutes before serving.

- Preheat oven to 375 degrees F (190 degrees C).
- In a Dutch-oven over medium heat, brown the sausage with the onion, celery and bell pepper; drain. Pour in rice, hot water, and soup mix. Stir until any lumps of soup have melted. Top with almonds. Cover and bake in a preheated oven for 1 1/2 hours.

- Preheat oven at 350°.
- Brown sausage in frying pan and pour off grease.
- Add chopped onion, garlic, celery, and green pepper to sausage and simmer until tender.

- Preheat oven to 325 degrees F.
- Saute sausage, onion and red pepper until sausage is no longer pink and the onion, celery and red pepper has softened.
- Drain off fat.
- Put sausage mixture in a 2 quart ovenproof casserole.
- Stir in rice, soup mix and water.
- Bake, covered, at 325 F.

Steps:
- Fry sausage; crumble and drain on paper towels.
- Remove all but about 1 tablespoon sausage grease; add onions and mushrooms and sauté till onions are wilted.
- In another pan, melt butter; stir in flour.
- Stir in cream and chicken broth, stirring until thickened.
- Add seasonings to simmering sauce.
- Add the sausage, onions and mushrooms to the sauce.
- Add wild rice mix with package of seasonings to the sauce mixture. (If using plain wild rice mixture, you may want to adjust the dried spices added to the sauce.) Stir well.
- Pour into a greased 1 1/2-2-quart casserole dish.
- Cover and bake for 50 minutes at 350°.
- Remove cover and sprinkle with almonds.
- Return to oven for about 10 minutes to toast almonds.

- Preheat oven to 350.
- Heat oil in large skillet and cook celery, onions, pepper, mushrooms and parsley over med heat until onions are translucent, about 10 minutes. Stir in remaining seasonings.
- Add the uncooked rice and cook for several minutes, mixing well. Transfer the ingredients to a lightly oiled 3-qt casserole. If usng precooked rice, add it in this step.
- Add broth and half of the alomds. Stir until ingredients are well combined.
- Top with remaining almonds and bake, covered, for one hour or until rice is soft and liquid has been absorbed.

CRUNCHY SAUSAGE CASSEROLE
From a 1981 Southern Living edition. Yummy for breakfast or dinner. I prefer it without the ground beef. Think ahead if you choose to refrigerate overnight. You may bake this without refrigerating overnight; bake, uncovered, at 300 degrees for 20 minutes or until hot. I like a little green pepper in mine too. Consider using spicy sausage or adding in some cayenne and garlic. Great on a breakfast buffet.

- Cook rice mix to pkg directions and set aside.
- Cook sausage, ground beef, and onion over medium heat until browned, stirring to crumble. Drain off drippings. Add rice, mushrooms, water chestnuts and soy sauce; stir well. Spoon into ungreased 2 quart casserole. Cover and refrigerate overnight.
- Remove from refrigerator, and allow to sit at room temperature 30 minutes. Sprinkle with almonds. Bake, uncovered at 325 for 50 minutes or until heated through.

My Gran makes this when the weather starts to cool. It tastes great is very filling and is awsome comfort food. Just use your favorte sausage. I like johnsonville italian sausage the best for this.
