Air Fryer Sweet Potato Tots image

Cooking sweet potato tots in the air fryer yields a slightly crisp exterior and a soft interior. These homemade tots are a great way to sneak veggies into a picky eater's meal, plus they're more affordable than buying pre-made, frozen sweet potato tots. Spraying the tots with cooking spray helps with browning, though they still don't brown evenly in the air fryer. Be sure to boil the sweet potatoes just enough that they grate and hold together when shaped, but still retain a little texture. Not a fan of ketchup? Make this Greek yogurt ranch dressing instead.

2 small (14 oz. total) sweet potatoes, peeled
1 tablespoon potato starch
1/8 teaspoon garlic powder
1 1/4 teaspoons kosher salt, divided
3/4 cup no-salt-added ketchup
Cooking spray

Steps:

  • Bring a medium pot of water to a boil over high heat. Add potatoes, and cook until just fork tender, about 15 minutes. Transfer potatoes to a plate to cool, about 15 minutes.
  • Working over a medium bowl, grate potatoes using the large holes of a box grater. Gently toss with potato starch, garlic powder and 1 teaspoon salt. Shape mixture into about 24 (1-inch) tot-shaped cylinders.
  • Lightly coat air fryer basket with cooking spray. Place 1/2 of tots (about 12) in single layer in the basket, and spray with cooking spray. Cook at 400°F until lightly browned, 12 to 14 minutes, turning tots halfway through cook time. Remove from fry basket and sprinkle with 1/8 teaspoon salt. Repeat with remaining tots and salt. Serve immediately with ketchup.

½ teaspoon Cajun seasoning
olive oil cooking spray
sea salt to taste

Steps:

  • Bring a pot of water to a boil and add sweet potatoes. Boil until potatoes can be pierced with a fork but are still firm, about 15 minutes. Do not over-boil, or they will be messy to grate. Drain and let cool.
  • Grate sweet potatoes into a bowl using a box grater. Carefully mix in Cajun seasoning. Form mixture into tot-shaped cylinders.
  • Spray the air fryer basket with olive oil spray. Place tots in the basket in a single row without touching each other or the sides of the basket. Spray tots with olive oil spray and sprinkle with sea salt.

2 cups sweet potato puree
1/2 teaspoon salt
1/2 teaspoon cumin
1/2 teaspoon coriander
1/2 cup Panko breadcrumbs (or regular breadcrumbs)
Spray oil

Steps:

  • Heat your air fryer to 390°F/ 200°C.
  • In a large bowl, mix together all ingredients.
  • Form into 1 tablespoon tots (a cookie scoop helps) and arrange on 1-2 plates.
  • Spray with spray oil, and move the tots around to coat the bottoms with oil as well.
  • Carefully arrange tots on the air fryer basket so there is space between them. You will need to cook in 2-3 batches.
  • Cook for 6-7 minutes, and carefully flip them over. If the tots feel very soft and mushy when you turn them, leave them for a few more minutes.
  • Cook for 5-7 more minutes, until both sides are crispy but not burned.
  • Serve immediately with guacamole, ketchup or chipotle mayo

2 sweet potatoes
1 tsp olive oil
1 tsp sweet smoked paprika or other seasonings such as Cajun seasoning, BBQ seasoning or garlic granules
½ tsp mixed herbs

Steps:

  • Peel the sweet potatoes and slice into ½ cm sticks. Put in a bowl, drizzle over the oil and give them a good toss to coat. Sprinkle over the paprika, mixed herbs and ½ tsp each of salt and pepper, then give it all a good mix with your hands to ensure it's evenly coated.
  • Cook, in batches, in a single layer in your air fryer basket for around 10-15 mins, until lightly golden, giving a little shake or toss after 5 mins. Once all the batches have cooked, return the fries to the air fryer, give it a good shake and cook for a further 1-2 mins to heat through.
