Thin, Chewy, Chocolate Chip Cookies with Bran

2 cups all-purpose flour, lightly spooned or weighed ((260 grams))
1 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon cinnamon
1 cup unsalted butter (230 grams), softened
1 cup light brown sugar ((200 grams))
1/2 cup granulated sugar ((100 grams))
2 large eggs
1 teaspoon vanilla
1/2 cup wheat bran, unprocessed kind -- not bran cereal
2 cups semisweet chocolate chips
1/2 cup chopped pecans, optional

Steps:

  • Preheat oven to 350 degrees F.
  • Weigh the flour and mix it with baking soda, salt and cinnamon. Set aside.
  • Beat the softened butter and both sugars until creamy, then beat in the eggs, one at a time, beating just until blended. Beat in vanilla.
  • Add flour mixture and stir until smooth, then stir in the bran. Once bran is fully incorporated, stir in the chocolate chips and nuts.
  • Using a medium size cookie scoop, scoop out balls of dough and arrange them on a plate lined with plastic wrap. Cover and chill until ready to bake or bake immediately.
  • Arrange dough balls on a parchment lined or ungreased baking sheet and bake for about 12 minutes or until cookies appear done. They will be big, flat, and brown. Let them cool on the baking sheet for about 5 minutes, then loosen from sheet and transfer to a wire rack to finish cooling.

1/2 cup brown sugar, firmly packed
1/4 cup canola oil
2 tablespoons water
2 egg whites, slightly beaten
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/8 teaspoon table salt
1 1/2 cups Raisin Bran cereal
1/2 cup all-purpose flour, you can use 1 C All Purpose and omit the whole wheat
1/2 cup white whole wheat flour
1/4 cup mini chocolate chip, more if desired
1/4 walnuts (optional)

Steps:

  • Preheat oven to 350°F
  • Mix sugar, oil, egg whites, water, cinnamon, salt, baking soda in a large bowl. Set aside.
  • Add cereal and flour.; stir well until blended.
  • Add chocolate chips and nuts, if using, mix well.
  • Spray baking sheet with nonstick spray or use parchment paper or silicon mat.
  • Drop by small cookie scoop onto baking sheet. 2" apart. Bake for 14 minutes or until lightly browned. NOTE: if using a different measure, adjust timing accordingly. I used a small cookie scoop.
  • Remove from baking sheet and place on wire rack. Cool.

1/2 cup oat bran
1/2 cup water, at room temperature
1/4-1/2 cup margarine
1/3 cup sugar
1 tablespoon sugar substitute
1/2 cup egg white (3 to 4 medium)
2 teaspoons vanilla
2 cups all-purpose flour
1/3 cup cocoa
1 teaspoon baking soda
2 tablespoons dry buttermilk
1/2 teaspoon salt
2/3 cup miniature chocolate chip

Steps:

  • Mix oat bran and water, let stand at room temperature for 30-45 minutes .
  • (This timing is very important.) Cream margarine, sugar and sugar substitute together until light and fluffy.
  • Add egg whites and vanilla and mix at medium speed for 30 seconds Scrape down the bowl Stir flour, cocoa, soda, dry buttermilk and salt together to blend well.
  • Add to the creamed mixture along with the oat bran mixture and mix at medium speed to blend.
  • Add chocolate chips to dough Drop by tablespoonful onto cookie sheets that have been sprayed with pan spray or lined with aluminum foil.
  • Bake at 375° for 12 minutes.
  • (The cookies will not be crisp if they are not baked the full length of time.) Remove from hot cookie sheets to wire racks to cool.
  • Use 1 cookie per serving.
  • This recipe is a good source of fiber.
  • Food exchanges per serving (1 cookie): 2/3 bread and 1 fat Low sodium diets: omit salt, use salt-free margarine Low-cholesterol diets: May be used as written.

This is my families favorite chocolate chip cookie ever! When they are cooled onto a brown paper bag, it makes them nice and chewy. The flavor is excellent. I like to use a good high quality chocolate, you could use chunked chocolate if you want too, or 1/3 cup fresh coconut.

½ cup All-Bran® Original
½ cup chopped walnuts
1 (6 ounce) package semi-sweet chocolate morsels

Steps:

  • Stir together flour, soda and salt. Set aside.
  • In large mixing bowl, beat together margarine and sugars until light and fluffy. Add eggs and vanilla. Beat well. Mix in hot water. Add Kellogg's® All-Bran® cereal, flour mixture, walnuts and chocolate morsels, mixing until combined. Drop by teaspoon onto baking sheets coated with cooking spray.

1/4 teaspoon baking soda
3/4 cup unsweetened applesauce
1 cup brown sugar, firmly packed
1/2 cup sugar
2 egg whites
1 tablespoon skim milk
1 teaspoon vanilla extract
1 cup all-bran cereal

Steps:

  • Stir together flour, baking powder and baking soda. Set aside.
  • In large mixing bowl beat together butter, brown sugar and granulated sugar until thoroughly mixed.
  • Add egg, milk and vanilla. Beat well.
  • Stir in ALL-BRAN cereal and flour mixture, mixing until combined.
