ABSOLUTELY PERFECT CHICKEN AND DUMPLINGS
Chicken and Dumplings has always been a favorite of mine, but I have been looking for a recipe that combines the chewy German dumpling with the lightness of a "biscuit" type dumpling. So I invented this recipe that makes a dumpling that is a nice combination of both. It's also super easy because you use pre-made chicken broth. My family loves it!

Steps:
- Chop onion and celery and add them to your chicken broth in a large wide pot. Bring to boil and let simmer about 20 minutes, or until vegetables are tender.
- While veggies are simmering: mix flour, salt and baking soda in a medium sized bowl. In separate small bowl, combine eggs and milk. Pour wet ingredients into dry ingredients and stir til mixed. (Batter will resemble a thick paste.)
- Once veggies are tender, add chicken to the broth and get the mixture back up to a nice boil. (At this point, I always add water to replace any of the liquid that evaporated during the simmering of the veggies.)
- Using two spoons, gently add "dollops" of the dumpling dough all around the chicken and broth. (Be very careful not to burn yourself from splashing the boiling liquid.) Once you've added all of the dumpling dough all around the pan, put on the lid and turn the heat down to low. Let simmer about five minutes until the dumplings are fully cooked.
- Ladle it up and enjoy!
PERFECT CHICKEN AND DUMPLINGS
This is very basic and easy to make. It does not contain vegetables like a lot of other recipes do. Prep time includes boiling the chicken.

Steps:
- Boil the chicken in the water and bouillon cubes.
- You can use any combination of chicken parts, just be sure to use chicken with the skin on.
- When the chicken is done, remove it from the broth and chop the meat into bite sized pieces.
- Take 1 cup of the broth and add the egg and enough flour to make a stiff dough.
- Roll the dough out on a floured surface and cut into strips about 1x2inches.
- (dough should be about 1/8th of an inch thick).
- Drop the strips into the remaining broth (it should be boiling first).
- Simmer them for 30 minutes.
- Add the chicken pieces during the last 5 minutes.
- Add salt and pepper if needed.

- In a large, deep pot set over medium-high heat, melt together olive oil and butter. Generously season chicken pieces with salt and pepper. Brown the chicken on both sides, working in batches so as not to crowd the pot (about 4 to 6 minutes per side). Transfer chicken to a plate and set aside.
- Add the celery, carrots, and garlic to the pot. Cook the vegetables in the drippings until they begin to soften, stirring and adjusting the heat as necessary, about 5 to 7 minutes. Add the browned chicken pieces, thyme, bay leaves, garlic powder, onion powder, and chicken broth. Bring to a simmer and cook until the chicken is cooked through, about 25 to 30 minutes. Remove and discard the thyme stems and bay leaves. Transfer the cooked chicken to a plate. Remove and discard the skin and bones, shred the chicken, and return to the pot.
- Ladle 2 cups of the cooking liquid into a large bowl or quart-sized measuring cup. Whisk in 1/2 cup of the flour until smooth. Continuously whisk the contents of the pot while slowly pouring in the flour mixture. Simmer and whisk until slightly thickened, about 8 to 10 minutes.
- To make the dumplings, in a medium bowl, whisk together the remaining flour, cornmeal, baking powder, baking soda, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Stir in the melted butter, buttermilk, and minced parsley until just combined. With heat reduced to low, drop rustic, tablespoon-sized balls into the simmering broth. Gently stir dumplings one time and then simmer, covered, until the dumplings are firm, about 12 to 15 minutes. Stir in sherry and season the dish with additional salt and pepper, to taste. Serve immediately, sprinkled with additional minced fresh parsley.
