10 garlic cloves
1-1/2 teaspoons salt
1/2 teaspoon pepper
2 tablespoons olive oil
1 tablespoon lemon juice
2 teaspoons Worcestershire sauce
4 boneless beef strip steaks or ribeye steaks (1 inch thick and 8 ounces each)

Steps:

  • With a mortar and pestle, crush garlic cloves with salt and pepper. Stir in oil, lemon juice and Worcestershire sauce., Grill steaks, covered, over medium heat 5-7 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Brush generously with garlic mixture during the last 4 minutes of cooking.

2 tablespoons butter, softened, divided
1 teaspoon minced fresh parsley
1/2 teaspoon minced garlic
1/4 teaspoon reduced-sodium soy sauce
1 beef flat iron steak or boneless top sirloin steak (3/4 pound)
1/8 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Mix 1 tablespoon butter with parsley, garlic and soy sauce., Sprinkle steak with salt and pepper. In a large skillet, heat remaining butter over medium heat. Add steak; cook until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), 4-7 minutes per side. Serve with garlic butter.

2 tablespoons vegetable oil
1 teaspoon cracked black pepper
2 garlic cloves, minced

Steps:

  • Combine steak sauce, oil, pepper, and garlic. Place steak in plastic bag; add marinade, turning to coat. Close bag securely and marinate in refrigerator for at least 1 hour, turning once. Remove steak from marinade; place on rack in broiler pan so surface of meat is 3-4 inches from heat source. Broil 15-18 minutes to desired doneness (rare to medium-rate), turning once.

Skirt steak marinated for 24 hours in A1 with lemon, rosemary and garlic; grilled to perfection. The steak is thinly sliced and tossed with bow tie pasta and fresh spinach and finished with a savory A1- Porcini mushroom sauce and dollops of creamy goat cheese.

1/2 lb cooked bow tie pasta
1/4 cup A.1. Original Sauce, divided plus
1/2 teaspoon A.1. Original Sauce, for drizzling
2 tablespoons fresh lemon juice, divided
1 teaspoon freshly grated garlic
1/4 cup olive oil, divided
1 sprig fresh rosemary
3/4 lb skirt steak
1 tablespoon spiced sea salt (suggest Mediterranean spice blend, available in your spice aisle)
1/2 ounce dried porcini mushrooms
1/4 cup chicken stock
1 1/2 tablespoons chopped shallots
1/2 tablespoon unsalted butter
8 ounces prewashed fresh spinach
1/4 teaspoon ground nutmeg
2 ounces goat cheese, log
1/2 teaspoon chopped fresh parsley, garnish (optional)

Steps:

  • Combine one tablespoon of the A1 with one tablespoon of the lemon juice and the grated garlic and half of the olive oil. Whisk to combine.
  • Place rosemary sprig in the bottom of a marinating container an top with steak.
  • Pour the marinade over the steak. Cover and refrigerate for 24 hours. Remove from refrigerator about 30 minutes before grilling.
  • Cook pasta per package directions. Once drained, mix with one tablespoon of the remaining olive oil.
  • Preheat grill pan to smoking hot.
  • Season the steak with the spiced sea salt.
  • Grill skirt steak on both sides for about two minutes each side. Remove from heat and let steak rest.
  • Add porcini to a microwave safe bowl with the chicken stock. Microwave for 30 seconds on high.
  • Add one half of the rest of the olive oil, the shallot and the butter to a sauté pan. Cook until shallots just begin to brown.
  • Add in the remaining A1 from the 1/4 cup along with the porcini and hot stock. Stir an set aside.
  • Add remaining olive oil to large skillet. Add 1/2 of the spinach and the nutmeg.
  • Once the spinach is wilted, add the cooked pasta, the rest of the spinach, and the sauce mixture. Stir to combine.
  • Slice steak against the grain into bite sized pieces.
  • Pour into pasta bowl. Top with steak.
  • Pour any remaining steak juices into plating bowl and combine.
  • Add goat cheese right before serving.
  • Top with fresh parsley.
  • Drizzle with the extra A1 before serving.

1/4 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1/8 teaspoon vegetable oil
1/3 cup A.1. Original Sauce
1 chipotle chile in adobo, finely minced (seeds included, Basting Sauce Ingredient)
1/8 teaspoon dried chipotle powder (Basting Sauce Ingredient)
1/8 teaspoon garlic powder (Basting Sauce Ingredient)
1/4 teaspoon ground cumin (Basting Sauce Ingredient)
8 soft corn tortillas (Basting Sauce Ingredient)
1 cup queso fresco, crumbled (Basting Sauce Ingredient)
1/3 cup sour cream (Basting Sauce Ingredient)
1 medium green tomato (Salsa Ingredient)
1 medium avocado, ripe and cut into small chunks (Salsa Ingredient)
1 ear of corn, charred in places and kernels removed from the cob (Salsa Ingredient)

Steps:

  • Bring Skirt Steak out 30 minutes prior to going on the grill.
  • Sprinkle Salt and Pepper on both sides.
  • In a small bowl combine: A-1 Steak sauce, Chipotle Pepper, Chipotle Chili Powder, Garlic Powder, and Cumin. Set aside.
  • Preheat gas grill to high heat. While Preheating make Salsa by combining all salsa ingredients. Place salsa to side, leaving at room temperature.
  • Brush vegetable oil on each side of steak. Place steak down and cook for three minutes.
  • Turn steak over and brush with sauce. Cook five additional minutes (less or more depending on desired doneness of steak).
  • Baste the other side with sauce.
  • Remove steak from grill, place on plate and cover with aluminum foil. Let rest for 5 minutes.
  • While steak is resting, heat a griddle on high and warm corn tortillas on both sides.
  • While tortillas are warming up, mix remaining basting sauce with sour cream and stir.
  • Cut steak into small cubes. Separate meat into the eight tortillas, evenly distribute the crumbled Queso Fresco, place salsa on tacos and a drizzle with sauce/sour cream mixture.
  • Serve immediately.

You may think you don't have the time to marinate meat before grilling it, but it's time-consuming only if you think a marinade has to tenderize. As far as I'm concerned, there are only two goals in marinating: to add flavor and to promote browning and crispness. Neither of these requires long soaking, although dunking the meat while the grill heats contributes to a slightly greater penetration of flavor. This marinade of soy sauce, ginger, garlic, honey and lime is ideal for steak, but it works beautifully with any tender meats like burgers, boneless chicken, tuna and swordfish, all of which can be turned in the sauce before putting them on the grill. Longer-cooking meats, like bone-in chicken, should be cooked within 10 minutes of doneness before basting with the sauce.

  • Start a charcoal or wood fire or heat a gas grill; the fire should be hot and the rack no more than 4 inches from the heat source. Mix together the first 6 ingredients; taste and add more of anything you like. Turn the steak in the sauce once or twice, then let sit in the sauce until the grill is hot.
  • Turn the steak one more time, then place on the grill; spoon any remaining sauce over it. For rare meat, grill about 3 minutes a side for steaks less than an inch thick. For larger or more done steak, increase the time slightly.
