AHI TUNA BURGERS WITH SRIRACHA AIOLI
Ahi Tuna Burgers with Sriracha Aioli are so hearty and bursting with delicious Asian flavors! They're full of lean protein and good-for-you ingredients, and they're an amazing alternative to all your regular burger recipes.

Steps:
- With a sharp knife cut the tuna meat into 1-inch pieces. Add them to the food processor, drizzle the sesame oil over the tuna and pulse 4-6 times, be sure to not over-process the meat.
- Add the tuna and the rest of the burger ingredients to a large mixing bowl. Mix all the ingredients together.
- Form 5 equally-sized tuna patties and chill them for 20 minutes in the refrigerator.
- Pre-heat grill to 400 degrees.
- Spray grill grates with grill spray, high heat cooking spray, or brush them with oil.
- Spray a good coating of cooking spray on the tuna burgers and place them on the grill. Turn the heat down on the grill and try to keep it around 350 degrees for the rest of the cooking process. (If your grill has some spots that get really hot - avoid those areas to prevent the burgers from burning.)
- Close the grill lid and cook the burgers for 3 to 31/2 minutes.
- Spray the sides of the patties that are facing up with cooking spray, then flip them over and cook for another 3 to 31/2 minutes. *See cooking notes below
- Allow them to rest for 5 minutes then serve on burger buns with slaw and sriracha aioli
- Heat canola or high-heat cooking oil in a medium skillet over medium-high heat.
- Cook the tuna burgers in batches until nicely browned on both sides, about 3 minutes per side.
- Watch them closely, because they will cook quickly and you don't want them to burn or dry out.
- Add the bag of slaw mix, green onions, jalapeno, carrots, and cilantro to a large mixing bowl and set aside.
- Add the rice vinegar, Asian chili garlic sauce (either Sriracha or Asian Chili Garlic Sauce), honey, Dijon mustard, garlic cloves minced, sesame oil and soy sauce (or tamari for Gluten free option) to a sauce pan over medium-high heat. Bring it to a simmer, stirring occasionally for 2-3 minutes.
- Remove from the heat and whisk in the olive oil until it becomes a smooth sauce.
- Pour the sauce over the slaw mixture and toss until combined.

DELICIOUS AHI FISH BURGERS WITH CHIVES
I got this recipe from my coworker - loved it and then made it for my boyfriend. Now he loves it and I make it at least twice a month. You can eat this plain or as a burger. I recommend eating them with hamburger buns, mayo, lettuce and onions.

- Dice tuna into 1/4" pieces and place in a mixing bowl
- Squeeze one fresh lime wedge onto tuna
- Salt and pepper tuna, and mix in old bay seasoning
- Crush crackers and cilantro and mix to an oatmeal consistency (you want some larger pieces)
- In a separate bowl, scramble the egg and add to tuna.
- Combine cracker crumbs with tuna and mix together (it will look wet, don't worry the crackers will absorb the liquid).
- Cover and refrigerate for at least 10 minutes
- Heat a sauté pan over medium high and add tbsp olive oil
- Divide tuna mixture into 3 equal parts and form into balls and lightly smash to flatten top and bottom
- Place in sauté pan and cook over medium high heat for 2 minutes, turn over and cook for another 2 minutes.
- Serve with fresh lime and drizzle with tuna sauce

- 1. To blanch the garlic, peel the cloves and place in 1 cup of boiling water. Steep for 20-30 minutes or until cool enough to handle. Mince.
- 2. Partially thaw tuna if frozen. Remove any skin, bones, or silver skin (fascia). Optionally, remove very dark portions of the meat or distribute it throughout the mixture when chopping.
- 3. Coarsely mince the tuna with a large knife or cleaver or by pulsing gently in the food processor. Do not grind into a paste. Reserve some texture or the patties will be too dense.
- 4. Fold together the tuna, garlic, thyme, mayonnaise, soy sauce, black pepper and half (1/3 cup) the bread crumbs until all ingredients are well distributed.
- 5. Form the mixture into a ball, wrap with plastic wrap, and chill for at least 30 minutes to allow bread crumbs to hydrate and flavors to meld.
- 6. Quarter the mixture and form four equal patties, approximately 3 inches in diameter and 1/2 inch thick. Put the other half of the bread crumbs in a shallow bowl and dip each burger in the crumbs to thinly coat on both sides and edges.
- 7. Heat a skillet in a 400F oven. Coat the skillet with oil, and bake the patties 10 minutes, turning once (5 minutes per side). Serve hot.
SEARED AHI TUNA STEAKS

- Season the tuna steaks with salt and cayenne pepper.
- Melt the butter with the olive oil in a skillet over medium-high heat. Cook the peppercorns in the mixture until they soften and pop, about 5 minutes. Gently place the seasoned tuna in the skillet and cook to desired doneness, 1 1/2 minutes per side for rare.

TUNA PATTIES WITH THREE DIPPING SAUCES
I was never much a fan of tuna patties, but I was tired of the same old same old tuna, and wanted the convenience they offer, I kept experimenting until I came up with these. I think they are very good, and are even better with one of the three dipping sauces I like to make with them (the mustard dill sauce is adapted from the Joy of Cooking). Made smaller into bite-sized pieces they also make great appetizers when served with the sauces. They are great cold as well, and even will tend to keep a bit of the crispness. Prepare the dipping sauce first so they can sit a bit in the fridge to let the flavors blend. If you can make the sauces the day before or early in the day, even better. Any creamy dill sauce is also good with these, or feel free to use your own favorite. They are even good plain without any sauce. As far as the crackers go, Ithe recipe calls for Ritz crackers, but I have also used Club, and even plain saltines or soda crackers in a pinch, although a bit of the richness of flavor is lost. I've also combined crackers when I've had some of each left over. Although you can make them into crumbs in a blender, I like to use my tabletop electric mini-chopper because it gives a better, coarser texture. The blender crumbs are very fine and will give excellent results as well, I think the slightly coarser crumbs are a bit better.

- In a food chopper, processor or blender, process the crackers into crumbs and set aside.
- In a bowl, combine the flaked tuna, onion, bell pepper, cheese, mayonnaise, egg, salt, pepper, giner and dill. Add 6 tablespoons of the cracker crumbs and mix very well with a fork, making as smooth as possible. The texture should be soft, but firm enough to be able to form into patties. If needed, add a bit more of the cracker crumbs.
- Put the remainder of the cracker crumbs in a shallow dish. Scoop out a scant 1/4 cup of the tuna mixture, roll into a ball, put into the crumbs, press down to flatten the pattie to about 1/2 to 3/4 inch thick, then turn and dredge the other side with the crumbs. Put on a plate and continue until all the tuna mixture is used up.
- If you can, let the tuna patties sit in the fridge for about 1/2 hour to set a bit.
- In a large skillet (I like to use my electric set at 375) add enough oil to coat the entire bottom with a thin layer. When heated, add the patties and cook until well-browned and crispy on one side, then turn to brown and crisp the other side. Add more oil if needed as you go along. Remove to a plate lined with a paper towel and top with a 2nd paper towel to help drain some of the oil, then serve with your favorite dipping sauce, or even plain. They are also good served cold.
- Mustard Dill Sauce: In a bowl, combine the mustard, lemon juice, dill, sugar, salt and pepper and whisk until smooth. Add the oil gradually while whisking until all the oil is incorporated and the sauce is thickened. Let this chill in the fridge to blend flavors.
- Honey Mustard: Combine all the ingredients in a bowl and whisk until smooth and well blended. Let chill in the fridge to blend flavors.
- Curried Mayonnaise: Combine all the ingredients in a bowl and whisk until smooth and well-blended. Let chill in the fridge to blend flavors.
TUNA PATTIES/BURGERS JAPANESE STYLE
I have already posted a salmon patty recipe, so I thought I would move on to tuna. I buy Ahi tuna, which is most commonly used in raw Japanese fish dishes such as sashimi. Ahi refers to two species, bigeye tuna and yellowfin tuna. With yellowfin being most common, it has nice red pigmentation to skin, it is more perishable than bigeye and looses its red pigmentation quicker. So when buying look for a good bright red colour for freshness.

- Cut tuna into chunks place tuna, mayo, mustard, vinegar and lemon juice into a food processor or blender and pulse until ingredients are just combined. Add onion, soy sauce, ginger and garlic and pulse again to combine.
- Add coriander and panko (note: save enough flakes to coat the outside of patties for frying.) Mix these ingredients until combined.
- Shape into patties it will make 8 medium patties (2 per person) or 6 Large burgers if you want to serve them this way in buns. Place patties on tray and put in fridge to chill for 15-20 Min's.
- Heat oil in pan (you may need 2) Or you can grill on BBQ. Add patties to pan and cook on each side about 4-5 Min's. The patties should have a nice golden brown outside and be medium rare inside. If you over cook tuna it becomes very dry.
- For the wasabi mayonnaise.
- Mix a little water with the wasabi powder to form a paste add mustard and mayo and mix well place in refrigerator for about 30 Min's to allow flavours to infuse.
- To serve place atop salad greens and serve the wasabi mayonnaise on the side.
