3 1/2 cups milk
1/2 cup water
1/3 cup almond butter
1 tablespoon cocoa powder
1 teaspoon cinnamon
3/4 teaspoon almond extract
sugar, to taste (or artificial sweetener)

Steps:

  • Combine all ingredients except almond extract and sweetener in a medium saucepan. Cook over medium heat, whisking constantly, until mixture is smooth and comes to a boil. Remove from heat. Stir in almond extract, sweeten to taste and serve.

4 cups milk (I like to use non homogenized)
1 cup heavy whipping cream
2 -4 tablespoons confectioners' sugar (depending on how sweet you like your whipped cream)
1 cup milk chocolate chips
1/3 cup instant malted milk powder
2 teaspoons vanilla extract
1 1/2 teaspoons almond extract, divided
extra malt drink powder (to garnish)

Steps:

  • In a large saucepan, heat milk over medium heat until it begins to form bubbles around the edge of the pan.
  • While milk is heating, beat cream in a chilled bowl until it begins to thicken. Add sugar and 1/2 teaspoons of almond extract and beat until soft peaks form.
  • Whisk chocolate chips and malted milk powder into the milk and continue to stir until chocolate is melted.
  • Remove from heat and whisk in the vanilla and remaining teaspoons almond extracts.
  • Pour into mugs, spoon whipped cream over each, and sprinkle with a little malt powder.

2 cups almond milk (unsweetened)
6 ounces bittersweet chocolate, chopped (or 6 ounces semi-sweet chocolate)
1 teaspoon unsweetened cocoa, plus more for garnish
1 teaspoon vanilla extract
1/2 cup almonds, roasted
2 ounces bittersweet chocolate, chopped (or semi-sweet)

Steps:

  • Place the chocolate and cocoa in a mixing bowl. Heat almond milk in a saucepan. Pour over chocolate and cocoa and whisk well to melt and make frothy. Stir in vanilla. If available, use a hand blender or hand mixer to make it even more frothy on top. Pour into mugs and serve immediately.
  • Dust with cocoa to garnish and serve with Chocolate-Covered Almonds.
  • Chocolate-Covered Almonds:.
  • Place a metal bowl of chocolate on top of one inch of water in a small saucepan. Bring water to a low simmer; stir chocolate until melted. Remove pan from heat. Working quickly, dip half of each almond in melted chocolate. Let dry on waxed paper, and serve.
  • To Roast almonds: Spread in an ungreased baking pan. Place in 350ºF oven and bake 10 minutes or until golden brown and fragrant; stir once or twice to assure even browning. Note that almonds will continue to roast slightly after removing from oven.
