My BF LOVES this stuff!! I make it all the time for him to take in his lunch. I swear, he never gets sick of it! This is sooo much better than the prepared "ham salad" you find in the store. It is so simple to make, but you have to have a meat grinder (only catch). A bowl of soup, a salad, and one of these sandwiches, and you got a good, quick meal. It's also a nice appetizer to serve with crackers.

1 lb chunk bologna (from deli)
3/4 cup Miracle Whip (salad dressing)
3 -4 tablespoons sweet pickle relish
1/8 teaspoon garlic powder
1/8 teaspoon black pepper
1 dash salt

Steps:

  • Grind bologna in meat grinder.
  • Add all other ingredients and mix well.
  • Great served on fresh white bread or toast, with a slice of cheese, or served as a spread for crackers.

CLASSIC POTATO SALAD

Number Of Ingredients 10

3 large Yukon gold potatoes (about 1 1/4 pounds), peeled and cut into 1-inch cubes
3 large eggs
1/2 cup diced onion
1/2 cup diced celery
2 tablespoons sweet relish
1 tablespoon Worcestershire sauce
1 teaspoon hot sauce
Kosher salt and freshly ground pepper
1 cup mayonnaise
2 scallions, thinly sliced

Steps:

  • Bring a large pot of water to a boil. Add the potatoes and cook until tender, about 15 minutes. Drain the potatoes and spread out on a sheet pan to cool. Meanwhile, bring a separate pot of water to a boil. Carefully add the eggs; cook for 12 minutes, then remove to a bowl of ice water to cool completely. Peel the eggs under cold running water, then roughly chop.
  • In a large bowl, combine the onion, celery, relish, Worcestershire sauce, hot sauce, 1 1/2 teaspoons salt, 1 teaspoon pepper and the mayonnaise. Fold in the potatoes, eggs and scallions. Adjust the seasoning to taste.

1/2 cup mayonnaise, plus more if needed
2 tablespoons whole-grain mustard
1 pound leftover baked ham, cut into 1-inch chunks
1 1/4 cups drained bread-and-butter pickle chips and 1 tablespoon pickle juice, plus more if needed
2 inner ribs celery, finely chopped, plus 2 tablespoons coarsely chopped leaves from the inner ribs
1/2 small red onion, finely chopped

Steps:

  • Whisk the mayonnaise and mustard together in a large bowl. Pulse the ham and pickles in a food processor until finely chopped but not pureed. Add the ham mixture, pickle juice, celery, onions and celery leaves to the mayonnaise mixture, and stir. Taste; if the salad seems dry (it should be spreadable), add more mayonnaise and/or pickling liquid. Serve as is or on sandwiches.

2 tablespoons maple syrup
2 tablespoons brown sugar
2 tablespoons apple cider
1 pound ham steak, fully cooked, large dice
1/2 pound bow tie pasta, cooked
3 tablespoons minced sweet gherkins
Bibb lettuce
1/2 cup sliced red onion
1 cup small diced Gouda
Marinated Green Beans, recipe follows
3 tablespoons chopped fresh parsley leaves
Vinaigrette, recipe follows
1 pound green beans, trimmed, cut in thirds
1 teaspoon minced garlic
1 teaspoon red pepper flakes
2 teaspoons extra-virgin olive oil
1 teaspoon white wine vinegar
Pinch salt
Pinch cracked black pepper
2 tablespoons Dijon mustard
1 tablespoon sherry vinegar
1/4 cup olive oil
1 shallot, small dice
1 tablespoon chopped fresh thyme leaves
Pinch salt
Pinch cracked black pepper

Steps:

  • Preheat the oven to 350 degrees F. Spray a sheet tray with nonstick spray.
  • In a medium-sized bowl, whisk together the maple syrup, brown sugar, and apple cider. Add the ham and mix well. Put the ham mixture on a sheet tray and bake until warmed through and the ham develops color, about 20 to 25 minutes. Remove from the oven and set aside.
  • Add the pasta, gherkins and parsley to the bowl with the vinaigrette and stir to coat. Line a large serving bowl with Bibb lettuce and add the pasta. Arrange the red onions, Gouda, marinated green beans, and cooked ham in rows on top of the pasta. Serve.
  • Bring a large stockpot of salted water to a boil over medium heat. Add the green beans and cook until bright green and tender, about 2 to 3 minutes. Drain the green beans and shock them in an ice bath.
  • In a medium-sized bowl, mix together the garlic, red pepper flakes, oil, vinegar, salt, and pepper. Drain the green beans from the ice water and toss them in the marinade until well coated. Set aside.
  • In a large bowl, mix together mustard, vinegar, olive oil, shallot, thyme, salt, and pepper.

One of the tea sandwiches was filled with this delicious ham salad. I tried to recreate this ham salad many times and finally got this right. Hope you like it as much as I do--

I have been making this salad for years and recently traveled from NJ to Oklahoma to make a batch for one of my friends. I have also Overnighted this salad to a friend in Dallas who simply loves it. Of course, I pack it in dry ice. It's fast, simple and great for a cocktail party on party rye, on toast or a bagel for breakfast, on rye with lettuce, thinly sliced onions and dill (or sweet)pickles and mayo for lunch or with pea soup and sandwich for dinner. It's down right Yummy!!! And make no changes to the ingredients because the salad will not taste the same.

1 ½ pounds cooked ham, chopped
¾ cup mayonnaise, or as needed
⅓ cup dried minced onion
⅓ cup dill pickle relish
¼ cup brown mustard

Steps:

  • Process the ham in a food processor until finely chopped but not pasty, about 6 or 7 pulses. You may need to do this in batches. Place the finely chopped ham in a large bowl and continue processing the remaining ham.
  • Add the mayonnaise, onions, relish, and mustard to the processed ham. Mix well and, if the mixture is too dry, add more mayonnaise. Refrigerate until serving. The dried onions absorb some of the moisture from the mayonnaise and relish so you may need to add more mayonnaise before serving.
