EASY HOMEMADE ALMOND BUTTERCREAM FROSTING RECIPE



Easy Homemade Almond Buttercream Frosting Recipe image

1 cup butter (softened)
3 cups powdered sugar (can be sifted to get rid of any lumps)
1/2 tsp almond extract
1/2 tsp vanilla extract
1/8 tsp salt
2 - 3 tablespoons milk (may need more, depending on desired consistency, but not too much more)

Steps:

  • I recommend using a stand mixer, if you have one, if you would also like to achieve the super light frosting feel. Even if you don't have one, you can still get that lightness, it will just involve you standing there with your hand mixer for a lot longer than you might want to stand there.
  • In a large mixing bowl, beat the butter until it's a smooth consistency.
  • Add in the powdered sugar, salt, and both extracts. Mix these well.
  • Start adding in the milk a little at a time, especially if it becomes too difficult to mix the original mixture. Keep adding milk and beating the mixture until you reach your desired consistency.
  • After you've added all the ingredients, add food coloring, if desired.

2 cups all-purpose flour
1/2 teaspoon baking soda
Pinch of salt
2 sticks unsalted butter, at room temperature
1 cup granulated sugar
1 large egg, at room temperature
1 teaspoon vanilla extract
1 teaspoon almond extract
1 stick unsalted butter, at room temperature
1 1/2 teaspoons almond extract
1 1/2 teaspoons vanilla extract
1/2 teaspoon salt
1 3/4 cups confectioners' sugar, sifted
Silver nonpareils or Jordan almonds, for topping

Steps:

  • Make the cookies: Whisk the flour, baking soda and salt in a medium bowl. Beat the butter and granulated sugar in a stand mixer fitted with the paddle attachment on medium speed until fluffy. Beat in the egg, then beat in the vanilla and almond extracts. Reduce the mixer speed to low; add the flour mixture and beat until combined. Cover and chill 1 hour.
  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Scoop 1-inch mounds of dough onto the prepared baking sheets, about 2 1/2 inches apart; flatten the mounds with your fingers. Bake until the cookies are golden around the edges, about 10 minutes. Let the cookies cool 10 minutes on the baking sheets, then transfer to racks to cool completely.
  • Make the frosting: Beat the butter, almond and vanilla extracts, and salt in a stand mixer fitted with the paddle attachment on medium speed until light and fluffy. Add the confectioners' sugar and beat until smooth and creamy. Transfer to a piping bag fitted with a small star tip. Pipe the frosting onto the cooled cookies and top with nonpareils or Jordan almonds.

1 teaspoon almond extract (✅)
4 cups powdered sugar
1 tablespoon milk, plus more to thin if needed
1/8 teaspoon salt

Steps:

  • ⭐️Whip the butter and almond. Add butter and almond extract to the bowl of the mixer. Whip for 1-2 minutes until it's light and fluffy.
  • ⭐️Add the other ingredients. Add the powdered sugar, milk, and salt. Slowly blend until powdered sugar is mixed in. Add more milk if the mixture is too thick. Turn mixer to high speed and whisk for 2-3 minutes or until the icing is light and fluffy. Add more milk to get the consistency you'd like.
  • Add to decorating bag. Place desired tip into the decorating bag. Fold the top of the bag over to avoid getting icing on the outside of the bag. Fill the bag with icing, just over half full. Twist the top and gently squeeze until icing comes out. Use as desired. Store in the refrigerator or freeze the leftovers.

Easy to make almond-butter cookies, frosting optional. The flavor is delicate and very yummy. I am a novice in the kitchen and made these one night in about 30 min on a whim. The frosting hardens quickly, but it's easy to add water and microwave 15-30 seconds to soften it up again for spreading. I found this recipe on the back of the Publix sweet cream butter (unsalted) package; the credits on the package are "Publix Apron's Simple Meals"

3/4 cup butter, softened
1/2 cup sugar
1 egg
1 teaspoon almond extract
2 cups all-purpose flour
sugar (for flattening cookies)
2 tablespoons butter, melted
1 1/4 cups confectioners' sugar
1 teaspoon almond extract
1 -2 tablespoon milk
sliced almonds

Steps:

  • Preheat oven to 350°F Beat butter and sugar, in large bowl, with electric mixer on high speed until creamy. Add egg and almond extract, mixing well. Gradually add flour, mixing well.
  • Rolldough into 1-inch balls (or bigger for bigger cookies). Place 2 inches (or adjust as appropriate) apart on greased baking sheet. Dip a flat-bottomed glass into sugar and flatten balls.
  • Bake 10-12 minutes until bottom of cookies are golden brown. Cool 1 minute on baking sheet, then remove to wire racks to cool completely.
  • To prepare frosting, combine sugar and almond extract until smooth. Stir in milk, as needed, until frosting is spreading consistency. Spread on each cookie; top with an almond slice.
