AFTER SCHOOL ANTIPASTO PINWHEEL SANDWICHES
Whole wheat tortillas are filled with all of the flavors of an antipasto but served in a fun new way! Paired with a cold glass of milk this makes the perfect snack!

Steps:
- Combine the cream cheese and sun-dried tomato pesto in a mini food processor or bowl until well blended. Reserve some of the mixture to seal the pinwheels.
- Spread cream cheese mixture over each tortilla all the way to the edges. Sprinkle the tortillas evenly with the pepperoncinis and basil leaving a 1 1/2-inch edge on one side.
- Place 5 slices of salami over each tortilla leaving a 1 1/2-inch edge on one side.
- Starting with the salami end, roll each tortilla as tightly as you can. When you get to the end, smear some of the leftover cream cheese over the end and seal the sandwich. Wrap each sandwich in plastic wrap and refrigerate for at least 2 hours.
- When chilled, unwrap and slice rolls into 8 pieces per sandwich. Serve with an ice cold glass of milk!

A perfect picnic sandwich. Easy to do the night before and refrigerate until ready to go. The flavors just melt together into one wonderful sensation.

Steps:
- Cut the bread horizontally into 5 slices.
- Lay a large piece of plastic wrap on your work surface, the place the bottom layer of bread in the center.
- Spread with a thin coat of mayonnaise (all layers will get a thin coat- this keeps the bread from getting soaked with juices), 1/2 the romaine, the roasted red peppers and the onion.
- Add the next slice of bread, coat with mayonnaise, then all the provolone and salami.
- Add the next slice, coat with mayo, then the remaining romaine, and the mortadella.
- Next slice, mayo, tomato, coppa.
- Top with the last slice of bread, press down on the sandwich lightly with your hands.
- Wrap very tightly in plastic wrap, and refrigerate for at least 1 hour, but preferably 3-4.
- Slice and serve with the olives and pepperoncini.

- Remove crusts from long bread slice. Roll lightly with rolling pin to prevent cracking when rolled. Spread with butter right to edge. Spread with filling also to edge. Starting at narrow end, roll up. Place seam side down on plate. Cover with damp tea towel and chill. To serve, cut each roll into about 12 slices. Arrange on serving plate.
- PICKLE PINWHEELS: Spread bread with processed cheese spread. Lay olives, gherkins or dill pickle strips close together at narrow end. Roll. When sliced, the center will have a small slice of olive or pickle in it.
- BANANA PINWHEELS: After spreading bread with butter, spread with peanut butter. Dip banana, in pickle juice and cut the same size as bread. Place on narrow edge of bread slice and roll. Chill. Slice when needed.
- FOR THE HAM FILLING: Combine ham, relish, onion and salad dressing. If too dry, add a bit more salad dressing. Mash with potato masher until smooth.

FANCY PINWHEEL SANDWICHES
I developed this recipe to serve as an appetizer at parties. The presentation is lovely and the preparation is fairly easy but does require several hours/overnight chilling time before you can slice them. The recipe makes 100 individual pinwheels so it is easy to judge how many batches you will need to feed your guests. It makes two different types of sandwiches to suite everyones taste.It is usually one of the crowd favorites wherever I take it. .

- You will be making two different types of pinwheels: Roast Beef with Cheddar and cucumber in a tomato wrap and Turkey with bacon and garlic herb cheese in a spinach wrap.
- Wash head of lettuce and dry thoroughly.
- Slice off the ends of the cucumber and remove the skin.
- Cut in half lenghtwise and each half again and scoop out seeds with a spoon.
- Slice each quarter into thin, wedgeshaped strips.
- Place a tomato wrap on a cutting board and cover the surface of it with a thin layer of the cheddar horseraddish cheese spread, making sure to go to the edges. This is very important as the cheese spread holds everything together.
- Leaving the top 2" of the wrap uncovered, lay 2 lettuce leaves on the cheese and press gently. You will need the layer of just cheese to "stick" the wrap together after rolling.
- Lay 2 slices of Roast Beef on top of the lettuce.
- Place about 3 wedges of cucumber crosswise on each slice of Roast Beef bringing the ends together in the middle.
- Starting from the bottom, roll the wrap upward, firmly but gently as not to tear it, finishing at the layer of cheese.
- Cover the pinwheel with a piece of plastice wrap , twisting the ends to secure.
- Repeat for the 4 remaining wraps.
- You use the same preparation process for the Turkey and Garlic Herb Pinwheels using the Spinach wraps, garlic and herb cheese spread, Smoked Turkey and the lettuce leaves. Omit the cucumber and add 3 bacon strips placed crosswise over the turkey. Roll and cover with plastic wrap.
- Place wrapped pinwheels in the refrigerator for several hours to overnight to allow cheese to firm back up. You want them cold and firm when you slice them.
- After chilling, remove plastic wrap and place pinwheel on a cutting board. Using a thin, sharp serated knife slice off the end and then continue cutting slices down every 1/2" until you reach the other end. Neither of the end pieces will be nice enough for presentation but that doesn't mean the cook can't enjoy them!
- You will have 50 slices of each kind of pinwheel when you are finished.

PINWHEEL SANDWICHES
Delicious little bite (or maybe two) size sandwiches or appetizers that are easy to make and even easier to eat. Just a warning, don't make these too far in advance as the tortillas will get soggy. I made these for a bridal shower and they were a hit. I was channel surfing and saw a chef on TV making these sandwiches - might have been Paula Deen. She suggested adding tuna, ham or other meats before rolling.

- blend the cream cheese and sour cream together.
- add green chiles and salsa and blend well.
- add pepperjack cheese.
- fold spinach and mix well.
- spread mixture lightly on the shell.
- roll shell tightly.
- secure shell with toothpicks.
- cut into 3/4" to 1" sections.
- repeat on next shell until filling is gone.
