ABRUZZO SUMMER MINESTRONE

Abruzzo Summer Minestrone image

This soup combines everything from your garden (or the produce aisle) in late summer--green beans, zucchini, squash, tomato, peppers and basil. While many minestrone recipes are vegetarian, some include slow-cooked pork or beef. We skip that step--and the time it adds--by using a flavorful jarred sauce that includes simmered sausage and peppers.

Categories     main-dish

Time 30m

Yield 6 servings

Number Of Ingredients 16

3 tablespoons unsalted butter
3 cloves garlic, minced
1 white or yellow onion, chopped
1 carrot, sliced
Kosher salt and freshly ground black pepper
4 cups low-sodium chicken broth
3 cups roughly chopped Swiss chard leaves
4 ounces small pasta shells (about 1 heaping cup)
4 ounces green beans, cut into 1-inch pieces (about 1 cup)
1 teaspoon dried oregano
One 16-ounce jar tomato and sausage pasta sauce
One 15-ounce can cannellini beans, rinsed and drained
1 yellow summer squash, sliced into half-moons
1 zucchini, sliced into half-moons
1/4 cup fresh basil leaves, torn
Freshly grated Parmesan, for serving

Steps:

  • Melt the butter in a Dutch oven set over medium-high heat. Add the garlic, onions and carrots and cook, stirring often, until the onion is translucent, about 5 minutes. Season lightly with salt and pepper.
  • Stir in the chicken broth, chard, pasta, green beans, oregano, pasta sauce, cannellini beans, squash, zucchini, 1 cup water, 2 teaspoons salt and several grinds of pepper. Bring to a simmer and cook until the pasta is cooked and the vegetables are tender, about 5 minutes.
  • Divide among 6 bowls and top with the torn basil and Parmesan.

Categories     World Cuisine Recipes     Latin American     Caribbean

Time 1h

Yield 4

Number Of Ingredients 17

4 cloves garlic, minced
¼ cup minced shallots
1 tablespoon minced fresh ginger root
3 tablespoons olive oil
1 green bell pepper, seeded and chopped
1 ½ cups tomato - peeled, seeded and chopped
2 teaspoons curry powder
½ teaspoon whole allspice berries
½ cup chicken stock
¼ cup brandy-based orange liqueur (such as Grand Marnier®)
2 tablespoons soy sauce
1 tablespoon brown sugar
2 teaspoons cornstarch
2 tablespoons chile paste
8 ounces rotini pasta
1 ½ pounds medium shrimp - peeled and deveined
½ cup fresh cilantro, chopped

Steps:

  • In a small bowl, combine garlic, shallots, ginger and oil. In another small bowl, combine green pepper, tomato, curry powder, allspice, chicken stock, Grand Marnier, soy sauce, brown sugar, cornstarch, and chile paste. Cover and refrigerate both until ready to use.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Heat a large saute pan over high. When hot, add garlic-oil mixture. Saute until garlic begins to sizzle but has not browned. Stir the tomato mixture, then pour into the saute pan. Bring to a rapid boil and cook until it begins to thicken, about 3 minutes.
  • Stir in the shrimp, and toss until they become pink, about 2 minutes. Immediately add the pasta. Stir and toss until well combined and pasta is heated through. Taste and adjust seasonings, especially salt.
  • Transfer to a heated platter and sprinkle on the cilantro. Serve at once.

ABRUZZI SHRIMP PASTA SAUCE

Abruzzi Shrimp Pasta Sauce image

From my mother who is from a little town in Italy near Rome. Must use fresh herbs! Do not saute garlic in oil- it will not taste the same. Garlic, parsley tomatoes oil need to cook slowly together! The idea of the whole cloves is that you don't have to eat them if you don't want to! I just leave them. And remember to cook this recipe SLowly. Lobster or crabs may be substituted for shrimp.

Time 50m

Yield 4-6 serving(s)

Number Of Ingredients 6

2 lbs medium shrimp
1 1/2 lbs pasta (linguine, or any thin spaghetti you may have on hand)
10 tablespoons olive oil
10 whole garlic cloves
2 (28 ounce) cans crushed tomatoes (enough to fill blender 2 times) or 2 (28 ounce) cans fresh plum tomatoes (enough to fill blender 2 times)
1 cup of chopped fresh flat-leaf Italian parsley (can also substitute with fresh basil if you like)

Steps:

  • If you plan on using fresh tomatoes, simply wash, take stem area off, and place in blender to puree.
  • Place tomatoes, olive oil, whole cloves of garlic, parsley in large pot and cook slowly for 30 minutes, stirring every 15 minutes.
  • If using fresh tomatoes, it will need extra cooking time of 15 minutes. Garlic cloves should be very soft and sauce should have nice consistency- not watery.
  • During last 15 minutes add the shrimp.
  • Season to taste with salt and some red pepper flakes if you like.
  • Place water to boil in another large pot.
  • when boiling add a tablespoon of oil(prevents pasta from sticking).
  • Place pasta in boiling water & stir, stir often.
  • Put timer on for exactly 11 minutes.
  • Drain pasta, place in large platter & mix together with sauce. Enjoy!

SHRIMP PASTA WITH LEMON-BUTTER SAUCE

Shrimp Pasta with Lemon-Butter Sauce image

If you're in rush to cook dinner plus want something so delicious and scrumptious, look no further. This shrimp pasta with lemon-butter sauce will definitely be a winner for dinner. This pasta is not meant to be saucy like Alfredo pasta. It will look a bit dry but it will definitely be full of lots of flavor.

Provided by Pamela Leyva

Categories     Pasta and Noodles     Pasta by Shape Recipes

Time 30m

Yield 4

Number Of Ingredients 9

½ (16 ounce) package angel hair pasta
1 ½ medium lemons
1 cup chicken stock, or more as needed
2 tablespoons salted butter, divided
1 pound uncooked shrimp, shelled and deveined
1 teaspoon dried parsley, or to taste
salt and ground black pepper to taste
2 medium tomatoes, cubed
1 cup shredded Parmesan cheese, or more to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook angel hair pasta in the boiling water, stirring occasionally, until tender yet firm to the bite, 4 to 5 minutes.
  • Slice the whole lemon into circles, then cut circles in half. Juice the remaining half lemon and set aside.
  • Preheat a skillet over medium-high heat. Add enough chicken stock to cover the bottom of the skillet. Add 1 tablespoon butter with shrimp and lemon slices. Add parsley, salt, and pepper; cook shrimp until they are bright pink on the outside and the meat is opaque, about 4 minutes. Turn heat off, add tomatoes, and cover with a lid until the heat softens the tomatoes.
  • Drain pasta and return to its pan. Add shrimp and tomato mixture and mix to combine. You may take out the lemon slices and squeeze the juice out of them or simply keep them mixed in.
  • Add more chicken stock to cover the bottom of the skillet. Add 1 tablespoon butter, more parsley, and the reserved lemon juice. Let the butter melt and simmer, then pour sauce into the pasta along with Parmesan cheese. Stir until fully combined.

SHRIMP PASTA IN A CREAMY TOMATO SAUCE (VIDEO)
This shrimp pasta recipe has been pinned and shared a crazy amount (thank you by the way!). It is easily one of the most popular recipes on my blog. The pasta is creamy but light (with just 1/2 cup of cream!) and it’s loaded with plump juicy shrimp. The sauce will win you over; it’s so easy to make and the flavor is nothing short of gourmet.
