FRIED WONTON RECIPE
This fried wonton recipe is tender wrappers stuffed with ground pork, mushrooms and seasonings, then deep fried to crispy golden brown perfection. An authentic restaurant style appetizer that's sure to earn you rave reviews!

Steps:
- Place the pork, mushrooms, green onions, soy sauce, sesame oil, cornstarch, salt, pepper, ginger and garlic in a large bowl. Stir until thoroughly combined.
- Place one wonton wrapper on a flat surface. Keep the remaining wrappers covered so that they don't dry out. Brush the two edges of the wonton wrapper farthest away from you with water.
- Place 3/4 teaspoon of the pork mixture onto the center of the wrapper. Fold the wrapper over into a triangle shape, then bring the two bottom corners together to make a purse shape. Use a bit of water to "glue" the bottom corners together.
- Repeat the process with the remaining wrappers and filling.
- Heat 3 inches of oil in a large deep pot to 375 degrees F.
- Fry 6-8 of the wontons at a time for 3-5 minutes or until golden brown. Drain on paper towels and repeat the process with the remaining wontons.
- Serve immediately, with a side of sweet chili sauce if desired.

WON TONS
These won tons are easy and amazingly good. Trick all of your friends into thinking you are a gourmet in just 20 minutes! Please note! Won tons are best when they are eaten directly after cooking. This recipe can be made in advance, however wait to fry them until just before serving. Wasabi can be found in many common grocery stores and Asian grocery stores.

- In a small mixing bowl, combine mustard, soy sauce and wasabi until the wasabi has dissolved. Cover and refrigerate.
- Place cream cheese in a large bowl (preferably chilled metal). Mix in crab meat, onion, water chestnuts and parsley. Place one spoonful of the mixture in the center of each won ton wrapper. Bring points of the wrapper together (in a triangular shape) and pinch the edges closed. If the edges do not stick together, wet your fingertips lightly with water and pinch the ends together again (this will help to hold the won ton together).
- Heat oil in a large skillet. When oil is hot, place won tons (approximately 6 at a time) into hot oil. Remove the won tons when they are golden brown. Drain them on a paper towel lined tray. Repeat this process until all won tons are fried. Serve with dipping sauce.

- Combine pork, garlic, ginger, soy sauce, sesame oil, and vegetables in a bowl.
- Separate wonton skins.
- Place a heaping teaspoon of filling in the center of the wonton.
- Brush water on 2 borders of the skin, covering 1/4 inch from the edge.
- Fold skin over to form a triangle, sealing edges.
- Pinch the two long outside points together.
- Heat oil to 450 degrees and fry 4 to 5 at a time until golden.
- Drain and serve with sauce.
VEGETARIAN WONTONS

- Drain the tofu, press firmly in between 2 pieces of paper towel to remove any excess liquid. Using a fork, mash the tofu until it resembles breadcrumbs. Set aside.
- Place carrot, white of the spring onion, garlic and ginger into a food processor and pulse several times to chop finely, ensuring not to make a paste. Scrape out and set aside.
- Place the cabbage pieces into the same food processor bowl and pulse several times. Remove and set aside.
- Place the mushrooms into the food processor bowl and pulse several times, remove and set aside.
- Heat a skillet over medium heat, add the carrot mixture and cook, stirring, for 2-3 minutes. Add the cabbage and mushroom and cook for a further 3 minutes. Remove from the heat and allow to cool.
- In a large mixing bowl add the crumbled tofu, cooked vegetable mixture, and the remaining filling ingredients. Stir until well combined. Adjust seasoning to taste.
- Bring a pot of water to the boil while making the wontons.
- Place a wonton wrapper on a flat surface, spoon a tsp of the filling mixture into the center of the wrapper.
- Using your finger, spread a thin layer of water around the edges of the wrapper. Fold one corner over the mixture to form a triangle, press along the edges to make sure it seals well.
- Take one corner and wrap it over the other corner, using a little water to seal it.
- Repeat with remaining wrappers and filling.
- Arrange the wontons in a steamer basket lined with baking paper and steam for 15 minutes. Depending on the size of the steamer basket you may need to repeat this step.
- While wontons are cooking, mix together all sauce ingredients and set aside.
- Serve the cooked wontons with the dipping sauce.

- Original called for 2 tablespoons of butter to cook fruit inches.
- For filling, in a medium bowl toss together pears, apples, cherries, and lemon juice.
- In a large skillet cook fruit mixture in the 2 tablespoons butter or margarine over medium heat about 7 minutes.
- Reduce heat; stir in Marsala or apple juice, nuts cinnamon, and ginger. Cook for 3 minutes more or till liquid has evaporated, stirring often. Stir in syrup; set aside.
- For each wonton, spoon about 2 teaspoons filling into the center of a wrapper. Lightly moisten edges of wrapper with water.
- Fold top edge of wrapper over filling to opposite edge, making a half-moon. Press edges together to seal.
- Arrange wontons on a greased baking sheet. Brush with the melted butter.
- Sprinkle with coarse sugar, if using. Bake in a 350F oven for 12 to 15 minutes or till golden. Cool slightly. Sprinkle with powdered sugar, if using.
- NOTES : I made these tonight. I reduced the initial amount of butter and it was fine. I tried spraying them with butter flavored spray instead of brushing them with butter and they would have been better with the butter. I also used bigger, square wontons and folded them diagonally to make them like turnovers (made 6). They were very tasty. Serve with some fat-free vanilla frozen yogurt and they would be a great lowfat dessert.
- Fruit-and-nut-filled wontons add a subtle finish to the evening meal.

- Make the soup: Combine the chicken stock, ginger, and dried shrimp in a stock pot over medium low heat and bring to a gentle boil. Turn the heat down to very low (1 to 2 bubbles) while you make the wonton.
- In a bowl, mix together the pork, ginger, scallions, soy, Shaoxing, sesame oil, salt, and white pepper. Whisk the cornstarch with 2 teaspoons of water and mix into the filling until the pork forms a paste. Mix in the shrimp.Optional: Massage the shrimp with 1 teaspoon baking soda and 1/2 teaspoon salt and let it sit for 30 minutes before rinsing throughly, chopping, and mixing into the wonton filling.
- Take a wonton wrapper and place 2 teaspoons of the meat filling near the edge. Fold/roll the wrapper up, enclosing the filling. Bring the opposite ends of the wrapper together and use a dab of water to seal. Alternatively, just wet the edges of the wrapper and bring together and pinch into a small pouch. Keep the wrappers and finished wonton covered with saran wrap as you work, to keep them from drying out.
- Bring a second large pot of water to boil over high heat. When the water reaches a rapid boil, add in your wonton. Stir gently so they don’t stick to the bottom of the pot. They will start to float once they’re cooked through. Cook for 3-4 minutes (depending on size) or until cooked through – cut one open to check.
