ALL-PURPOSE TOMATO SAUCE BASE



All-Purpose Tomato Sauce Base image

An incredibly healthy savory sauce that I use as a base for everything - chili, spaghetti, lasagna, everything! I use all the surplus from my veggie garden for this recipe, then freeze the sauce. Making the base takes several hours to cook down, but then come winter, you can make spaghetti or lasagna in a flash!

Number Of Ingredients 10

2 large onions
2 cups green peppers, sliced
5 garlic cloves
2 lbs tomatoes, any kind
1 large zucchini
1 small fresh pumpkin
4 sprigs fresh rosemary
20 basil leaves
salt and pepper
olive oil

Steps:

  • Scoop out the seeds from the pumpkin, and slice. Cook lightly in the microwave until soft. Cool.
  • Roughly slice the peppers, onions and garlic. Lightly cook in a large dutch oven, until soft.
  • Blend the tomatoes in a blender or food processor, then add cubes of zucchini and pumpkin, a bit at a time.
  • Add the blended ingredients to the cooked peppers and onion.
  • Cook down until the sauce for several hours until desired consistency.
  • Cool, then freeze in plastic tubs or ziploc bags.

This is my all purpose BBQ sauce--for brisket, ribs, etc. It is a pretty traditional sauce, a little sweet and a little tangy! (It is also included in my brisket recipe.)

1 cup ketchup
1/2 cup brown sugar
1/4 cup red wine vinegar
2 tablespoons Worcestershire sauce
1/4 cup honey
1/4 cup Dijon mustard
2 tablespoons soy sauce
2 tablespoons molasses

Steps:

  • Mix ingredients together.
  • Cook over low for approximately 30 minutes.
  • Serve warm or at room temperature.

ALL-PURPOSE GREEN SAUCE



All-Purpose Green Sauce image

This tangy, creamy sauce is the perfect home for all those extra herbs you may have on hand from other recipes - that leftover sprig of mint, the stemmy part of that bunch of cilantro, the droopy basil. You can use any combination of soft herbs here; you'll need two packed cups altogether. And you don't have to limit yourself to herbs. Other flavorful, leafy options include arugula, celery leaves or pea shoots. For a vegan version, skip the yogurt and use more olive oil, along with a small squeeze of lemon for some acidity.

1 packed cup basil leaves
1/2 packed cup parsley leaves and tender stems
1/2 packed cup chopped chives
2 garlic cloves, peeled and smashed
Pinch of black pepper
1/4 cup plain Greek yogurt or sour cream
1/3 cup extra-virgin olive oil
1 1/2 teaspoons finely grated lemon zest
1/4 teaspoon kosher salt (Diamond Crystal), plus more to taste

Steps:

  • Place herbs, garlic and pepper in a food processor or blender, and pulse to combine, stopping to scrape down the sides of the container if necessary.
  • Add yogurt and purée until smooth. (This may take a minute or so; scrape down the sides of the container as needed.) With the motor running, gradually drizzle in the olive oil. Pulse in lemon zest and salt. Taste and add more salt if needed.
  • Use immediately or refrigerate in an airtight container for up to 5 days. Spoon over grilled or roasted chicken, seafood (especially shrimp and salmon), sausages, steaks, lamb chops and vegetables. Use as a marinade for chicken, lamb or pork; as a dressing for starchy salads with beans, potatoes or grains, or for hearty vegetable salads, like those with cucumbers or blanched and sliced sugar snap peas or green beans. Serve as a dip for crudité or chips. Spread in roast beef, lamb or pork sandwiches.

2 garlic cloves, minced
1 (15 ounce) can tomato sauce
1 (10 3/4 ounce) can condensed tomato soup, undiluted
1/4 cup grated parmesan cheese
1 tablespoon Worcestershire sauce
1 1/2 teaspoons dried oregano
1 teaspoon dried basil
1/2 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon dried parsley flakes
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon dried thyme (orignal recipe had a pinch of tarragon and ground cinnamon, not for us)
fresh ground black pepper, to taste (or hot sauce, cayenne pepper)

Steps:

  • In a large skillet or Dutch oven, cook the beef and garlic until beef is browned; drain.
  • Stir in all remaining ingredients.
  • Simmer, uncovered, for 30 minutes or until sauce is as thick as desired, stirring occasionally. Taste and adjust seasoning with salt and pepper.
  • Serve over pasta or rice, or use for making lasagna, pizza, chili dogs, tacos or sloppy sandwiches,.

Can double, triple this recipe, very basic add to recipe, Freeze in portion servings. Add whatever is in the frige, carrot , green pepper, celery, mushrooms etc. Serve over any kind of noodles or rice and sprinkle with parmesan. Use as a base for lasagna, tacos, chili or casseroles, just generaly handy to have in the freezer.

1 lb lean ground beef
2 onions, chopped
2 -4 cloves garlic, smashed
1 (5 1/2 ounce) can tomato paste
2 cups water or 1 (28 ounce) can stewed tomatoes
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon dried thyme
1/4 teaspoon fresh ground pepper or 1 dash red pepper flakes (optional)

Steps:

  • In large heavy frypan, cook beef over medium heat until no longer pink, breaking up with a spoon.
  • Drain fat off through a colander, Wipe frypan with paper towel and return beef to frypan.
  • Stir in onion and garlic, cook until softened.
  • Stir in tomato paste, tomatoes, breaking with back of spoon, oregano, baqsil, thyme and pepper.
  • Bring to boil, reduce heat and simmer for 10 minutes, thin with water if desired.

All-Purpose Stir-Fry Sauce (Brown Garlic Sauce) image

Adapted from Martin Yan's Chinese Cooking for Dummies. This is my favorite stir-fry sauce. It makes enough for two meals. Having extra on hand makes for a quick meal. My son will actually eat vegetables he can dip in the sauce! WARNING about the amount of soy sauce. When I used Kikkoman soy sauce, I found this sauce far too salty. I now use Angostura, which is much lower in salt. When adding soy sauce, start with less than half the amount and slowly add more to taste. Using vegetable broth makes this vegetarian. Yield: 1 3/4 cups (couldn't get that amount entered)

2/3 cup soy sauce
1/2 cup chicken broth
1/3 cup rice wine
3 1/2 tablespoons sugar
1 tablespoon sesame oil
1/4 teaspoon white pepper

2 tablespoons cornstarch
1/4 cup water

Steps:

  • In a bowl, combine soy sauce, broth, rice wine, sugar, sesame oil and white pepper. (See note in intro about the soy sauce).
  • Dissolve the cornstarch in 1/4 cup water.
  • Heat a pan over high heat; add the cooking oil, swirling to coat; add the garlic and ginger; cook, stirring, until fragrant, about 15 seconds.
  • Add the soy sauce mixture; bring to a boil.
  • Reduce heat to medium and cook for 1 minute.
  • Add the cornstarch solution and cook, stirring, until the sauce boils and thickens.
