Herb baked chicken is a foolproof family favorite recipe that never disappoints! It comes together so quick and easily.

2 lbs. chicken drumsticks, pat dried with paper towel
1 Tbsp. olive oil
2 tsp. dried oregano
1 tsp. garlic powder
1 tsp. onion powder
1/2 tsp. dried basil
1/4 tsp. cayenne pepper
1 tsp. kosher salt
Fresh black pepper, to taste

Steps:

  • Preheat the oven to 375 degrees F. Line a rimmed baking sheet with parchment paper. If using aluminum foil, lightly coat with non-stick spray.
  • In a small bowl, mix together all of the spices and set aside.
  • Place the chicken drumsticks into a large bowl. Make sure they have already been pat dried with a paper towel. Add olive oil and using your hands, toss to coat.
  • Sprinkle in the seasoning mix and using your hands again, toss the drumsticks making sure each piece is thoroughly coated with the seasoning.
  • Arrange the drumsticks on the prepared baking sheet and roast for 30 minutes. Then flip the drumsticks and roast for additional 25-30 minutes. If desired, broil for 2-3 minutes for extra crispy skin.

2 boneless, skinless chicken breasts
2 cups asparagus, sliced
2 cups cherry tomato, halved
3 tablespoons olive oil
1 teaspoon dried basil
1 teaspoon dried thyme
½ teaspoon dried rosemary
1 teaspoon salt
1 teaspoon black pepper

Steps:

  • Preheat the oven to 400°F (200°C).
  • Place the asparagus and cherry tomatoes on opposite sides of a large, rimmed baking sheet.
  • Place the chicken breasts in the middle section of the baking sheet.
  • Drizzle the veggies and chicken with the oil.
  • Sprinkle on the salt, pepper, basil, thyme, and rosemary, ensuring all the ingredients are evenly coated in the oil and seasonings.
  • Bake for 25 minutes or until chicken's internal temperature reaches 165˚F (72˚C).
  • Allow the chicken to rest for 5 minutes before slicing.
  • Place the chicken breast on a plate with portions of the roasted veggies and serve.

I found this in a low carb cookbook from Prevention Magazine and we really liked it. I prepared breasts and legs with skin on for the kids, and took the skin off for my husband and I.

2 tablespoons whole wheat flour
1 teaspoon oregano
1 teaspoon thyme
3/4 teaspoon dill
1/2 teaspoon rosemary, crumbled
1/2 teaspoon paprika
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
4 skinless chicken breasts or 4 chicken legs
1 tablespoon olive oil

Steps:

  • Preheat oven to 425F, generously coat baking pan with cooking spray.
  • In a small bowl, mix together flour and all spices.
  • Using a basting brush, coat chicken pieces with olive oil and sprinkle both sides of meat with flour/spice mixture.
  • Press flour mixture onto the chicken pieces with your fingertips.
  • Roast 30-35 minutes turning the meat at least once part way through the cooking time.
  • Meat thermometer should read 180°F.

I got this recipe from one of my mom's church cookbooks. I always seem to find the best tasting recipe in church cookbooks! This recipe uses boneless chicken with a blend of spices to give it a wonderful taste. I usually make this with potatoes (prepared as fancy or simple as you like) and a vegetable. I also like to combine spices ahead of time. I've tried this by eliminating 1 or 2 spices when I was out and it still turns out wonderful.

8 boneless chicken breasts
1/2 cup butter or 1/2 cup margarine
2 tablespoons parmesan cheese
1 tablespoon parsley, dried
1 teaspoon paprika
1 teaspoon onion powder
1/2 teaspoon oregano
1/2 teaspoon garlic salt
1/2 teaspoon sweet basil
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Combine all spices. (all ingredients except first two-chicken and butter.).
  • Arrange chicken in shallow baking dish.
  • Melt butter and pour over chicken.
  • Turn chicken pieces over so both sides are coated with butter. (I use a tongs for this.).
  • Sprinkle chicken with about 1/4 of the spices.
  • Every 10-15 minutes, sprinkle another 1/4 of the spices on the chicken pieces.
  • Bake at 375 for 55 minutes.

1 (6 ounce) box rice pilaf mix (curry flavor or add 1/2 tsp curry powder to regular rice pilaf)
1 (14 ounce) can diced tomatoes, drained
8 ounces frozen peas
1/2 cup unsalted cashews

Steps:

  • Prepare the rice according to package directions.
  • After 15 minutes of simmering, stir in the chicken, tomatoes, and peas.
  • Simmer for 10 to 15 minutes more, until the rice is tender and most of the liquid is absorbed.
  • Top with the cashews.

3 large boneless skinless chicken breasts, halved (about 1 1/2 lbs)
salt and pepper, to taste
1/4 cup butter or 1/4 cup margarine
1 (10 1/2 ounce) can condensed cream of chicken soup
3/4 cup sauterne
1/2 cup sliced celery
1/2 cup fresh mushrooms, sliced (1/2 cup) or 1 (3 ounce) can sliced mushrooms, drained (1/2 cup)
2 tablespoons chopped canned pimiento

Steps:

  • Prepare rice mix as instructed on package.
  • Season chicken with salt and pepper.
  • Melt butter in a skillet and slowly brown chicken.
  • Put rice mixture in a 1 1/2 quart casserole.
  • Top with the chicken.
  • Add soup to skillet, slowly add sauterne and stir until smooth.
  • Add remaining ingredients.
  • Bring to boil.
  • Pour over chicken.
  • Cover and bake at 350 F for 25 minutes.
  • Uncover and bake for 15 to 20 minutes or until tender.
