MARINATED ACHIOTE CHICKEN RECIPE
This beautiful, Marinated Achiote Chicken Recipe, also called Pollo Pibil, is juicy, succulent, and full of rich, deep Mexican flavors.

Steps:
- Add the Guajillo peppers and water to a small pot and bring to a boil. Then reduce the heat to low and simmer for five minutes. Turn off the heat, cover the pot and let it stand for 20 minutes.
- Remove the stems and seeds from the hydrated peppers. (Leave some seeds is you prefer more heat.) Add both the peppers and water they hydrated in, to a blender.
- Add the achiote paste, orange juice and garlic to the blender and blend until smooth. Set aside.
- Add the skinless, bone-in chicken pieces to a large zip-lock bag and pour in the achiote marinade, which shouldn't be hot because of the addition of the orange juice. Move the chicken pieces around to be sure they're all well coated, remove the air from the bag and seal it. Then put this in another large zip-lock bag to ensure it doesn't leak. Place in the refrigerator for at least 3 hours and ideally overnight.
- Preheat the oven to 375°F and once the chicken is done marinating, add it, and all of the marinade to a large enough baking dish to hold the everything snugly. Sprinkle with salt and pepper.
- Bake in the preheated 375°F oven just until it's cooked through, about 45 minutes. Flip the pieces over about halfway through the cooking time and sprinkle with salt and pepper. Once it's cooked through, flip the chicken over once more, sprinkle sightly with a bit more salt, and serve.

ROAST ACHIOTE CITRUS CHICKEN

- Rub the marinade all over the chicken, inside and out. Place in a bowl, cover and refrigerate at least 1 hour or as long as overnight.
- Preheat oven to 400 degrees.
- Lift the chicken from the marinade and place on a work surface. Cut the onion, head of garlic and orange in half and stuff inside the chicken's cavity. Tie the legs together and place on a rack in a roasting pan, breast side down.
- Roast 20 minutes, then reduce the heat to 350 degrees and roast 20 minutes longer. Turn the chicken, breast side up, and bake 40 to 50 minutes longer, basting occasionally with the pan juices, until a drumstick feels loose when jiggled and the skin is golden brown. Remove from the oven and let sit 10 minutes before serving. Serve warm with rice and beans.
TANGERINE CHICKEN THIGHS
Chicken thighs that are fall off the bone delicious with a wonderful asian tangerine sauce.

- Preheat oven to 425F.
- Heat oil in cast iron skillet over medium high heat. Place chicken thighs, skin side down and cook for 12-16 minutes, or until the skin is browned.
- While the chicken is cooking in the skillet, make the tangerine sauce. Halve the tangerines and squeeze the juice out into a small mixing bowl. Whisk the juice with the soy sauce, honey, sesame oil and sriracha.
- Pour the sauce all over the chicken thighs. Turn to coat and then turn again to have the skin side down. Place the tangerine halves in the cast iron skillet as well.
- Place the cast iron skillet in the oven and bake for 15 minutes. Use tongs to flip the chicken thighs so the skin side is up and bake another 10 minutes or until the chicken thighs register an internal temperature of 180F. Remove from the oven and let the chicken thighs rest for 5 minutes.
- Garnish with sliced green onions and serve.

ACHIOTE CHICKEN TAMALES
Steps:
- For the red chile sauce: Soak corn husks in hot water until pliable, about 2 hours.
- Meanwhile, boil garlic, guajillos, pasillas and onion in water until the vegetables soften, about 10 minutes. Blend the vegetables in a blender with 1 cup of the cooking liquid until smooth (see Cook's Note). Strain the mixture, discarding the seeds and pulp.
- Heat the canola oil in a saucepan over low heat, then add the flour and cook, whisking, until a roux has formed, a few minutes. Add the chile mixture, then season with salt, pepper and cumin. Cook for an additional 15 minutes. Set aside.
- For the achiote chicken thighs: Preheat the oven to 375 degrees F.
- Mix achiote paste with 3 ounces olive oil by hand until a soft paste forms. Rub chicken thighs with the paste and place in a roasting pan. Bake until cooked through, 30 to 45 minutes.
- Chop the chicken into 1/4-inch cubes and mix well with 1 cup red chile sauce.
- For the tamales: Mix masa, baking powder, chicken stock and 1 1/2 cups extra virgin olive oil by hand until it is spreadable but still holds its shape.
- Spoon about 2 tablespoons masa into the center of the wider portion of the husks, then place 2 tablespoons achiote chicken in the center along with a piece of jack cheese.
- Roll up the husk, keeping the top open, and folding the narrower side over to seal the bottom.
- Place the tamales, open-end up, in a steamer basket and steam over a pot of boiling water, covered, for 1 hour.
- Let the tamales rest for 1 hour, then serve with additional red chile sauce.
TANGERINE CHICKEN

- Remove colored part of peel from tangerines using a vegetable peeler and very finely chop; juice enough tangerines to yield 3/4 cup juice.
- Combine peel and juice in a bowl with soy sauce, honey, garlic, ginger root, sesame oil, cinnamon, and pepper; whisk until honey is dissolved. Pour into a food storage bag.
- Cut off rib portions from chicken breasts. Place breasts halves in marinade and seal bag; turn to coat chicken. Refrigerate at least 4 hours, turning bag several times.
- Remove chicken from marinade and place in a foil-lined shallow roasting pan. Pour marinade from the bag into a saucepan, boil 10 minutes, until mixture is thick and syrupy. Brush chicken with some sauce. Roast chicken at 375 degrees F for 45 minutes, basting with remaining sauce, until chicken is just barely pink in thickest parts. Garnish breasts with toasted sesame seeds.
FAST AND EASY TANGERINE SAUCE
Easy sauce for vegetables, chicken, or fish. I originally developed this recipe as a topping for fresh steamed broccoli but found it works well with a variety of foods. I get the tangerine juice from Walmart but other large grocery stores and natural food markets should carry it. For a slightly different flavor try mandarin orange juice.

- Put 1 cup of tangerine juice in sauce pan along with lemon juice, butter, and salt.
- Put pan on low heat.
- You want to heat up the mixture without boiling it.
- The butter should be completely melted and sauce steaming.
- While the main ingredients are heating up, mix the remaining 1/2 cup of tangerine juice with the corn starch and mix until smooth.
- Once the sauce is steaming slowly whisk the corn starch mixture into the pan.
- Keep whisking until sauce thickens.
- Once sauce has thickened, remove from heat and serve over you favorite steamed vegetables (it is excellent over broccoli), fish, or chicken.
