Steps:

  • Preheat oven to 425 degrees F. Place bell peppers and onion in a large bowl. Add oil, salt and pepper; toss to coat.
  • Spread the vegetables in a single layer on a large rimmed baking sheet. Bake until tender and charred in spots, 20 to 25 minutes.
  • Transfer the vegetables to a large serving bowl. Toss with lemon juice, parsley and basil. Serve immediately.

6 Large Sweet Peppers (I Used 2 Yellow, 4 Red)
1/3 Cup Extra Virgin Olive OIl
2 Garlic Cloves, Peeled & Minced
1/3 Cup Balsamic Vinegar
Salt & Pepper
1/3 Cup Fresh Chopped Parsley

Steps:

  • Wash and dry the peppers, then remove the seeds, stems, and membranes.
  • Cut the peppers into 1 inch strips.
  • Heat the oil in a large heavy bottomed skillet and add the peppers, stirring well to coat in the oil.
  • Cook the peppers over medium heat until they begin to soften and brown, stirring often, about 10 minutes.
  • Add the garlic and cook another minute or two until fragrant.
  • Add the balsamic vinegar, season with salt and pepper and mix well.
  • Cook another 3 to 4 minutes until the peppers have absorbed all of the vinegar.
  • Toss with the fresh chopped parsley and place on a platter to serve.

This is an easy side dish. It goes well with steak, this recipe is, as far as I know, my own. It was created by my mother, who when she married my father, hadn't had onions while my father hadn't had mushrooms. The pepper part is a latter addition, by me. As with any recipe calling for any type of pepper, feel free to substitute. For instance, if you like jalapenos, substitute 2 to 3 jalapeno peppers for the bell pepper(s).

1 large onion, sliced
1 -2 cup mushroom, chopped
3 tablespoons bacon grease, saved from cooking bacon
1 -1 1/2 bell pepper, chopped into strips (any color)
1 -2 tablespoon tawny port (optional) or 1 -2 tablespoon any alcohol (optional)

Steps:

  • Put 1 to 1 1/2 tablespoons bacon grease in the bottom of a medium fry pan, over medium heat.
  • Once grease has melted, add mushrooms and onion.
  • Cook over medium heat until onion is translucent, and mushrooms have given up most of their liquid, stirring approximately every 5 minutes.

1 large onion
1 Tbsp olive oil
1 tsp sea salt
1/2 tsp ground black pepper
1/2 tsp Italian seasoning
1 tsp balsamic vinegar (optional)

Steps:

  • Preheat the air fryer to 370F for 5 minutes.
  • While the air fryer is preheating, slice the peppers and onions. Add the bell peppers and onions to a large bowl along with the olive oil, Italian seasoning, and balsamic vinegar.
  • Lay the seasoned bell peppers and onions in the air fryer, they'll be overlapping and won't be in a single layer.
  • Cook the vegetables for a total of 8-10 minutes, flipping or shaking the basket half way through cooking. The peppers were cooked through and soft after 8 minutes of cooking but to get them partially browned, continue cooking for a total of 10-12 minutes depending on your preference.
  • Transfer the air fryer bell peppers and onions to a serving bowl and mix in the balsamic vinegar if you're using it.
  • Serve and enjoy!

2 large chicken breasts, (boneless, skinless (or 4 - 6 thighs))
1 tbsp olive oil, (extra virgin)
3 large bell peppers, (one red, one yellow, one orange)
1 medium red onion
3 tbsp fajita or taco seasoning mix, (see ingredients in Notes below)
guacamole (or avocado)
pico de gallo (or salsa)
lime
cilantro leaves, (chopped)
sour cream

Steps:

  • Start by slicing the peppers and chicken into strips no more than 1/2 inch wide. You want them to cook at the same rate, so try to keep them roughly the same size. Slice the onion.
  • Toss with a small amount of oil, then sprinkle with fajita seasoning and toss until well coated.
  • Brush the basket of your air fryer with a thin layer of oil. It's best to use an oil with a high smoke point, like avocado oil or grapeseed oil.
  • Preheat your air fryer to 380°F. for 3 minutes.
  • Add the mixture (chicken, peppers and onions) to the air fryer basket, shaking to distribute evenly. Depending on the size of your air fryer, you may have to cook these in two batches. I have a Ninja air fryer, and I find it necessary to divide this into two. Cook half and keep warm while you cook the other half.
  • Air fry at 380°F. for 10 - 15 minutes, pausing, removing the basket and shaking it to redistribute the fajita mixture every 4 minutes or so. Check the internal temperature of the thickest part of the chicken with an instant-read meat thermometer. It should register 165°F. to be safe.
  • Serve with warmed tortillas, and offer toppings like avocado or guacamole, salsa or pico de gallo, sour cream, cilantro, and lime slices.
