10 to 11 cups sliced peeled tart apples
1/2 cup sugar
1 teaspoon ground cinnamon, divided
1 cup all-purpose flour
1 cup packed brown sugar
1/2 cup quick-cooking oats
1 teaspoon baking powder
1/4 teaspoon ground nutmeg
1/2 cup cold butter, cubed
Vanilla ice cream, optional

Steps:

  • Preheat oven to 375°. Place apples in a large bowl. Combine sugar and 1/2 teaspoon cinnamon; sprinkle over apples and toss to coat. Transfer to a greased 13x9-in. baking dish. Combine flour, brown sugar, oats, baking powder, nutmeg and remaining cinnamon; cut in butter until mixture resembles coarse crumbs. Sprinkle over apples. Bake until apples are tender, 50-60 minutes. Serve warm with vanilla ice cream, if desired.

This warm dessert can quickly satisfy sweet tooth cravings, especially if you forgo peeling the apples, which adds a nice chewiness to the crunchy toasted topping and juicy, saucy apples. Choose a variety of apples, then adjust the amounts of sugar and lemon juice to strike the right tangy balance for the filling. Or customize your crisp by using your favorite spices and nuts. The dessert tastes particularly comforting hot out of the oven, with the caramelized apple juices bubbling around the nutty cookie-like clusters, but it's just as good cold for breakfast the next day.

1/2 cup/71 grams all-purpose flour
3 tablespoons packed brown sugar
1 tablespoon granulated sugar
1/4 teaspoon ground cinnamon, cardamom or nutmeg, or a combination
1/4 teaspoon fine sea salt
6 tablespoons/84 grams cold unsalted butter, cut into 1/2-inch cubes
1 cup/116 grams chopped pecans or walnuts, or a combination
1/4 cup/28 grams old-fashioned rolled oats
1 to 4 tablespoons granulated sugar
1 tablespoon all-purpose flour
1/2 teaspoon ground cinnamon, cardamom or nutmeg, or a combination
1/4 teaspoon fine sea salt
3 pounds apples, preferably firm, with a mix of tart and sweet-tart (8 to 10 apples)
1 to 2 tablespoons fresh lemon juice

Steps:

  • Make the topping: Rub together the flour, both sugars, the spice and salt in a medium bowl. Toss in the butter and nuts to coat, then pinch the butter into the dry ingredients until no floury bits remain. Add the oats, and gently rake and squeeze them through the buttery mixture to form peanut-size crumbles. Freeze while you prepare the apples. The crumb mixture can be frozen in an airtight container for up to 1 month.
  • Prepare the apples: Heat oven to 375 degrees. Use 1 tablespoon sugar for all sweet apples; 2 to 3 tablespoons for sweet-tart apples or a mix; and 4 tablespoons for all tart apples. Mix the sugar with the flour, spice and salt in a 10-inch cast-iron or other heavy ovenproof skillet.
  • If you'd like, peel the apples. Cut into 1/2-inch chunks, discarding the seeds and cores. Add to the skillet and drizzle with 1 tablespoon lemon juice for tart apples and 2 tablespoons for sweet-tart and sweet ones. Mix until evenly coated, then spread in an even layer. Crumble the frozen crisp mixture on top. (There will be gaps.)
  • Bake until the topping is golden brown, and the apples are tender and bubbling, 45 to 50 minutes. Cool for at least 15 minutes on a rack before serving hot, warm or at room temperature.

I don't know why anyone would make a pie instead of a crisp. A crisp, most often made with apples but accommodating of almost any fruit, is better textured, better flavored and easier to make. If you choose to use pears instead of apples, be aware that unripe pears are unlikely to become tender in the time it takes the topping to brown. You must begin with pears that have started to soften, or their texture will remain unpleasantly firm.

6 cups peeled, cored, sliced apples or ripe pears, 2 to 3 pounds
1/2 teaspoon cinnamon, or more to taste
1/2 cup sugar, plus 2 tablespoons
5 tablespoons butter, plus more for greasing the pan
3/4 cup oats
1/2 cup walnuts or pecans

Steps:

  • Heat oven to 375 degrees. Toss fruit with half the cinnamon and 2 tablespoons sugar, and spread it in a lightly buttered 8-inch square or 9-inch round baking pan.
  • Combine remaining cinnamon and sugar in container of a food processor with butter, oats and nuts; pulse a few times, just until ingredients are combined. (Do not purée.) To mix ingredients by hand, soften butter slightly, toss together dry ingredients and work butter in with fingertips, a pastry blender or a fork.
  • Spread topping over apples, and bake about 40 minutes, until topping is browned and apples are tender. Serve hot, warm or at room temperature.

Steps:

  • Preheat the oven to 375°F Spray a shallow 1-1/2 quart baking dish with nonstick spray.
  • To make the topping, combine the 1/2 cup flour, the oats, brown sugar, ginger, cinnamon, and salt in a medium bowl. With a pastry blender or 2 knives used scissor-fashion, cut in the butter until the mixture resembles coarse crumbs. Add the water and firmly press mixture to form clumps.
  • To make the filling, mix the granulated sugar, the 2 tablespoons flour, the nutmeg, and cloves in a large bowl. Add the apples and vanilla; mix well. Transfer to the baking dish. Sprinkle the topping over the filling. Bake until the filling is bubbling and the topping is golden, 55 - 60 minutes. Serve warm or at room temperature.

3 large apples (Golden Delicious work really well)
3/4 cup packed brown sugar
1/2 cup flour
3/4 teaspoon ground cinnamon
1/2 cup butter or 1/2 cup margarine
3/4 cup old fashioned oats
vanilla ice cream (optional) or whipped cream (optional)
8 ounces caramel ice cream topping (optional)

Steps:

  • Heat oven to 350 degrees. Peel, core,and thinly slice apples. Arrange in a buttered 9-inch round baking dish. In medium bowl, mix brown sugar, flour, cinnamon, butter and oats. Sprinkle over apples.
  • Bake for 30-35 minutes until topping is golden brown and apples are tender when pierced with a fork.
  • Serve warm. Top with vanilla ice cream and caramel. (if desired).
