AIR FRYER CHICKEN TAQUITOS
These taquitos are air fried, which makes them healthier than deep fried ones. Using shredded rotisserie chicken provides a quick prep but you can always use home-cooked chicken. Serve with sides of sour cream, Mexican tomato sauce, and guacamole, or your choice of sides.

Steps:
- Heat oil in a skillet. Add onion and cook until soft and translucent, 3 to 5 minutes. Add garlic and cook until fragrant, about 1 minute. Add green chiles and Mexican tomato sauce; stir to combine. Add chicken, Neufchatel cheese, and Mexican cheese blend. Cook and stir until cheeses have melted and mixture is completely warmed, about 3 minutes. Season with salt and pepper.
- Heat tortillas in a skillet or directly on the grates of a gas stove until soft and pliable. Place 3 tablespoons of chicken mixture down the center of each tortilla. Fold over and roll into taquitos.
- Preheat an air fryer to 400 degrees F (200 degrees C).
- Place taquitos in the air fryer basket, making sure they are not touching, and mist with avocado oil. Cook in batches if necessary. Cook until golden brown and crispy, 6 to 9 minutes. Turn taquitos over, mist with avocado oil, and air fry for an additional 3 to 5 minutes.

- Preheat the air fryer to 380 degrees Fahrenheit.
- When the air fryer has been preheated, add the taquitos in one even layer onto the air fryer tray. There should be a little space between them so that they can crisp and cook evenly.
- Cook the taquitos for 8-10 minutes until fully heated and crispy on the outside. Be sure to gently shake/rotate the taquitos with silicone-tipped tongs halfway through.
- Once done, remove the taquitos and serve with salsa, sour cream, or another preferred dipping sauce.

- In a medium sized bowl, add the chicken, cheddar cheese, and cream cheese.
- Mix to combine.
- Add the ranch dressing, buffalo sauce, and blue cheese crumbles. Mix thoroughly.
- Assemble the taquitos by laying a tortilla on a flat surface.
- Spoon 2-3 tablespoons chicken mixture onto the tortilla, making a line of filling down the middle of each disc.
- Fold over one side and tuck it close to filling. Continue rolling tightly until finished.
- Roll the remaining taquitos and melt the butter.
- When ready to air fry, place 4-5 taquitos in the air fryer basket and spray lightly with cooking spray.
- Air fry at 400F for 6-10 minutes. Flipping half way through the air frying process.
- Remove and let cool while you air fry the remaining taquitos.
- Serve warm with your favorite toppings and dipping sauces. Enjoy!

- Preheat the Air Fryer to 380 degrees Fahrenheit. Prepare the air fryer basket with nonstick cooking spray if needed.
- Place the frozen taquitos in a single layer into the bottom of the basket of the air fryer.

AIR FRYER TAQUITOS AND CHARRED SALSA
Taquitos are the ultimate finger food-mini rolled tacos that are warm, cheesy and super crunchy! An air fryer makes this crowd-pleasing snack (or appetizer) surprisingly easy to cook up at home. We fill them with chunks of chicken and melty Colby Jack, but you can customize the ingredients to please even the pickiest of eaters with different proteins and cheeses. And while you have the air fryer fired up you can make a delicious charred salsa to serve alongside.

- For the salsa: Preheat a 6-quart air fryer to 350 degrees F (see Cook's Note).
- Combine the tomatoes, onion, chile, garlic and oil in a large bowl and toss to coat. Transfer to the basket of the air fryer and cook until the skin of the tomatoes and the chile are wrinkled and the onion and garlic are charred, about 10 minutes. Cool slightly.
- When cool enough to handle, peel the skins from the tomatoes and discard. Remove the stem, seeds and skin from the chile and discard. Place the tomatoes, chile, garlic, onion and 1/4 teaspoon salt in a blender. Pulse until smooth. Set aside until ready to serve.
- For the taquitos: Combine the chicken, cheese, pimientos, oregano, cumin, paprika, chili powder and 1/4 teaspoon salt in a large bowl and toss.
- Working in batches, quickly run 4 tortillas under running water. Shake off excess water and place in the air fryer basket. Fry until softened and pliable, 15 to 30 seconds. Fill them while they are still warm: Spread 2 teaspoons refried beans over a tortilla, reserving a bit of bean to dab on the seal. Spread 1 1/2 tablespoons of the chicken filling over the beans. Roll the tortilla over the filling and seal tightly with a little refried bean. Repeat with the remaining tortillas, beans and chicken.
- Spray all sides of the taquitos generously with cooking spray. Place in the air fryer basket (work in batches if needed) and fry until golden brown and crispy, about 8 minutes. Serve warm topped with some of the salsa and sour cream and shredded lettuce.

- Preheat the air fryer to 400 degrees F (200 degrees C).
- Working with one tortilla at a time, place 2 tablespoons of shredded chicken on one end of the tortilla. Place 1 tablespoon shredded cheese on top of the chicken. Roll to form the taquito, starting at the filled side. Use 2 toothpicks to secure the taquito along the seam. Repeat with remaining ingredients.
