Chorba frik is a variant of a very traditional soup Maghreb consumed in Algeria, Tunisia and Libya, prepared with mutton or lamb.

¾ lb lamb (, cut into pieces)
2 scallions
2 cloves garlic
1 bunch cilantro (, chopped)
1 stalk celery (, with leaves)
3 tomatoes
½ cup chickpeas ((soaked overnight))
1 teaspoon paprika ((and/or chili powder))
½ teaspoon cinnamon
1 teaspoon ground coriander
½ teaspoon ground ginger
1 tablespoon dried mint
2 tablespoons tomato paste
Salt
Pepper
1 cup freekeh (, rinsed and drained)
3 tablespoons olive oil
8 cups water
Pressure cooker

Steps:

  • In a pressure cooker, brown the meat in olive oil.
  • Add the garlic, scallions, tomatoes, and celery to meat. Add half the cilantro leaves and tomato paste. Add the chickpeas, stir and sauté over low heat covered for about 5 minutes, stirring occasionally.
  • Add the spices, salt, bay leaf, mint and hot water. Increase heat to bring to a boil, then reduce heat to medium.
  • Lock the pressure cooker and cook on medium heat for 1 hour.
  • Open the pressure cooker and check the amount of liquid. Add a little boiling water if necessary.
  • Add frik into the pan and cook for 10 to 15 minutes over low to medium heat, stirring regularly to prevent it from sticking to the bottom of the pot.
  • Turn off the heat and add remaining cilantro.

ZUCCHINI AND BASIL SOUP

2 tablespoons olive oil, plus more, for drizzling
1 cup chopped onion
1 cup chopped peeled potato
3 to 4 sprigs fresh thyme
1 medium clove garlic, minced
Kosher salt and freshly ground black pepper
3 1/2 cups low-sodium vegetable broth
2 cups chopped zucchini
1 cup packed fresh basil leaves, plus some leaves, for serving
Chopped toasted almonds, for serving

Steps:

  • Heat the oil in a medium saucepan over medium heat. Add the onion and cook, stirring, until soft, 3 to 5 minutes. Add the potatoes, thyme, garlic, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring, until the potatoes are well coated, 2 to 3 minutes more. Pour in the broth and bring to a boil, then reduce the heat and simmer for 10 minutes.
  • Add the zucchini, bring back to a simmer and cook until tender, about 10 minutes, adjusting the heat as needed to maintain a simmer. Remove from the heat, discard the thyme and let cool at least 5 minutes. Stir the basil into the soup and carefully puree until smooth with a handheld immersion blender or in 2 to 3 batches in a blender (do not fill the blender more than halfway full).
  • Reheat the soup if necessary, adjusting the consistency and seasoning with additional water, salt and pepper.
  • Serve hot and garnish with a sprinkle of almonds, basil leaves and a drizzle of oil.

MY LOUBIA / LUBIA / LOOBIA - CLASSIC ALGERIAN BEANS!



My Loubia / Lubia / Loobia - Classic Algerian Beans! image

The best way to describe these beans is a spicier version of English baked beans! Haricot beans are cooked in a tomato sauce flavoured with lots of garlic, cumin & paprika. This recipe is for the way I cook it most - the slow cook way - but you can make it easily in a pressure cooker; just reduce the water to a total of 2 litres, add a chicken stock cube & take care with the seasoning. It should only take 45-50 mins in the pressure cooker. If you have any Algerian hot green peppers, this is really nice with 1-2 thrown in half way through! N.B: Time to make doesn't include overnight soaking of the beans.

500 g dried haricot beans
2 1/2 liters water
6 1/2 teaspoons paprika
3 1/2 teaspoons ground cumin
1 (400 g) can plum tomatoes, pureed or 400 ml passata
6 garlic cloves, minced or 6 garlic cloves, finely chopped
6 -8 pieces lamb or 6 -8 pieces beef
4 tablespoons olive oil
1 pinch black pepper
2 1/2 teaspoons salt
olive oil, & vinegar to serve

Steps:

  • The night before you want to make loubia, place the dried beans in a large bowl & cover with cold water. Allow to soak overnight, then rinse & drain before use.
  • In a large stock pot, dutch oven or casserole dish (about 4.5 L capacity), seal the meat in the olive oil. Add the beans, paprika & cumin, mix well & cook on low heat for a few minutes.
  • Pour 2 litres of water over the beans, add the salt & pepper. Cover & cook on a medium heat - so the loubia is on a fast simmer - for 1 hour.
  • After 1 hour, add 500ml extra water & the pureed / liquidised tin of plum tomatoes / passata. Add the garlic, 2 tsp salt, 2 1/2 tsp paprika & 1 1/2 tsp cumin.
  • Cover & cook for 30 minutes on medium heat as before.
  • After 30 minutes, remove the lid & simmer uncovered for a further 30 minutes. Do not let the sauce become too thick as when you add the olive oil & vinegar for serving, it thicken the sacue up automatically.
  • Check seasoning, you may need additional salt, then serve piping hot with plenty of fresh crusty bread.
  • Either add 1 tablespoon of olive oil & 1-2 tsp vinegar to each bowl before serving or let people add it themselves at the table.

2 pounds zucchini, cut into chunks
1 (15 ounce) can chicken broth
1 teaspoon salt
1 teaspoon curry powder

Steps:

  • Melt butter in a pot over medium heat. Add zucchini, chicken broth, salt, and curry powder to the pot; cook until the zucchini is soft, about 15 minutes.
  • Pour soup into a blender no more than half full. Cover and hold lid in place; pulse a few times before leaving on to blend. Puree in batches until smooth.

Zucchini are everywhere in the summertime, which is why we always need simple ways to use them all up before the season is over. You can serve this Italian-inspired soup warm or at room temperature.

1/4 cup plus 2 tablespoons olive oil
5 large zucchini (about 3 pounds total), 4 chopped into 2-inch pieces, 1 very thinly sliced into rounds on a mandoline
1 yellow onion, chopped into 2-inch pieces
Kosher salt and freshly ground black pepper
4 cups warm water
Lemon Oil, recipe follows
1/2 cup olive oil
1/2 lemon, cut into quarters, seeds removed

Steps:

  • Heat the 1/4 cup olive oil in a large Dutch oven over medium heat. Add the chopped zucchini and onions. Season with salt and pepper and toss to coat. Increase the heat to high and add the water. Bring to a boil and cook for 8 minutes.
  • Meanwhile, in a large skillet, heat the remaining 2 tablespoons olive oil over medium-high heat. Working in batches, lay the sliced zucchini in a single layer in the skillet. Cook until golden, about 1 minute per side. Transfer to a plate lined with paper towels. Sprinkle with salt. Continue until all the sliced zucchini is cooked.
  • Working in batches, transfer the soup to a blender and blend until smooth. Add salt and pepper to taste, pour into bowls, drizzle with Lemon Oil and top with the fried zucchini.
  • Combine the oil and lemon in a blender and blend until smooth. Strain through a fine-mesh sieve set over a liquid measuring cup. Set the lemon oil aside until ready to use. The oil can be stored in an airtight container and refrigerated for up to 3 days.

1 cup freekeh
water to cover
¾ pound lamb meat, cut into 1 1/2-inch cubes
1 onion, grated
1 teaspoon ground black pepper
1 teaspoon paprika
1 teaspoon ground cinnamon
salt to taste
3 tablespoons vegetable oil
1 bunch fresh cilantro, finely chopped, divided
1 bunch fresh mint, finely chopped, divided
1 stalk celery
½ (14 ounce) can chickpeas, drained
1 tablespoon tomato paste
1 zucchini, diced
1 carrot, diced
3 medium ripe tomatoes
1 potato, diced

Steps:

  • Place freekeh in a bowl and cover with cold water. Set aside.
  • Combine lamb, onion, pepper, paprika, cinnamon, and salt in a pot. Add oil, 1/2 of the cilantro, 1/2 of the mint, and celery and simmer over low heat for 15 minutes. Stir in chickpeas and cover with a little water. Bring to a gentle simmer. Add tomato paste, zucchini, and carrot and mix well.
  • Set a steamer over the pot and add tomatoes. Cover and steam tomatoes until soft, about 5 minutes. Crush tomatoes using a wooden spoon so pulp drips into the soup. Discard leftover tomato peels. Add potato and enough water to cover. Simmer until potato is soft, about 10 minutes.
  • Drain freekeh and add to the soup. Simmer until soft, about 15 minutes. Remove celery stalk. Sprinkle soup with remaining cilantro and mint before serving.

A hearty, spiced soup which is especially good during Ramadan. This harira is a family recipe - guaranteed to be AUTHENTIC! This harira freezes very well so can be made in advance and frozen in portions (a big time saver!) so good for OAMC. Kids tend to like it as it has no bits for them to identify and moan about too.

2 1/2 liters water
1 cup water
1 lemon, juice of
3 teaspoons plain flour
4 pieces lamb or 4 chicken pieces, preferably on the bone
1 carrot
1 potato
1 courgette (zucchini)
2 fresh tomatoes
1/2 bunch coriander (cilantro)
1 fresh fennel bulbs or 1 pinch fennel seed
1 pinch celery seed
1 medium onion
4 garlic cloves
4 tablespoons chickpeas
4 tablespoons green lentils
1 tablespoon olive oil oil (for frying)
3 teaspoons ras el hanout spice mix (heaped)
salt and pepper

Steps:

  • In a medium sized bowl, pour 1 cup of water, the lemon juice and the flour. Set aside.
  • Also put 1 garlic clove and 1/4 of the corriander to one side until the end of cooking.
  • Take a heavy bottomed pan or pressure cooker and place the meat (if using small pieces or boneless meat, it's best to secure them in a muslin cloth bag), add the vegetables and remaining corriander roughly chopped.
  • Fry those ingredients with a little oil, 1 tsp of ras el hanout for a couple of minutes then pour on the water and leave to simmer, covered for 1 and a 1/2 hours or around 45 minutes in a pressure cooker. (or until meat and vegetables are tender) Add salt & pepper to taste.
  • Remove the meat and set aside. Remove any traces of bones, gristle etc.
  • Liquidise the remaining vegetables and push through sieve when finished, take another cup of freshly boiled water and pour over sieve to get any last traces!
  • Put everything back in the pan and on low heat (just enough to reach a slow boil) You may wish to add a little more water or stock at this stage.
  • When the harira reaches the boil, lower heat a little & add the flour mixture prepared in step 1. Add a few tbsp of the harira to the flour mix first. Remember to add gradually and stir continuously to avoid lumps.
  • Turn heat to low and finely chopped coriander (last 1/4), final garlic clove minced & 2 tsp of ras el hanout. Allow the harira to heat through again so garlic is not raw.
  • Sprinkle more coriander on top if desired and serve with fresh bread.

1 cup extra virgin olive oil
3 sweet onions, diced
2 baking potatoes, peeled and diced
2 large zucchini, diced
1/2 cup tomato paste
6 cups water
3 Meyer lemons, juiced
2 bunches cilantro, coarsely chopped
1 teaspoon kosher salt

Steps:

  • Add 1 tablespoon polyunsaturated oil to a Dutch oven over medium heat. Add the onion and cook for 3 to 4 minutes until translucent. Add the remaining oil and the sweet potatoes, water, chicken stock and carrots. Bring to a boil, cover and reduced the heat and simmer for 15 minutes or until the potatoes and carrots are soft. Allow the soup to cool. Using an immersion blender, puree the soup until smooth. Stir in the yoghurt, salt pepper and cinnamon. Serve cool with a tablespoon of sour cream floating in the middle of the bowl.
