This is the BEST and EASIEST recipe for hot cross buns. I make a few batches of them every Easter and they never last long.

1 egg, plus
1 egg yolk
3/4 cup milk
1/3 cup butter
6 tablespoons sugar
1 1/2 teaspoons lemon rind, grated
3/4 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
3/4 teaspoon salt
3 cups flour
1 tablespoon yeast
1/2 cup raisins or 1/2 cup candied fruit
1/2 cup icing sugar
1 tablespoon milk
1/2 teaspoon lemon juice

Steps:

  • Put all ingredients except fruit into bread machine.
  • Set for dough.
  • Add fruit at signal.
  • Lightly oil 9x13 pan.
  • When dough is ready, remove and punch down.
  • Cut into 18-24 pieces.
  • Roll each into a ball.
  • Place balls 1/2" apart in pan.
  • Cover and rise in warm place until doubled (about 1 hour).
  • Cut cross into top with sharp knife.
  • Bake 12-15 minutes @ 375.
  • Make glaze adding sugar or milk to make consistency to drizzle but not run.
  • Let rolls cool slightly and drizzle icing in cuts.

Making these sweet, currant-dotted buns is one of our favorite Easter traditions. Topped with a simple citrusy glaze, they're as pretty as they are delicious.

1/2 cup water
1/2 cup whole milk
1/2 cup sugar
4 1/2 teaspoons active dry yeast (2 (1/4 ounce) packages)
1/3 cup unsalted butter, melted, plus as needed
1 large egg yolk
1 1/2 teaspoons pure vanilla extract
3 cups all-purpose flour (13 ounces)
3/4 teaspoon fine salt
1/2 teaspoon grated nutmeg
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/2 cup currants, plumped in the microwave and cooled
1 egg beaten, for brushing
2 cups confectioners' sugar, sifted
2 tablespoons milk
1/4 teaspoon finely gated lemon zest
1 teaspoon pure vanilla extract

Steps:

  • Combine the water and milk in a medium saucepan and warm over low heat until about 100 degrees F (but no more than 110 degrees). Remove from heat and sprinkle the yeast and a pinch of sugar and flour over the surface of the liquid. Set aside without stirring, until foamy and rising up the sides of the pan, about 30 minutes.
  • Whisk the butter, egg yolk and vanilla into the yeast mixture.
  • Whisk the flour, the remaining sugar, salt, nutmeg, cinnamon and ginger in a large bowl. Make a well in the center of the flour and stir in the yeast mixture with a wooden spoon to make a thick, shaggy, and slightly sticky dough. Stir in currants. Turn the dough onto a lightly floured work surface and knead until soft and elastic, about 8 minutes. Shape into a ball.
  • Brush the inside of a large bowl with butter. Put dough in bowl, turning to coat lightly with butter. Cover with plastic wrap. Let rise at room temperature until doubled in size, about 1 hour 30 minutes. (If you have a marker, trace a circle the size of the dough on the plastic, and note the time to help you keep track.)
  • To form the rolls: Butter a 9 by 14-inch baking pan. Turn the dough out of the bowl and pat into a rectangle about 16 by 8 inches. Divide the dough into 12 equal portions, about 2 ounces each, with a pizza wheel or bench scraper. (If you don't have a scale, divide the dough in half lengthwise, then in half crosswise. Cut each of those four sections into 3 equal-sized rolls.)
  • Tuck the edges of the dough under to make round rolls and place them seam-side down in the prepared pan, leaving a little space in between each roll. Cover the pan with buttered plastic wrap and set aside in a warm place until the rolls rise almost to the rim of the pan and have more than doubled in size, about 45 minutes.
  • Meanwhile, position a rack in the center of the oven and preheat to 375 degrees F.
  • Remove the plastic wrap and brush the tops of the buns with beaten egg. Bake rolls until golden brown and puffy, and an instant read thermometer inserted into the center of the rolls registers 190 degrees F, about 25 minutes.
  • For the glaze: Stir together confectioners' sugar, milk, lemon zest and vanilla until smooth. Transfer icing to a zip bag or pastry bag, and make a small cut in the corner of the bag. Ice buns in a thick cross shape over the top of the warm buns.

2 packages yeast
1/2 cup water
1/2 cup warm milk
3/4 cup mashed potatoes
1/2 cup sugar
1 1/4 teaspoons salt
1/2 cup butter
2 eggs
2 teaspoons cinnamon
1 teaspoon nutmeg
1 teaspoon ground cloves
1 1/2 cups raisins (or 1 1/2 cup mixed raisins and citron)
4 1/2 cups flour
1 egg yolk
1 cup powdered sugar
1 tablespoon milk
1/2 teaspoon vanilla

Steps:

  • Combine yeast, water, and milk; stir well.
  • Mix with, potatoes, sugar, salt, butter, eggs, cinnamon, nutmeg, cloves, and raisins.
  • Beat in flour by cups.
  • Knead 5 minutes.
  • Let rise 1 1/2 hours.
  • Punch down and divide in half 5 times, for 32 pieces of dough.
  • Fold the corners in to make balls.
  • Snip a cross onto the top of each ball.
  • Let rise for 40 minutes.
  • Brush with egg yolk and water.
  • Bake 20 minutes at 375.
  • While the buns are baking, combine milk, sugar, and vanilla to make icing.
  • When buns are cool, drizzle icing over cross.

2 cups whole milk
1/2 cup canola oil
3/4 cup granulated sugar
1 package (2 1/4 teaspoons) active dry yeast
4 1/2 cups all-purpose flour, plus more for flouring
1/2 teaspoon (heaping) baking powder
1/2 teaspoon (scant) baking soda
2 teaspoons salt
1 teaspoon cinnamon
Additional spices, such as cardamom, nutmeg or allspice, optional
1/2 cup raisins
1 egg white
Splash of milk
1 egg white
Powdered sugar, as needed
Milk, as needed

Steps:

  • For the buns: Combine the milk, canola oil and 1/2 cup of the granulated sugar in a saucepan. Stir and heat until very warm but not boiling. Turn off the heat and allow to cool until the mixture is still warm but not hot, about 30 minutes.
  • Sprinkle the yeast over the mixture. Add 4 cups of the flour and stir to combine; the mixture will be very sticky. Cover with a towel and set aside for 1 hour.
  • Add the baking powder, baking soda, salt and remaining 1/2 cup flour to the dough. Stir until combined.
  • Combine the remaining 1/4 cup granulated sugar in a small bowl with the cinnamon and whatever other spices you want to use.
  • Lightly flour a work surface and turn out the dough onto it. Press to slightly flatten the dough. Sprinkle a third of the sugar/cinnamon mixture over it. Sprinkle on about a third of the raisins. Then fold the dough over on itself and flatten again so the dough is "plain" again. Repeat the sugar/raisin process, then fold the dough again. Repeat a third time.
  • Line a baking sheet with a silicone liner or parchment paper. Pinch off Ping-Pong- or golf ball-size bunches of dough. With floured hands, quickly roll them into balls, then turn the edges under themselves slightly. Place on the prepared baking sheet. Cover and allow to rise in a warm place for at least 30 minutes....an hour plus is better.
  • Preheat the oven to 400 degrees F.
  • For the glaze: Mix the egg white with a splash of milk. Brush onto the balls of dough.
  • Bake until the tops of the buns have turned nice and golden brown, 20 minutes give or take. Allow to cool on a cooling rack.
  • For the icing: Mix the egg white with enough powdered sugar for the icing to be very thick. Splash in the milk as needed for consistency.
  • When the buns are completely cool, add the icing to a small ziptop bag and snip the corner. Make icing crosses on each bun.
  • Happy Easter!

This recipe saved me when my stand mixer died on me and I wanted fresh buns for breakfast. I was worried these wouldn't rise, especially with only 1/2 tsp yeast, but they turned out very well. The original recipe come from http://swallowtail.org/dairyfree/ but I added a bit more spice. So little work for such great results! Make sure you start these the night before you want to bake them. Prep time does not include rise times.

540 g flour
1/2 cup white sugar
1/2 cup brown sugar
1 teaspoon salt
1/2 teaspoon yeast
2 teaspoons cinnamon
1/2 teaspoon allspice

1 orange, zest of
1 lemon, zest of
370 ml water, warmed to not quite ouch on the finger
2 tablespoons vegetable oil
1 egg, beaten

Steps:

  • Put the flour, both sugars, the salt, yeast, and spices into a large bowl and mix them all together very thoroughly.
  • Stir in the raisins and zest.
  • Add the water and the oil and mix a little. This cools the mixture a fraction.
  • Add the egg and mix it all together very thoroughly using one hand. You should end up with a very sticky dough that is soft but not sloppy.
  • Cover the bowl tightly with cling wrap and leave it at room temperature to rise overnight (at least 5 hours).
  • When it is ready (and when you it suits you), add some extra flour so the dough is not quite so sticky. Gently break into 10-12 pieces, forming each into a ball and place in a greased 9x13 inch pan. Leave them for about an hour, or until the buns have doubled in size.
  • Preheat oven to 400°F.
  • Mix a bit of flour, water and sugar together to form a paste (proportions are not really important here). Use this paste to pipe crosses on the tops of the risen buns.
  • Bake the buns for about 25 minutes. To check whether they are cooked, take one out and tap it on the bottom with a knuckle. It should sound hollow. If it doesn't, it needs to go back into the oven for a couple more minutes.

I made these using 3 different recipes (more spice, more fruit, good method). Aussies-I uses Woolworths Select mixed dried fruit but picked out the glace cherries! Prep time doesn't include all the rising and so on. They took 2 hours to make start to finish, but I Face Booked and got dinner ready while they were rising!

4 1/2 teaspoons instant yeast
1/4 cup caster sugar
1 1/2 cups warm milk, body temp
4 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon allspice
60 g butter, at room temperature
1 egg, lightly beaten
375 g mixed fruit, dried sultanas, raisins currants
6 tablespoons all-purpose flour
1 tablespoon caster sugar
4 tablespoons hot water
2 tablespoons caster sugar
2 tablespoons boiling water

Steps:

  • Combine the yeast, sugar and tepid milk in a bowl, cover with cling wrap.
  • Stand in a warm place (approx 10 mins) until mixture foams and froths.
  • Sift flour and spices into a large bowl.
  • Rub in butter using a broad bladed knife then finish with fingertips.
  • Toss the fruit through the flour, to coat the fruit.
  • Stir in yeast/sugar/milk micture, the lightly beaten egg and mix to a sticky dough.
  • Cover with cling wrap and stand in a warm place for 45-60 minutes until dough has doubled in size.
  • Grease a square, deep sided cake pan (20-25cm)
  • Knock down the dough and gently knead on a lightly floured surface for approximately 5 minutes until dough is smooth and silky.
  • 1Cut dough in half, knead lightly, cut each half in half again and continue until you have 16 balls of dough.
  • 1Place balls into greased cooking pan, cover with cling wrap and stand in a warm place for 10-15 minutes until the dough has risen to the top. 4 x 4 balls in each row
  • To make the flour paste, combine the flour sugar and water to form a thick paste. Cover with cling wrap, or place into piping bag with medium sized round nozzle attached. I used a zip lock bag with a corner cut out.
  • Either pipe or drizzle flour paste into 'cross' shape on top of each bun - keep piping fluid by doing four at a time, first in one direction then rotate the pan and complete the cross.
  • Preheat oven to 200DegC
  • When buns have risen bake for 20-25 minutes.
  • Turn out onto tea towel then place wire rack on top, invert and cool (top side up).
  • Mix caster sugar with boiling water and brush generously over each bun while still warm.

EASY HOT CROSS BUNS

500g strong white bread flour
½ tsp salt
2 heaped tsp mixed spice
50g caster sugar
50g butter , chopped into cubes
200g mixed dried fruit
7g sachet easy-blend dried yeast
200ml milk
2 eggs
3 tbsp plain flour
honey or golden syrup, for brushing

Steps:

  • Tip the flour into a bowl and stir in the salt, mixed spice and sugar.
  • Rub in the butter with your fingertips. Stir in the dried fruit, then sprinkle over the yeast and stir in. Gently warm the milk so it is hot, but still cool enough to put your finger in for a couple of seconds. Beat with the eggs, then pour into the dried ingredients.
  • Using a blunt knife, mix the ingredients to a moist dough, then leave to soak for 5 mins. Take out of the bowl and cut the dough into 8 equal pieces.
  • Shape the dough into buns on a floured surface. Space apart on a baking sheet, cover loosely with cling film, then leave in a warm place until half again in size. This will take 45 mins-1 hr 15 mins, depending on how warm the room is.
  • When the buns are risen, heat oven to 220C/fan 200C/gas 7. Mix the flour with 2 tbsp water to make a paste. Pour into a plastic food bag and make a nick in one of the corners. Pipe crosses on top of each bun.
  • Bake for 12-15 mins until risen and golden. Trim the excess cross mixture from the buns , then brush all over with honey or golden syrup. The buns will keep fresh for a day. After that they are best toasted and served with butter.
