½ cup onion, diced
2 cloves garlic, minced
⅓ cup red bell pepper, diced
⅓ cup green bell pepper, diced
⅓ cup yellow bell pepper, diced
1 lb ground beef
1 tablespoon taco seasoning
1 lb jumbo shell, cooked
1 cup enchilada sauce
1 cup mexican blend cheese

Steps:

  • Preheat oven to 350˚F (180˚C).
  • In a skillet, heat oil over medium-high heat and cook onions, garlic, and peppers until translucent.
  • Add ground beef and taco seasoning, and cook until browned.
  • Fill cooked shells with beef and place in a baking dish.
  • Pour enchilada sauce over the stuffed shells and cover with cheese.
  • Bake for 15 minutes or until cheese is browned.
  • Enjoy!

15 uncooked jumbo pasta shells
1 pound lean ground turkey
1 can (10 ounces) enchilada sauce
1/2 teaspoon dried minced onion
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon ground cumin
1/2 cup fat-free refried beans
1 cup shredded reduced-fat cheddar cheese

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water. In a nonstick skillet, cook turkey over medium heat until no longer pink; drain. Stir in enchilada sauce and seasonings; set aside., Place a rounded teaspoonful of refried beans in each pasta shell, then fill with turkey mixture. Place in an 11x7-in. baking dish coated with cooking spray., Cover and bake at 350° for 25 minutes. Uncover; sprinkle with cheese. Bake 5 minutes longer or until cheese is melted.

12 shells jumbo pasta shell
1 tablespoon olive oil
½ cup white onion, chopped
¼ cup green chile
1 cup chicken, shredded
½ teaspoon cumin
½ tablespoon garlic
pepper, to taste
salt, to taste
1 cup ricotta cheese
½ cup queso fresco
½ cup monterey jack cheese, shredded
1 tablespoon fresh scallions, for garnish
10 oz green enchilada sauce

Steps:

  • Bring water to a boil. Cook the pasta shells until al dente. Drain, rinse with cold water, and set aside to cool.
  • Pour the oil in a pan, then add the onions and cook on medium heat until softened. Add the green chiles, chicken, and spices and stir to combine. Cook on low heat for an additional 3-4 minutes.
  • Place chicken mixture in a bowl. Add ricotta, queso fresco, and monterey jack and stir until all ingredients are well combined.
  • Stuff each shell with a large spoonful of the mixture.
  • Preheat the oven to 375°F (190°C).
  • Coat the bottom of a baking dish with a thin layer of green enchilada sauce. Place the pasta shells in the dish in a single layer.
  • Cover with the rest of the enchilada sauce and some additional queso fresco and monterey jack.
  • Bake for 30 minutes (or until the cheese has melted and the sauce begins to bubble around the edges). Top with scallions.

One of my favorite meals to make is Enchilada Stuffed Pasta Shells. One of the benefits of this recipe is that it makes enough for two 13x9 baking dishes, which means I get two meals. I don't like waste, but this is one time where I like to use disposable aluminum pans. Then I don;t have to worry about washing the pan.

1 lb ground beef
1/2 cup diced onion
1 (1 1/3 ounce) package taco seasoning
1 3/4 cups cooked black beans or 1 (15 1/2 ounce) can black beans
1 (10 ounce) can diced tomatoes, do not drain
1 (12 ounce) package jumbo pasta shells
2 cups shredded cheddar cheese
1 1/2 cups tomato sauce
1/2 cup medium salsa
1 1/2 cups shredded cheddar cheese

Steps:

  • Put a large pot of water on to boil. Once it begins boiling add shells and cook according to the package directions.
  • While the water is heating, cook hamburger and onion over a medium flame until hamburger is browned.
  • Add taco seasoning, beans, and diced tomatoes. Be sure to add the juice from the diced tomatoes too. Simmer over low heat for about 5 minutes. Remove from heat, set aside and let cool while the shells cook. Once the meat mixture is close to room temperature, add 2 cups of cheese and mix well.
  • In a small bowl, combine tomato sauce and salsa. Spoon 1/2 cup of tomato sauce mixture into each 13 x 9 inch baking dish.
  • Preheat oven to 350°F.
  • After the shells have been drained, spoon meat mixture into each shell and place it in a baking dish.
  • After the shells have been filled. Spoon 1/2 cup of the tomato sauce mixture over the shells in each baking dish.
  • Cover one baking dish with foil and bake at 350°F for 25 minutes. Remove foil, sprinkle with remaining cheese, and bake for another 5 minutes.
  • If you are taking this to another family, you can cover the dish with foil and put the baking directions on a sticky not on top of the foil.
  • This is also a great OAMC meal. If you are not taking the meal to another family, cover one baking dish with plastic wrap and freeze. Defrost in the refrigerator on the day you want to cook the stuffed shells for dinner. Then bake as directed.
  • I serve Enchilada Stuffed Pasta Shells with a garden salad and Mexican Rice.

15-20 jumbo pasta shells
1 lb ground beef or turkey
2 (10 oz) cans enchilada sauce
1/2 tsp dried minced onion
1/4 tsp oregano, dried
1/4 tsp basil, dried
1/4 tsp ground cumin
1/2 c refried beans
1 c colby and jack cheese, shredded

Steps:

  • 1. Preheat oven to 350 degrees. Cook pasta shells according to package directions. Drain and set aside. Make sure thy are separated so they do not stick together.
  • 2. In a large skillet over medium heat, brown the ground beef until no longer pink. Drain the fat. Stir in minced onion, oregano, basil and cumin. Stir one cup of the enchilada sauce into the meat mixture. Stir in the refired beans and set aside.
  • 3. Fill each cooked pasta shell with the beef mix. Coat an 9x13 inch baking dish with non stick spray and pour half of the remaining can of enchilada sauce evenly over the bottom. Place each stuffed shell into the baking dish and pour the remaining half of the enchilada sauce over the tops of the shells with the meat mix.
  • 4. Cover and bake for 20 minutes then remove dish from oven and sprinkle the jack cheese on top of the shells. Bake another 5 minutes until the cheese melts. Serve and enjoy! ***I served this with garlic toast and asparagus.

Steps:

  • Heat oven to 350ºF.
  • Cook pasta shells as directed on package, omitting salt. Meanwhile, cook ground beef and chorizo in large skillet on medium heat until done, stirring frequently; drain.

  • In a mixing bowl, combine the black beans, sweetcorn, chopped coriander, and ricotta cheese. Season generously with salt and pepper, and mix well to combine.
  • To make the homemade enchilada sauce, heat the oil in a small saucepan, and add the flour, spices and tomato puree. Whisk over a low heat to give a thick paste. Add the vegetable stock a little at a time, whisking until smooth each time before adding more. Season to taste.
  • To assemble, add a couple of tablespoons of the enchilada sauce to the bottom of a baking dish (mine measured around 8 x 8 inches). Spread it around to give a thin coating of sauce - this helps to stop the pasta sticking. Stuff each pasta shell with a spoonful of the ricotta mixture, and arrange them in the dish. Pour over the remaining sauce, trying to make sure the pasta is fully covered with a thin layer of sauce, especially any edges or corners.
