Sometimes being sweet and flaky is just the ticket! These yummy bars may be sans almonds, but they're FULL of delicious flavor.

Steps:
- 1. Preheat oven to 350° F . Line a sheet pan with aluminum foil and coat with canola or vegetable spray. NOTE: I use a 13x9 inch pan becasue I prefer them thicker. You can adjust the size of the pan to your preference. You can use 1/2 the recipe if you do not need as much.
- 2. In a small bowl, cream butter and brown sugar until combined. Add the flour and salt. Carefully mix to combine until it resembles chunky bread crumbs. Transfer into the prepared pan and evenly press the batter into an even layer. Bake for 8 minutes. Cool on a wire baking rack while preparing the coconut topping.
- 3. In a large bowl, combine the condensed milk, coconut, and vanilla. Spread over the crust and bake for another 20-25 minutes, until it begins to brown.
- 4. Melt the chocolate over a double boiler. Stir until melted and smooth. Pour over cooked coconut bars and spread into an even layer. Allow to cool then refrigerate until hardened, about 1 hour. Cut into 36 squares.
- 5. NOTE: Use chunks not chips (70% Cacao Bittersweet Chocolate Baking Chunks.) Bittersweet chocolate is available in several forms, including bars, chips, and chunks of various sizes. It is used in baking, cooking, and is eaten out of hand. NOTE: You can top with Almond Joy bites, sliced almonds or leave off. Use light or dark chocolate, your preference.
ALMOND JOY CHOCOLATE BARK
I'm slightly obsessed with Mounds and Almond Joy this week. I've been making tons of coconut, chocolate and almond recipes the last few days. So far, this one for gluten free Almond Joy Chocolate Bark is my family's favorite. I like the way the toasted coconut adds a tiny crunch to the bigger crunch of the almonds, all of it enrobed in delicious dark chocolate, of course. Go ahead and try some, see for yourself! http://www.elanaspantry.com/almond-joy-chocolate-bark/

ALMOND BARS
I have been baking these cookies for about 15 years now; I get so many requests for them during the holidays I can hardly keep up with the demand! I like to make the rolls bigger than the recommended 12x3-inch; this way I get bigger cookies, but you can do whatever you like. Make sure to use plenty of almonds to top them off.

Steps:
- Preheat the oven to 350 degrees F.
- In medium bowl combine flour, baking powder and salt. In a mixer beat together the butter and sugar until fluffy. Add egg and almond extract and beat well. Slowly add flour mixture and beat until combined, scraping down the sides of the bowl as necessary. Turn the dough onto a clean work surface, and, with a sharp knife, divide the dough into 4 even pieces. Roll each piece into a 12 by 3-inch roll (or whatever size you like).
- Place 2 rolls on an ungreased cookie sheet, 4 inches apart. Repeat with remaining rolls. Brush rolls with milk and sprinkle with almonds. Bake until edges are lightly browned, about 12 to 14 minutes, rotating the pans halfway through cooking. While cookies are still warm cut them crosswise at a diagonal into 1-inch strips. Cool on a wire rack.
- For the glaze:
- In a small bowl, mix the sugar and milk until smooth. Drizzle over almond cookies. Let sit until glaze is set, about 15 minutes.

Steps:
- Melt margarine, stir in sugar and graham crackers until all worked in together.
- Pat in the bottom of a 9x13 pan.
- Bake in a 350 degree oven for 10 minutes.
- while the crust is baking, mix the sweetened condensed milk with the coconut until all the coconut is incorporated with the sweetened condensed milk.
- I usually chop the almonds up as the bars cut easier when they are chopped rather than left whole, but that is a personal choice.
- When the crust is out of the oven, spread filling over the crust. Once the filling is spread, sprinkle the toasted almonds over the filling.
- Bake the bars for 20 minutes or until light golden brown.
- Once you take the bars out of the oven, I turn my oven off, sprinkle the chocolate chips over the bars and return to oven for a few minutes until the chips are melted enough to spread with a knife.
- I have found over the years that scoring the bars while the chocolate is still soft, helps when cutting the bars after they have cooled. Other wise when you cut the cooled bars, they don't seem to cut cleanly and neatly. I also cut them into tiny bite size pieces, they are very rich and by cutting them small, they go alot further.

- First, asses your medjool dates. It is imperative for the texture of these vegan date bars that the dates be plump, moist and sticky. If your dates feel dry and look wrinkled, soak them in hot water for about 10-15 mintues, drain the water and proceed with the recipe.
- Add the medjool dates, unsweetened shredded coconut, natural almond butter, vanilla extract, salt and almond extract to a food processor . Process for about a minute or so until the mixture looks crumbly and moist.
- Then, add in your sliced almonds and process the mixture again until the almonds are in tiny pieces (if they are too big, it could affect how well the bars hold together). Your mixture should be moist and sticky with no large pieces of dates or almonds remaining.

Evenly spread the base layer onto the bottom of your prepared baking dish and press down until level and well packed.
- Add all of the ingredients for the middle layer into the food processor and process until as creamy as possible, scraping down the sides of the bowl often. Spread this layer evenly on top of the base layer with a spatula.
- In a bowl, whisk together the ingredients for the chocolate top layer and pour this mixture over the coconut layer. Place the baking dish into your freezer until the chocolate topping sets.

- Line a 9"x13" baking pan with foil that hangs over the edge (for easy removal). Spray the foil with a light layer of cooking spray.
- With a mixer, or food processor, blend the butter and sugar until smooth and fully combined. Add flour and salt, and blend lightly until almost incorporated. Add 1 cup of cooled, toasted almonds, and blend until just combined.
- In a bowl, mix the sweetened condensed milk, coconut and vanilla. Spoon the mixture onto the crust, spreading gently, so you don't distrub the crust.

- Transfer the mixture to a boil and add in 1 Tbsp of water. Using your hands, mix together until he dates and almonds stick together and form a stick dough.
- Press evenly into the bottom of the prepared pan. If it's really sticky and hard to work with, I find it really helps to hold a piece of parchment paper, and use it help press the crust into the pan. Place into the freezer while you make the coconut cream layer.

- Melt coconut oil and add to the mixing bowl with agave and almond extract. Mix well. All of the coconut shreds should be coated and flaky.
- Gradually add the almond milk to the mixing bowl. You should be able to form the mixture into a giant ball. If it's too crumbly, add more milk. If it's too watery, add more coconut flour to soak up the liquid.
- Form the coconut mixture into a mini bar shape. I used about three tablespoons of the mixture for each bar. Place two almonds on top of each bar.

- Preheat oven to 325 degrees F. Grease an 8×8 glass baking dish and line with parchment paper (this will help with removal to cut the squares later). Add all ingredients for the crust into a food processor and pulse until completely combine. The dough should mix into a slight ball once combined. Put dough in a pan and use your fingers to press dough around evenly throughout the pan. Poke holes with a fork in the dough to keep it from rising in the oven. Bake crust for 20 minutes, until golden brown. Remove then let crust cool.
- Place all the ingredients for the coconut layer in a food processor and pulse until coconut becomes fine and completely combined. Spread coconut layer on top of crust and spread evenly throughout. Place in freezer for 5 minutes.
- Melt chocolate in a double boiler or microwave. Pour melted chocolate over coconut layer and use a spoon to smooth throughout. Place the almonds throughout the chocolate layer then place in the freezer for 10 minutes to harden the chocolate.
- Once hardened, bring to room temperature before cutting into squares then serve up. They are definitely better at room temperature when the chocolate has softened up a bit!

- In a food processor, put the filling ingredients and process for several minutes. The mixture should soften and heat the coconut oil and the coconut pieces should begin to break down and move smoothly. The less time you process, the more chunky it will be. Some time is necessary so that the mixture will bind well.
- Taste for sweetness, add more if you like. Coconut nectar gives the mixture a slight tan coloring...just like the original!!
- Pour the coconut filling in and spread around evenly. If you would like to use almonds, now is the time. Press them in!
