Ingredients

1 lb chicken sausage al fresco
2 sweet red peppers, cut up in quarters
1 onion, cut up in quarters
1 clove garlic, cut up in small pieces
Dash salt and pepper
1 sprig(s) parsley, cut up
Dash olive oil, extra virgin
8 oz can of diced tomatoes
4 oz can of sliced mushrooms
1 sprig(s) fresh basil, cut up
2 slice mozzarella cheese

Steps:

1. Add the Chicken Sausage
2. Cook over Med heat, until almost done
3. Add rest of Ingredients, except the cheese, and cook for about 30 Minutes, uncovered
4. Add the Slices of Cheese, covered until Cheese Is Melted
5. Serve while still Hot...
