SPUR SUGAR COOKIES
This was my great-great grandmother's recipe. We make it every year and ice the cookies, rather than sugaring them!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Cream the sugar with the shortening. Stir in the egg, salt and lemon flavoring.
- Combine the milk and the evaporated milk. Dissolve the baking soda in the milks. Add this mixture to the creamed mixture and combine well. Stir in enough of the flour to make a stiff dough.
- You can either roll out the dough and cut with cookie cutters or roll the dough into balls and press flat with the bottom of a glass. If desired sprinkle the cookies with sugar before baking.
- Bake at 350 degrees F (175 degrees CO for 10 to 12 minutes or until cookies are soft and lightly browned around the edges. Be careful not to overbake!

Steps:
- In a mixing bowl, cream butter with sugars. Beat in egg, sour cream and vanilla.
- Combine dry ingredients in separate bowl and gradually add to the creamed mixture. Stir in chips.
- Drop by rounded tablespoons 2 inches apart onto greased baking sheets. Bake at 350 for 12-15 minutes, or until set.
- Cool for 2 minutes on pan before removing to wire racks.
CORNMEAL SUGAR COOKIES
Cornmeal gives these crisp rounds a sandy texture that makes them an ideal cookie for ice cream sandwiches. They're also delicious all by themselves, or with a tall glass of iced tea or lemonade.

Steps:
- Preheat oven to 350°F with rack in middle.
- Whisk together flour, cornmeal, cornstarch, and salt.
- Blend butter, confectioners sugar, vanilla, and zest in a food processor until creamy, about 30 seconds. Scrape down side of bowl, then add all of flour mixture and pulse until dough just begins to come together.
- Roll out dough on a well-floured surface with a well-floured rolling pin to 1/3 inch thick. Cut out as many rounds as possible with a 2-inch round cookie cutter or drinking glass and transfer to an ungreased large baking sheet. Reroll scraps and cut out more rounds. Sprinkle tops with granulated sugar.
- Bake until undersides are pale golden, 12 to 14 minutes. Transfer to a rack to cool.

- Using masking tape, attach 2 wooden spoons to your work surface, placing them side by side with handles extended over edge. Lightly brush oil over handles. Cover floor with newspaper.
- Prepare an ice-water bath. Bring sugar, corn syrup, and 1/4 cup water to a boil in a small saucepan over medium-high, stirring until sugar has dissolved. Cook until mixture turns pale amber, 8 to 10 minutes. Remove from heat; transfer pan to ice-water bath. Let cool until slightly thickened (like the consistency of honey), about 1 minute.
- Cut the looped ends of a wire whisk with wire cutters (or use 2 forks held back to back). Dip ends into caramel. From about 2 feet above spoon handles, swing caramel back and forth like a pendulum in long arcs, allowing strands to fall in thin threads over the handles. Immediately gather strands into a loose nest. (If caramel becomes too stiff, gently reheat over low.) Use immediately.
SOUR CREAM DROP COOKIES
This heirloom cookie was originally made with homemade sour cream stored in a crock in the basement. The dough for drop cookies is soft enough to drop from a spoon. Use an ordinary teaspoon rather than a measuring spoon. Use slightly rounded spoonfuls rather than level ones. Push the dough off the spoon with a rubber spatula or another spoon. Make the drops all the same size so they will bake evenly. Bake them just until done. Remove immediately from baking sheet. If cookies are left for only a few minutes on a hot sheet, they will continue to bake and will be overdone and dry.

- Sift together flour, baking powder, baking soda, salt and nutmeg; set aside.
- Cream together butter and 1 1/2 cups sugar in bowl until light and fluffy, using electric mixer at medium speed. Add eggs, one at a time, beating well after each addition. Blend in sour cream and lemon extract.
- Gradually stir dry ingredients into creamed mixture, blending well. Drop mixture by rounded teaspoonfuls, about 3 inches apart, on greased baking sheets. Sprinkle each with sugar.
- Bake in 375°F oven 8 minutes, or until golden brown around the edges. Remove from baking sheets; cool on racks. Makes 5 1/2 dozen.
