- Combine broccoli, olive oil, salt, and pepper in a resealable bag. Set aside to allow the broccoli to soak up the oil, about 30 minutes.
- Preheat the oven to 375 degrees F (190 degrees C).
- Place broccoli in the air fryer basket and cook until desired crispiness, 10 to 15 minutes, shaking air fryer basket halfway through cook time.

HEALTHY AIR FRYER PARMESAN CHICKEN WITH BROCCOLI
This chicken gets incredibly crunchy, thanks to a light coating of panko and Parmesan and a quick cook in the air fryer! Serve it with charred broccoli and a tangy yogurt sauce for a healthy and complete meal you can throw together any day of the week.

- Stir together the panko, Parmesan, 2 teaspoons of the olive oil, the oregano, pinch of salt and a couple grinds of pepper in a shallow bowl or small baking dish until thoroughly combined. Pat the chicken dry between a couple paper towels, then sprinkle lightly with salt and pepper. Brush both sides of the chicken with 1 1/2 tablespoons of the Dijon, then press into the panko-Parmesan mixture, making sure both sides are evenly coated.
- Toss the broccoli, remaining 2 teaspoons of the olive oil, a good pinch of salt and several grinds of pepper in a medium bowl until evenly coated.
- Preheat a 3.5-quart air fryer to 375 degrees F. Add the chicken to the air-fryer basket and cook until it's starting to brown and crisp on the top, about 6 minutes. Flip the chicken over with tongs and position in the center of the basket, then scatter the broccoli around the perimeter. Continue air-frying until the chicken is crisp all over and an instant-read thermometer inserted in the middle registers 160 degrees F, and the broccoli is tender and charred, about 8 minutes more.
- Meanwhile, stir together the yogurt, lemon zest and juice, remaining 1/4 teaspoon Dijon, a pinch of salt and several grinds of pepper in a small bowl. Serve alongside the chicken and broccoli for dipping.

- Place the florets in a mixing bowl and top with the olive oil, salt, garlic powder, black pepper, and sugar. Toss to coat, making sure to rub the florets evenly with the oil and spices to prevent burning.
- Preheat your air fryer to 400 degrees F according to the manufacturer's instructions (for my air fryer that is 3 minutes preheat time).
- Add the water to the bottom of the air fryer (it will hiss and splatter). Add the broccoli (if adding toppings, keep the bowl handy and don't wash it yet). Let cook for 4 minutes.
- Remove the basket and with tongs, toss the broccoli. Return it to the air fryer and continue cooking for 4 to 8 additional minutes, until crispy outside and tender when pieced with a fork. The cook time will vary based on your air fryer, so keep an eye on it and toss the broccoli every few minutes to promote even crisping.
- Serve immediately, or if adding toppings, transfer the broccoli back to the mixing bowl. Top with the lemon zest, lemon juice, Parmesan, and/or red pepper flakes. Stir to coat. Serve hot.

- 1. Rinse the Broccoli. Cut the florets from the stem/stalk. Cut them into bite size or tablespoon size pieces. Then put them in a bowl. Reserve the stem for grating in salads. * We use one stalk for 2 adult servings. Stalk sizes vary.
- 2. Spray the stalks with the oil. If you don't have an oil sprayer, then toss the Broccoli florets in the oil. *More oil may be needed depending on the size/amount of your Broccoli florets.
- 3. Then sprinkle the oiled florets with the powdered Parmesan cheese. The powdery kind of Parmesan cheese works best for this recipe. Toss the Florets to coat them with the cheese. *More cheese may be needed depending on the size/amount of your florets.
- 4. Preheat the air fryer on 450 degrees according to mfg directions. (mine is 5 min)
- 5. Add the prepped Broccoli to the air fryer basket and insert the basket in the air fryer. Do not over crowd the basket. Try to have the florets facing up and in a single layer.
- 6. Set the timer for 8 minutes. Your fryer may only need 5 min to brown the cheese. Check at 5 minutes. The cheese will get very dark but don't let it burn.
- 7. Remove the cooking basket when the timer sounds. Check the broccoli for doneness. The cheese and florets should be browned. Sometimes the broccoli will need to be turned and cooked an additional 5 minutes. All air fryers cook differently and different sizes of the florets make cooking times vary.
- 8. Remove florets from the cooking basket with tongs. Cooking basket will be very hot. Continue to cook the Broccoli in batches till all is cooked.
- 9. May be served with your fav dipping sauce. We sometimes use Ranch but usually prefer them plain. .

- Preheat your air fryer to 350 degrees f.
- Place the broccoli florets into a large bowl and drizzle with the oil. Sprinkle with the seasonings of YOUR choice, if desired and season with sea salt and pepper to taste.
- Use your clean hands to toss very well. It may seem like too little oil, but resist the urge to add more, or else your broccoli florets will end up soggy.
- Transfer your broccoli into the air-fryer basket.
- Air fry for 9-10 minutes, shaking the basket to flip the florets halfway. Keep an eye on them the first time, because all Air fryers are different.
- Carefully remove with tongs, and serve immediately.
