NEW YORK CHEESECAKE
It is important to allow the ingredients come to room temperature to avoid lumps. A (crustless) Jim Fobel cheesecake recipe from his cookbook, Old-Fashioned Baking Book. Prep time includes the overall rest and chill time.

- Generously butter the inside of a 10-inch springform pan. Wrap a double layer of heavy-duty aluminum foil tightly around the outside bottom and sides, crimping and pleating the foil to make it conform to the pan. This will help to prevent water seeping into the pan when you put it into the bain-marie (water bath). Position the baking rack in the center of the oven; preheat the oven to 300 degrees F.
- In a large mixing bowl, using an electric mixer, beat the eggs with the sour cream until well blended.
- In a medium-sized bowl, beat the cream cheese with the butter until smooth and creamy. Add this to the egg-sour cream mixture and beat until smooth.
- Add the sugar, cornstarch, vanilla, lemon juice and lemon zest and beat thoroughly, about 2 minutes.
- Pour into the prepared springform pan and place in a roasting pan (or other pan) large enough to prevent the sides from touching. Place in the oven and carefully pour in enough very hot tap water to reach halfway up the sides of the springform pan.
- Bake for 2 hours, 15 minutes or until the cake is very lightly colored and a knife inserted in the center emerges clean. Remove from the water bath and carefully peel the aluminum foil from around the pan. (Be very careful not to burn yourself. Have a spot ready to set the pan.) Let stand at room temperature until completely cool, about 4 hours. Refrigerate, covered, until well chilled. For best flavor and texture, this cheesecake is best chilled overnight.
- When you first remove the cheesecake from the oven, it looks light and puffy, and there may be some hairline cracks in the top. As the cheesecake cools, it will gently deflate and the hairline cracks deminish.

ORIGINAL NEW YORK CHEESECAKE
I love cheesecake and make many different varieties, but this is my basic go to recipe. There are many variations around but this is the one I like best. Always, KISS THE COOK!

Steps:
- Bring all ingredients to room temperature (this helps to prevent cracking).
- MIX crumbs, 3 tablespoons sugar and butter;.
- press onto bottom of 9-inch springform pan. (using a hamburger press handle works great for this!).
- Bake at 325°F for 10 minutes.
- MIX cream cheese, 1 cup sugar, flour and vanilla with electric mixer on medium speed until well blended.
- Blend in sour cream. mix well
- Add eggs, 1 at a time, mixing on low speed after each addition, just until blended. Do not over mix!
- Pour over crust.
- Run a knife through to remove any air bubbles.
- BAKE 1 hour and 5 minutes to 1 hour and 10 minutes or until center is almost set. 325 °F for a silver springform pan 300 °F if using a dark nonstick pan
- Crack oven door open slightly and allow cheesecake to temper for about 30 minutes.
- Run knife around rim of pan to loosen cake;.
- Remove rim of pan.
- Refrigerate 4 hours or overnight. (This is a must!).
- Top with cherry pie filling and garnish, if desired.
- Variation, 1/3 cup seedless strawberry jam can be dropped in spoonfuls over the batter and cut through the batter several times for marble effect before baking.
- Variation #2 Cook above recipe and add 10 minutes before bake time ends. Mix 1 cup sour cream, 2 Tbsp sugar, and 1 tsp vanilla together and carefully spread over cheesecake and bake 10 minutes longer. When serving, top with mixed berries!
- Variation #3 Before serving, melt caramels in the microwave until smooth, stir in chopped pecans in desired and spoon on top of each slice.
- Variation #4 Before serving, Crush us peanut butter cups press lightly into top of cheescake and drizzle with chocolate syrup.
- Variation #5 Before serving, Cut cheesecake into cubes if desired, and drizzle with melted chocolate. Refrigerate for chocolate to harden.

- Preheat oven to 325. Prepare large Springform pan. (this makes a big cake, so use 10-12").
- Cream cheese with sugar and milk.
- Add eggs, vanilla and lemon.
- Keep mixer going all the time.
- Add flour and cornstarch.
- Blend in butter. Last, add sour cream. Pour into springform pan.
- Make a water bath (a larger pan filled with hot water) and place cheesecake pan in it. Put in oven. Reduce temperature to 300 and bake 1 hour.
- Shut off oven and leave cheesecake in oven for 2 more hours. NEVER OPEN OVEN DURING THIS TIME.
- Remove from oven and cool completely in frig.
- Top with fruit topping of choice, especially good with glazed fresh strawberries.

- Using a food processor, pulse the graham crackers into crumbs. Pour into a medium bowl and stir in sugar and melted butter until combined.
- Using a handheld or stan mixer fitted with a paddle attachment beat the cream cheese and granulated sugar together on medium-high speed in a large bowl until the mixture is smooth and creamy ( about 2 minutes). Add the sour cream, vanilla extract, and lemon juice then beat until fully combined. On medium speed, add the eggs one at a time, beating after each addition until just blended. After the final egg is incorporated into the batter, stop mixing. (To help prevent the cheesecake from deflating and cracking as it cools, avoid over-mixing the batter)
- Place the cake pan with the crust in a roasting pan. Boil a pot of water. You need 1 inch of water in your roasting pan for the water bath, so make sure you boil enough. If you haven't already wrapped aluminium foil around the cake pan, do it now. The aluminium foil prevents the water from touching the cake.
