Rubbed with a cumin mixture, these tuna or sea bass steaks develop rich flavor while broiling. Serve them with a salsa of oranges, a tomato, cilantro, green onion, lime juice, and walnuts. This main dish recipe is fresh, tender, simple, and healthful.

Steps:
- For salsa, in a medium bowl combine the orange peel, chopped oranges, tomato, cilantro, green onion, walnuts, lime juice, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Set aside.
- Thaw fish, if frozen. Rinse fish; pat dry with paper towels.
- In a small bowl combine cumin, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Brush the fish with olive oil and sprinkle evenly with cumin mixture.
- Place fish on the greased unheated rack of a broiler pan. Broil about 4 inches from the heat for 8 to 12 minutes or until fish flakes easily when tested with a fork, gently turning once halfway through broiling. Spoon the salsa over fish. Makes 4 servings.

- Make salsa: In a medium bowl, toss together oranges, bell pepper, onion, mint, and vinegar; season with salt and pepper. Set aside.
- Heat grill to high; oil grates. Rub tuna with oil, coriander, salt, and pepper. Place on grill; cook, turning once, until browned in spots but still pink in the center, 4 to 6 minutes. Serve topped with salsa. Garnish with lettuce leaves, if desired.

- Mix vinegar, oil, wine and salad dressing mix. Stir in 1 Tbsp of basil.
- In a separate bowl, combine tomatoes, onion, feta and remaining basil. Add 4 Tbsp of prepared dressing from step 1.
- Pour remaining dressing on Tuna steaks. Cover and refrigerate for 30 min to 1 hour to marinate.
- Grill Tuna on Med-High 5-7 min per side or less to your liking.
- Transfer to plate and top with tomato mixture.

SEARED TUNA WITH JAPANESE SALSA
Steps:
- Mix all the ingredients for the sauce. Add the chopped tomato, cilantro and onion. Season the tuna very well with salt and pepper. Heat a large skillet over high heat and add the vegetable oil. When the oil is hot, sear the tuna for 30 seconds on each side. Remove from heat and slice the tuna into 1/4-inch slices. To serve, neatly arrange the tuna slices and avocado slices on a plate and drizzle the sauce over the tuna.
GRILLED TUNA STEAKS WITH ROASTED CORN AND TOMATO SALSA
Steps:
- First make the salsa. Preheat the broiler. While it is heating, prepare the corn. Holding each ear upright, cut off the kernels with a sharp knife. Heat a large heavy-based skillet or frying pan without any fat over high heat until almost smoking. Add the kernels and dry-roast until tender, smoky and dark, tossing continuously as they tend to stick, 4 to 5 minutes. Cook the peppers under the broiler, turning them until the skin chars and bursts, 7 to 10 minutes. Put them in a plastic bag and leave to sweat and cool so the skins loosen. Peel the peppers, discarding cores and seeds. Dice the flesh.
- Heat 1 tablespoon of the olive oil in a large frying pan. Add the onion and saute until soft but not brown, 3 to 4 minutes. Take the pan from the heat and stir in the roasted corn, chopped tomatoes, sun-dried tomatoes, diced peppers, vinegar and remaining oil. Heat, stirring, until hot. Take from the heat and keep warm.
- Rinse fish steaks and pat dry with paper towels. Brush with half the oil, season with salt and pepper and set on oiled grill pan or grill. Broil 3 to 4 minutes. Turn steaks over, brush with the remaining oil and grill until done to taste, 2 to 3 minutes longer.
- Meanwhile, stir the cilantro and lime juice into the salsa, taste and adjust seasoning. Make a bed of salsa on 4 warmed plates and place a tuna steak on top of each. Serve at once.
AHI TUNA MARINADE
Our family was first introduced to the concept of "rare" Ahi Tuna when my sister-inlaw opened an inland NJ seafood restaurant. Frequently, she tested new recipes on us as well as her family & friends. The first time I tasted it, I was surprised to find out how good the rare tuna was! I then decided to create my own marinade that was more to our liking. The trick is to just sear the fish on a hot frying pan for 1-2 minutes per side and then serve immediately.

Steps:
- Combine 1 cup of Teriyaki Sauce with 3 minced garlic cloves to create marinade.
- Reserve 1/2 cup of Teriyaki sauce and 1 garlic clove. Refrigerate.
- Place tuna in a shallow dish and poor marinade over fish.
- Marinade for 2-3 hours in the refrigerator.
- Throw out marinade.
- Saute remaining minced garlic clove until tender in 1 TBSP of olive oil.
- Remove from pan.
- Sear tuna on in same frying pan for 1-2 minutes per side.
- While tuna is cooking place "reserved" sauteed garlic & teriyaki sauce over tuna.
- Remove from heat and serve with Teriyaki & Garlic on top.
- Enjoy.

- Whisk together the olive oil, 4 T lime juice, soy sauce, ginger and 3 t garlic paste. Place tuna steaks in a single layer in a nonreactive dish and cover with the marinatde. Turn to coat both sides. Place in the refrigerator 3-5 hours, turning occasionally.
- In a small bowl, toss remaining ingredients and chill.
- Remove tuna steaks from the marinade. Cook on a hot grill for about 3-5 minutes per side so that the steaks remain pink in the center. Spoon the chilled salsa over each steak and garnish with a cilantro sprig if desired.
