Steps:
- In a large bowl, combine the first seven ingredients. Crumble beef over mixture and mix well. Shape into four patties., Grill burgers, covered, over medium heat or broil 3 in. from the heat for 4-7 minutes on each side or until a thermometer reads 160° and juices run clear. Top with cheese. Grill 1 minute longer or until cheese is melted. Serve on buns with bacon and toppings of your choice.

- Preheat the oven to 400 degrees F.
- Combine the mayonnaise, ketchup, mustard, relish and vinegar in a small bowl; set aside.
- Working in batches if necessary, add the bacon to a large cast-iron skillet over medium heat. Cook, flipping halfway through, until crisp and golden, about 10 minutes. Transfer the bacon to a nonstick baking sheet. Discard the bacon fat (or save for another use) and wipe the skillet clean but do not wash. Heat over medium-high heat until very hot, about 5 minutes.
- Add the buns split-side up to the baking sheet with the bacon and bake until the buns are toasted, about 5 minutes.
- Loosely form the beef into 4 balls. Add one ball of beef to the skillet and press firmly to flatten with a large flat metal spatula for 10 seconds, then gently remove the spatula. Sprinkle the patty generously with salt; repeat with the remaining beef balls, cooking in batches if necessary. Let cook, undisturbed, until well browned on the bottoms, 2 to 3 minutes. Flip the patties, sprinkle with more salt and top each with a slice of Cheddar. Continue cooking until the cheese is melted around the edges and the bottoms are browned, about 2 more minutes.
- Spread the mayonnaise mixture on the bun tops. Serve the patties on the bottom buns topped with the bacon, onion, tomato and lettuce.
BACON CHEESEBURGERS

Steps:
- Preheat a grill for high heat.
- Place bacon in a large skillet over medium heat. Fry, stirring occasionally. When the bacon is almost done, add the onion. Cook until the bacon is crisp, and the onion is tender. Remove onion and bacon from the pan with a slotted spoon, and transfer to a food processor. Pulse a couple of times to chop finely. Do not puree. Pour into a large bowl, and mix with steak sauce and ground chuck using your hands. Form into 16 patties.
- Place patties on the grill, and cook for 5 minutes per side, or until well done. Place a slice of cheese on top of each one during the last minute.

- Heat broiler ( George Foreman or bbq can be used). Mix 1/4 cup of BBQ sauce with ground beef. Shape into 4 patties. Broil, 4-6" from heat, 7-9 minute on each side or until cooked through (160*), brushing occasionally with remaining BBQ sauce. If using Foreman omit brushing of sauce until cooking is completed. - Make the barbecue sauce: Heat the vegetable oil in a medium saucepan over medium heat. Add the onion and garlic and cook, stirring, until softened, about 4 minutes. Add the chili powder and cook, stirring, until toasted, about 1 minute. Stir in the ketchup, preserves, mustard, vinegar, soy sauce, Worcestershire sauce and 1/2 cup water. Bring to a simmer and cook until slightly thickened, about 10 minutes. Transfer to a blender and puree until smooth; let cool to room temperature.
- Make the burgers: Combine the ground beef and 3 tablespoons of the prepared barbecue sauce in a bowl; mix with your hands until just combined. Form the meat into six 1/2-inch-thick patties; season both sides with salt and pepper.
- Preheat a grill to medium. Toss the onion with 1 tablespoon of the barbecue sauce and the vegetable oil. Grill (use a grill basket if you have one), turning occasionally, until lightly charred, about 8 minutes.
- Transfer 1/2 cup of the remaining barbecue sauce to a separate bowl for brushing. Increase the grill temperature to medium high and grill the patties, brushing with the barbecue sauce and flipping occasionally, about 8 minutes for medium rare; top with the cheese during the last minute and cover to melt. Toast the buns on the grill. Serve the burgers on the buns; top with the grilled onions, avocado slices and more barbecue sauce.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; reserve bacon grease.
- Mix bison, bread crumbs, egg, Worcestershire, salt, and pepper in a bowl until evenly combined. The mixture should be slightly sticky and easy to form. Split into 4 equal patties. Use some leftover bacon grease to moisten each side of the patties; this will inhibit them from sticking on the grill and adds a little flavor.
- Cook patties on the preheated grill until browned, about 5 minutes on each side. An instant-read thermometer inserted into the center of each patty should read at least 160 degrees F (70 degrees C). One day I planned on cooking burgers for dinner. When time came to make dinner, I didn't feel like a regular burger, go figure. So i came up with this. It went from boring to WOW!

- In a frying pan, start cooking the bacon. While the bacon is frying, cut up the onion and set aside. Finish cooking the bacon and remove and put on paper towels.
- Butter the buns and set aside.
- Drain the skillet that has the bacon grease into a bowl and set aside. (you will use this pan for the burgers).
- Make 5 patties out of the ground beef and place in the skillet. Fry on medium heat until cooked thoroughly.
- In the meantime in another skillet, lightly toast the buns. Set aside.
- By this time the burgers should be ¾ of the way done, add cheese to the top of the burgers to melt. Put the burgers on a paper towel whenever finished.
- In the meantime, pour a little bacon grease in the same skillet used for the buns and add the onions and burger seasoning and saute for up to 3 minutes. Add the BBQ sauce directly to the onions and heat for about 1 minute.
- Dress your burgers, add the patty and cross the bacon on top then add the BBQ onion mixture. Serve right away.
