A Taste of Summer Chicken Sandwich image

This prize-winning grilled chicken sandwich will have your taste buds singing. The tangy Asian-style marinade, with its hints of orange and ginger, make for a flavourful, smoky chicken breast in this light alternative to a burger. Tina was the Grand-prize winner of our 2005 Canada Day Chicken Challenge contest.

Provided by Recipe by Tina Lissemore, Port William, N.S.

Number Of Ingredients 13

4 boneless, skinless chicken breasts
¼ cup orange juice
1 clove garlic, finely-chopped
3 green onions, finely-chopped
1 tsp soy sauce
1 tsp orange zest, grated
¼ tsp salt
roasted red pepper, thinly-sliced, for garnish
red onion, thinly-sliced, for garnish
mayonnaise, for garnish
Romaine lettuce, for garnish
4 whole wheat Kaiser rolls
1 tsp ginger, freshly-grated

Steps:

  • In a bowl, whisk together orange zest and juice, green onions, garlic, ginger, soy sauce and salt.
  • Add chicken breasts; turn to coat.
  • Let stand for 10 minutes or cover and refrigerate for up to 8 hours.
  • Grill on medium heat for approximately 15-20 minutes until a thermometer inserted into the chicken reads 165°F (74°C).
  • Serve on whole wheat Kaiser buns.
  • Garnish with roasted red peppers, red onions, lettuce & mayonnaise.

Number Of Ingredients 6

2 (12 1/2 ounce) cans chicken breasts
3/4 cup light mayonnaise
2 cups pre-shredded mozzarella cheese
2 medium carrots
1 cup golden raisin
16 slices whole wheat bread

Steps:

  • In a large bowl, mix chicken, mayonnaise, cheese, finely shredded carrots and raisins until well combined.
  • Spread the mixture in 8 slices of bread.
  • Top the sandwiches with the 8 remaining slices of bread.
  • Wrap each sandwich in aluminum foil and keep them refrigerated for up to one week.

4 whole wheat hamburger buns
3 tablespoons light mayonnaise
4 small romaine lettuce leaves
1 roasted red pepper, cut into strips
4 slices red onions (thin slices)
1 green onion, sliced
1 tablespoon grate orange rind
1/4 cup orange juice
3 green onions, finely chopped
1 garlic clove, minced
1 teaspoon ground ginger
1 teaspoon soy sauce
1/4 teaspoon salt

Steps:

  • Orange Ginger Marinade: In bowl, whisk together orange rind and juice, green onions, garlic, ginger, soy sauce and salt. Add chicken breasts; turn to coat. Let stand for 10 minutes or cover and refrigerate for up to 8 hours.
  • Place chicken on greased grill over medium heat; spoon any remaining marinade over chicken. Close lid and grill, turning once, until no longer pink inside, about 10 minutes.
  • Cut buns in half; spread cut sides with mayonnaise. Sandwich lettuce, chicken, sweet pepper, red onion and green onion in buns.

6 boneless skinless chicken breast halves (4 ounces each)
1 cup buttermilk
1/2 cup biscuits or 1/2 cup baking mix
1/2 cup cornmeal
1 1/2 teaspoons paprika
3/4 teaspoon salt
3/4 teaspoon poultry seasoning
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
6 onions or 6 kaiser rolls, split
6 lettuce leaves
12 slices tomatoes

Steps:

  • Pound chicken to 1/2 -in. thickness. Pour buttermilk into a large resealable plastic bag; add chicken. seal bag and turn to coat; refrigerate for 8 hours or overnight.
  • In a shall bowl, combine the biscuit mix, cornmeal, paprika,salt,poultry seasoning, garlic powder,pepper and cayenne. Remove chicken one piece at a time,allowing excess buttermilk to drain off. Discard buttermilk. Coat chicken with cornmeal mixture; place in a 13-in. x 9-in. x 2-in. baking dish coated with cooking spray.
  • Bake,uncovered. at 400F for 12 minutes. Turn chicken. Bake 8-12 minutes longer or until juices run clear and coasting is lightly browned. Serve on rolls with lettuce and tomato.
