  • Dot with butter, top with bread crumbs.

1 (16 ounce) box elbow macaroni
3 tablespoons butter
3 tablespoons flour
3 cups whole milk
2 cups sharp cheddar cheese, grated
1 cup fresh parmesan cheese, grated (recommended Stella)
1/2 cup panko breadcrumbs
salt and pepper

Steps:

  • Bring a large pot of water to a boil. Salt water (after it comes to a boil) add pasta and cook for 8 to 10 minutes or until al dente.
  • Preheat oven to 350°F.
  • While pasta is cooking begin to make your roux. Over low heat begin to melt butter. Once butter is melted add flour. Whisk constantly to avoid burning. If rue burns throw it out and start again. You want your rue to be almost a copper brown color. It should take a little over 5 minutes.
  • Once you get your rue to the color you want add the milk while continuing to whisk constantly. Salt and pepper your sauce to your liking. When the mixture begins to boil you will notice your sauce will start to thicken. Once it is at the thickness you desire remove from heat immediately and add cheese, reserving about a 1/4 of a cup of cheddar.
  • Drain macaroni and return to cooking pot. Combine cheese sauce with your macaroni. Pour macaroni and cheese into a 2 quart baking dish. Sprinkle bread crumbs and remaining cheese over top and bake for 35 minutes until a nice crust forms on the top.

  • Preheat the oven to 350°F.
  • Butter a 9x13-inch baking dish.
  • Melt 1 stick of butter in a saucepan. Add the onion and sauté until translucent, about 3 to 4 minutes. Add the milk and cook until heated through. Add the cheese gradually, stirring constantly, until it is melted and the sauce is smooth. Place the macaroni in the prepared baking dish. Pour the cheese mixture over the macaroni and stir to coat the macaroni evenly.

1 pound elbow macaroni with ridges
4 tablespoons (1/2 stick) unsalted butter
4 tablespoons all-purpose flour
1 teaspoon kosher salt
2 cups milk
2 cups grated sharp Cheddar
1/2 cup breadcrumbs
4 tablespoons (1/2 stick) unsalted butter, melted

Steps:

  • For the macaroni: Preheat the oven to 350 degrees F. Butter a 2-quart casserole dish.
  • Bring 4 quarts of water to a boil in a large saucepan. Add the salt and macaroni. Bring the water back to a boil and cook the macaroni until tender, about 12 minutes. Drain well.
  • For the cheese sauce: Meanwhile, melt the butter in a 1-quart saucepan. Using a wire whisk, stir in the flour and salt, stirring and cooking over medium heat until the roux bubbles and the flour turns pale brown, about 3 minutes. I've adapted this recipe off of others after not finding exactly what I want in the ones I've tried. Try not to use extra sharp or aged cheeses, they don't melt well and contribute to the grainy texture everyone talks about in macaroni and cheese. Also, make sure all your cheese is grated and macaroni is boiled and drained before finishing the cheese sauce. Overcooking or letting it sit too long can also make the texture grainy.

I was hesitant to add it to 'zaar because there are already so many mac and cheese recipes but it's really, really good. I hope you try it and like it as much as I do.

1 teaspoon salt
1/2 teaspoon dry mustard (optional)

8 ounces elbow macaroni, cooked 6 minutes, drained (about 3/4 cups)

Steps:

  • Combine corn starch, salt, dry mustard and pepper in a medium saucepan. Stir in milk until smooth. Add margarine. Stirring constantly, bring to a boil over medium-high heat and boil for 1 minute. It's very important that you stir constantly so as not to burn, do not skip this step!
  • After the mixture has boiled for 1 minute, remove from heat.

1 1/2 cups evaporated milk
1 (8 ounce) container refrigerated sharp cheese spread (if you can't find it, Cheese Whiz is an okay substitute but really go for the sharp spread)
1/4 teaspoon Worcestershire sauce
1/8-1/4 teaspoon seasoning salt (depends how salt sensitive you are)
1/4 teaspoon black pepper
1/2 tablespoon dry mustard
1/4 teaspoon garlic powder
1 -2 dash cayenne pepper
1 cup shredded sharp cheddar cheese
1 cup Velveeta cheese (in small cubes)
2 -3 slices American cheese (reserve for topping casserole)
1/4 cup breadcrumbs or 1/4 cup cracker crumb

Steps:

  • Preheat oven to 400°F.
  • Cook macaroni just until al dente and drain, set aside.
  • While pasta is boiling, melt the butter in a large saucepan.
  • Whisk in the flour over medium heat until smooth & bubbly (only about a minute).
  • Stir in evaporated milk, cheese spread, pepper, mustard, seasoned salt, garlic powder, Worcestershire sauce and cayenne pepper Keep cooking and stirring over medium heat until sauce has thickened (about 3 or 4 minutes).
  • Add the shredded cheddar cheese and Velveeta to the white sauce and stir just until cheeses have melted.
  • Add macaroni and stir until pasta is evenly coated with the cheese sauce.
  • Pour into a casserole dish sprayed with Pam.
  • Arrange cheese slices on top, sprinkle with cracker crumbs and dot somewhat generously with butter.
  • Bake 15-20 minutes or until top is nice and golden and casserole is heated through.

1 cup cream

  • (You can also freeze this recipe in zip-lock bags for later use - once you have mixed the macaroni along with the cheese sauce allow to cool to room temperature before adding to your freezer - I generally pull it out the night before and allow macaroni and cheese to reach room temperature; I then add the macaroni and cheese to a buttered baking dish, sprinkle with bread crumbs and then bake for 20 to 30 minutes, until golden brown on top and bubbling.

This is one of my favorite ways to make mac&cheese! It's really easy to make, and I've never had any problems with this recipe. If you want a creamier version, stir in some sour cream or plain yogurt after it is done cooking. From Southern Living, March 1986.

1 1/2 cups uncooked elbow macaroni
1/4 cup chopped onion
3 tablespoons butter or 3 tablespoons margarine, melted
3 tablespoons all-purpose flour
1 3/4 cups milk
1/4 cup dry white wine
1/2 teaspoon salt
1 pinch pepper
1 1/2 cups shredded sharp cheddar cheese
paprika

Steps:

  • Cook macaroni according to package directions, omitting salt.
  • Drain and set aside. *NOTE: Do NOT be tempted to skip this step! Trust me, I've done it so I should know!
  • Saute onion in butter in a heavy saucepan.
  • Add flour, stirring until smooth. Cook 1 minute, stirring constantly.
  • Gradually add milk and wine.
  • cook over medium heat, stirring constantly, until mixture is thickened and bubbly.
  • Remove from heat; add salt, pepper, and Cheddar cheese.
  • Stir until cheese melts.
  • Add macaroni; mix well.
  • Pour into a lightly greased 2-quart casserole dish.
  • Sprinkle with paprika.
  • Bake at 350F for 15 minutes; uncover and continue baking another 15 minutes.

Aidans Baked Macaroni and Cheese image

I am naming this after my 2 year old, Aidan. He loves Kraft Mac and Cheese, but I find it rather bland on it's own. One night I started just throwing in random things, and finally found a combination we both like. I hope you and your family will enjoy as well. I used left over brown sugar spiral ham, diced up, in my version, but I'm sure any kind will do.

1 (14 ounce) package Kraft macaroni and cheese
1/2 cup sour cream
1 tablespoon butter
1/4 cup milk
3 slices of kraft cheese
1/3 cup breadcrumbs
1/3 cup diced cooked ham

Steps:

  • Preheat oven (or toaster oven) to 375.
  • Cook Macaroni until desired tenderness (about 8 minutes).
  • Drain, return back to sauce pan.
  • Mix in the powder cheese, sliced cheese, butter, sour cream, ham, and milk.
  • When cheese and butter has melted, transfer to a casserole dish.
  • Cook for 10 minutes, take out, sprinkle bread crumbs on top, cook another 5-10 minutes.
  • Let set for about 5 minutes.
  • Enjoy.
