2 slices cooked crispy bacon (sliced into ½" inch pieces)
2 (8 inches) flour tortillas
softened butter (for lightly spreading on the tortillas)
2 tablespoons Pico de Gallo
1/2 cup shredded Colby-jack cheese
2 cooked boneless skinless chicken breasts (heated and cut into strips) Optional Condiments-
sour cream
guacamole
salsa

Steps:

Heat a large non-stick frypan over medium heat. Spread butter lightly on one side of the flour tortilla shell. Place butter side down into the pan.
Sprinkle half of the cheese evenly over the entire tortilla. On half of the tortilla sprinkle half of the bacon, half of the chicken pieces, and 1 tablespoon of Pico de Gallo. Cook until the cheese has melted and the bottom has browned. Using a spatula fold the tortilla in half and press down the edges gently.
Remove from the pan. Repeat with remaining tortilla. Slice each quesadilla into thee triangles. Serve with sour cream, guacamole, and salsa.

Ingredients

1/2 ounce shortening
2 (12 inch) flour tortillas
2 tablespoons chipotle hot sauce
4 ounces grilled chicken (seasoning optional)
1 cup lettuce, shredded
4 ounces sour cream
2 ounces green onions
4 ounces salsa

Steps:

Brush one side of each tortilla with shortening.
Place one tortilla, shortening side down on work surface. Spread chipotle sauce evenly on one tortilla.
If chicken was not freshly grilled, then microwave chicken approximately 45 seconds, then distribute evenly on top of sauce on tortilla.
Evenly put Quesa Filling on top of chicken. Then, cover with the other tortilla, shortening side up.
Brown on griddle or in non stick pan evenly on both sides until internal filling is thoroughly heated.
Use shredded lettuce, sour cream, green onion and salsa as accompaniments. I like to add crumbled bacon on top.

2 slices lean bacon (sliced into 1/2" pieces)
2 flour tortillas (8" diameter)
softened butter (, softened for lightly spreading on tortilla shells)
1 tablespoon pico de gallo
1/4 cup shredded colby-monterey jack cheese
sour cream
guacamole
picante sauce or salsa
2 cooked chicken breasts, cut into strips

Steps:

Slice bacon and fry until bacon starts to turn crisp but not hard and brittle.
Remove from pan, drain bacon and set aside.
Spread butter lightly on one side of the flour tortilla shell.
Place buttered side of shell down, into a non-stick fry pan that has been preheated on medium heat.
Sprinkle 2 tablespoons of bacon over entire shell, then add 1 tablespoon Pico de gallo, and 1/4 cup shredded Colby/Monterey Jack cheese over the bacon.
Add pieces of the cooked chicken.
Place the second flour shell on top of fixings, buttered side up.
Cook for about one- two minutes just long enough to heat the inside ingredients and then carefully flip the quesadilla on the other side and finish cooking.
The quesadilla should be heated through but not browned.
Remove quesadilla and place on a serving dish and cut into individual triangle serving pieces.
Serve quesadillas with your favorite guacamole sour cream, and picante sauce.
