ALMOND COOKIE CUTOUTS

Colored sugar and sprinkles create a festive look for these easy-to-decorate cookies. A little almond extract gives them pleasant flavor. They're a nice lighter addition to a Christmas cookie tray. -Test Kitchen

6 tablespoons butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
3/4 teaspoon almond extract
1/2 teaspoon vanilla extract
1-1/4 cups all-purpose flour
1/4 cup cornstarch
3 tablespoons ground almonds
1/2 teaspoon baking powder
1/2 teaspoon salt
Red and green colored sugar and/or sprinkles, optional

Steps:

  • In a small bowl, cream butter and sugars. Add egg and extracts; mix well. Combine the flour, cornstarch, almonds, baking powder and salt; add to creamed mixture just until blended. Shape into two balls. Cover and refrigerate for at least 2 hours. , On a lightly floured surface, roll out dough to 1/4-in. thickness. Cut out with lightly floured 2-1/2-in. cutters. Place on baking sheets coated with cooking spray. Sprinkle with colored sugar and/or sprinkles if desired., Bake at 350° for 7-9 minutes or until set and bottoms are lightly browned. Cool for 2 minutes before removing to wire racks.

From Weight Watcher's magazine. If you get 60 cookies out of a batch (I can't! LOL!), it is 1 point for every 2 cookies. I prefer to 'decorate' them in a very little drizzling of melted chocolate. Do not over bake! Prep time doesn't include refrigeration time.

1/3 cup granulated sugar
1/4 cup sliced almonds, lightly toasted
1/4 cup unsalted butter, softened
1/2 teaspoon vanilla extract
1 egg
1 cup flour
2 tablespoons confectioners' sugar
1/8 teaspoon salt
colored crystal sugar, for decoration (optional)

Steps:

  • Pulse the granulated sugar and almonds in a food processor until finely ground. Cream the butter and sugar mixture until light and fluffy. Add the egg and beat to combine. Add the flour, confectioner's sugar and salt and mix just until a dough forms.
  • Divide the dough in half; wrap each piece in plastic wrap and flatten into a disk. Refrigerate the disks at least 4 hours or overnight.
  • Preheat oven to 350°F Line two large baking sheets with parchment paper. Working with one disk at a time, roll the dough out between two 2 sheets of lightly floured waxed paper to the thickness of 1/8-inch. Using a 2 1/4-inch cookie cutter of any shape, cut out the cookies, rerolling the scraps to make a total of 60 cookies. Place on cookie sheets, one inch apart; sprinkling with colored sugar if using.
  • Bake 1 sheet at a time, until the cookies are light on top but golden on the bottom, 10-11 minutes. Cool completely on a rack.

3/4 unsalted butter, softened
1 cup sugar
1 egg
1 tablespoon vanilla
1/2 teaspoon almond extract
2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup coarsely chopped almonds
1/4 cup whole unpeeled almonds
1/4 cup cocoa powder
1/4 cup confectioners sugar

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, cream butter and sugar together until fluffy. Beat in the egg, vanilla, and almond extract. Sift the flour over the top, add the salt and the chopped almonds and fold to combine.
  • Pull off little pieces of the dough and roll them into balls about 1-inch in diameter, enclosing a whole almond in the center of each one. Place on an ungreased baking sheet and bake on the center rack of the oven for 15 to 20 minutes, until light brown. Transfer to racks to cool slightly. When cool enough to handle, roll 1/2 the cookies in the cocoa powder, and the remaining 1/2 in the confectioners' sugar. Serve warm or return to the rack to cool.

A great "sugar" coookie! The cream cheese makes them so soft and wonderful! I've substituted vanilla for the almond extract in the frosting when I didn't have any on hand without any problems.

1 cup butter, softened
1 (8 ounce) package cream cheese, softened
1 1/2 cups sugar
1 egg
1 teaspoon vanilla
1/2 teaspoon almond extract
3 1/2 cups flour
1 teaspoon baking powder
2 cups powdered sugar, sifted
2 tablespoons butter, softened
1/4 teaspoon almond extract
4 -5 teaspoons milk

Steps:

  • Beat butter and cream cheese until well combined.
  • Add sugar, beat until fluffy.
  • Add egg, vanilla, almond extract; beat well.
  • In medium bowl mix flour and baking powder (or sift).
  • Add flour mixture to cream cheese mizture; beat until well combined.
  • Divide dough in half.
  • Cover and chill 1 1/2 hours or until dough is easy to handle.
  • On floured surface roll dough to 1/8" thickness & cut with cookie cutters.
  • Place on ungreased cookie sheets.
  • Bake in 375 degree oven for 8-10 minutes or until slightly browned.
  • Remove to wire racks to cool.
  • FROSTING:.
  • In bowl beat powdered sugar, butter, and almond extract until smooth.
  • Beat in enough milk until frosting is of piping consistency. For spreadable frosting, add a little more milk.
  • Stir in a few drops of food coloring, if desired.

My best friend in college gave me this recipe from her mom's collection. They're wonderful as written, however, add a little extra flour to the dough, skip tinting half red, and you have the most delicious sugar cookie dough for cookie cutouts I've ever had! I've used this dough for Xmas Cutouts for over a decade now. I use the icing from Recipe #261889.

Number Of Ingredients 8

1 cup butter
1 cup powdered sugar
1 egg
1/2 teaspoon almond extract
1 teaspoon vanilla
2 1/2 cups flour
1 teaspoon salt
1/2 teaspoon red food coloring

Steps:

  • Beat together butter, powdered sugar, egg, almond extract and vanilla.
  • Mix together flour and salt, and add to the wet ingredients, stirring until well-combined.
  • Divide dough in half. Add red food coloring to half the dough. Roll even logs 1/2" wide of red dough, then white dough. Twist together and bend top to form cane shape.
  • Bake on ungreased sheet for 9 minute at 375 deg. Can be sprinkled with a crushed candy cane and sugar mixture while still warm.
