This is the best pork chop marinade I've ever tasted. I starting throwing things together in a bowl and I'm so glad I wrote it down...try this! Flavor is best when pork is grilled.

2 large pork chops
¼ cup extra-virgin olive oil
3 tablespoons dark brown sugar
2 tablespoons lemon juice
2 tablespoons spicy brown mustard
4 cloves garlic, chopped
2 teaspoons dried thyme
1 teaspoon onion powder
1 teaspoon Worcestershire sauce
1 teaspoon white wine vinegar
1 teaspoon mesquite-flavored seasoning
½ teaspoon dried parsley flakes
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper

Steps:

  • Cut each pork chop from one side through the middle horizontally to within 1/2 inch of the other side. Open the two sides and spread them out like an open book.
  • Whisk olive oil, brown sugar, lemon juice, mustard, garlic, thyme, onion powder, Worcestershire sauce, vinegar, mesquite seasoning, parsley, salt, and pepper together in a bowl and pour into a large resealable plastic bag. Add pork chops, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator, 6 to 8 hours.

4 (10 to 12-ounce) bone-in pork chops, cut 1-inch thick
1/4 cup olive oil
2 to 3 tablespoons Dijon mustard
Salt
Freshly ground black pepper
Leaves from a few sprigs fresh thyme
3 tablespoons vegetable oil
2 medium red onions, thinly sliced
1 tablespoon honey
1 tablespoon balsamic vinegar
Kosher salt
Freshly ground black pepper

Steps:

  • Chops: Toss the chops with remaining ingredients and let marinate 1 hour or up to overnight covered in the refrigerated. Bring to room temperature before cooking.
  • Onions: Heat a large 2 burner griddle pan over medium heat for 5 minutes until smoking hot. Cook pork until nicely browned on both sides, about 5 to 6 minutes on each side. While the chops are finishing, heat the vegetable oil over medium-high heat in a large, skillet. Add onions and cook for about 4 minutes. Then drizzle onions with honey and balsamic and cook until softened and lightly caramelized, about 15 minutes. Season with salt and pepper.
  • Serve chops with little heap of onions.

1 1/4 cups hoisin sauce
3/4 cup oyster sauce
1 cup black bean garlic sauce
3 garlic cloves, chopped
1 tablespoon fresh ginger, peeled and chopped
1/2-1 teaspoon black peppercorns, crushed
6 pork chops, thick cut

Steps:

  • Mix the ingredients in a bowl. Combine the pork chops in a large zip lock bag and add the sauce. Marinate 3 - 5 days. (The longer the marinade the more tender the chops become).
  • Preheat the broiler. Broil until chops are cook through (145 F), about 9 minutes per side. (or grill until the chops are cooked).
  • Option:
  • Garlic chili paste could be added to "kick it up" also
  • Note: I had changed the recipe around, but if you like a particular sauce, add more of it and less of the others. The marinating time is what makes these so juicy.

1/2 cup packed brown sugar
1/2 cup soy sauce
2 garlic cloves, minced
1/4 teaspoon pepper
4 bone-in pork loin chops (1 inch thick and 8 ounces each)

Steps:

  • In a bowl or shallow dish, combine the brown sugar, soy sauce, garlic and pepper. Add pork chops and turn to coat. Cover and refrigerate for 8 hours or overnight., Drain pork chops, discarding marinade. Grill chops on greased grill rack, covered, over medium heat or broil 4-5 in. from the heat for 4-5 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 145°; medium, 160°). ¾ cup vegetable oil
⅓ cup reduced sodium soy sauce
¼ cup apple cider vinegar
2 Tablespoons Worcestershire sauce
1 Tablespoon lemon juice
1 Tablespoon Dijon Mustard
salt and pepper, to taste
1 teaspoon dried parsley
1 teaspoon minced garlic
6 pork chops ((about ¾" thick))

Steps:

  • In a gallon-sized resealable bag, combine oil, soy sauce, vinegar, Worcestershire sauce, lemon juice, Dijon, salt, pepper, parsley and garlic.
  • Add pork to bag and let pork marinate for at least 6 hours (or overnight - the longer it marinates, the more tender and flavorful your pork chops will be).
  • Remove pork from bag and discard marinade.
  • Preheat grill to medium heat (or grill pan on a stove top) and grill pork chops for 5-7 minutes on each side or until internal temperature reaches 165 degrees F.
