GLUTEN FREE CLASSIC POTATO LATKES

These Potato Latkes are a gluten-free version of a classic! They have all of the classic savory flavors and crispiness you want in a potato latke recipe, but are made without any refined white flour.

Number Of Ingredients 9

6 russet potatoes (about 6.5 cups shredded potatoes)
2 medium onions (makes 1 cup grated)
2 cloves of garlic, minced
2 eggs
1 egg white
6 tablespoons arrowroot flour/starch
2 teaspoons fine sea salt
1/2 teaspoon pepper
1/2 cup of oil of choice, or enough oil to cover pan to a depth of 1/2 inch (I like avocado oil or olive oil)

Steps:

  • Peel and grate the potatoes (you can use a food processor or grate by hand, see note) then place in a bowl of cold water and set aside.
  • Peel and grate the onions.
  • Add both grated mixture to a fine mesh strainer lined with a cheese cloth if you have, and strain as much excess water out as possible.
  • Place strained mixture into a large bowl. Mince garlic and add it to the bowl with the potato and onion.
  • Add in the eggs, arrowroot flour/starch, salt and pepper. Mix well.
  • Place 1/2 cup of oil into a large pan and heat the oil on medium-high heat.
  • Once oil is hot, make patties out of the potato mixture (squeeze out even more excess liquid as you make patties) and pan-fry until brown on both sides. Should take about 3-4 minutes on each side but watch closely to avoid burning. Add more oil as needed.
  • Serve with applesauce or sour cream and enjoy!

Potato latkes are usually fried, on top of the stove, but the air fryers on the market right now are a great way to prepare this popular dish. This method yields a crispy latke that can be an appetizer or a dinner side. If you have an oil sprayer, you can use your oil of choice. I used purchased avocado oil spray, to give that beautiful brown color. Serve with sour cream or applesauce, if desired. Refrigerate any leftovers in an airtight container, up to 5 days.

1 (16 ounce) package frozen shredded hash brown potatoes, thawed
½ cup shredded onion
1 egg
kosher salt and ground black pepper to taste
2 tablespoons matzo meal
avocado oil cooking spray

Steps:

  • Preheat an air fryer to 375 degrees F (190 degrees C) according to manufacturer's instructions. Lay out a sheet of parchment or waxed paper.
  • Place thawed potatoes and shredded onion on several layers of paper towels. Cover with more paper towels and press to squeeze out most of the liquid.
  • Whisk together egg, salt, and pepper in a large bowl. Stir in potatoes and onion with a fork. Sprinkle matzo meal on top and stir until ingredients are evenly distributed. Use your hands to form mixture into ten 3- to 4-inch wide patties. Place patties on the parchment or waxed paper.
  • Spray the air fryer basket with cooking spray. Carefully place half of the patties in the basket and spray generously with cooking spray.
  • Air-fry until crispy and dark golden brown on the outside, 10 to 12 minutes. (Check for doneness at 8 minutes if you prefer a softer latke.) Remove latkes to a plate. Repeat with remaining patties, spraying them with cooking spray before cooking.

1 large egg
1/3 cup chopped onion
1 tablespoon all-purpose flour

Steps:

  • Finely grate potatoes; firmly squeeze and drain any liquid. Place potatoes in a large bowl. Add egg, onion, flour, salt, pepper and garlic powder; mix well. , Preheat air fryer to 375°. In batches, drop batter by 1/4 cupfuls onto greased tray in air-fryer basket; press lightly to flatten. Spritz with cooking spray. Cook until golden brown, 12-17 minutes. Serve immediately.
