RIDICULOUSLY EASY ONE-BOWL BROWNIES
This easy brownie recipe is everything a brownie should be - chewy, dense, melt-in-your mouth chocolatey. One bowl, one sheet of foil, one pan, done.

Steps:
- Preheat oven to 350 degrees.
- Line a 13x9 pan with piece of foil long enough to extend over the ends of the pan, and grease the foil and the rest of the pan.
- In a large microwaveable bowl, add the butter and the chocolate (break the chocolate into pieces).
- Microwave for about a minute, removing and stirring to judge how much the chocolate has melted, then nuke in 15 second increments after that. It usually takes me about a minute and a half to completely melt the chocolate.
- Stir in the sugar, eggs, and vanilla.
- Stir in the flour, and if using, the pecans. Mix well.
- Spread the batter into the pan.
- Bake for 30 - 35 minutes, until a toothpick inserted in the center comes out crumby.
- Let cool, then remove the brownies from the pan with the foil "handles."
- Cut into squares, and enjoy!
- Store in an air-tight container at room temp.
ONE BOWL BROWNIES

Steps:
- Preheat oven to 350 degrees F (180 degrees C). Grease a 13x9-inch pan.
- Microwave chocolate and butter in large bowl at HIGH for 2 minutes or until butter is melted. Alternately, melt butter and chocolate in a double boiler over simmering water.
- Remove bowl from microwave and stir until chocolate is melted. Stir in sugar. Mix in eggs and vanilla. Stir in flour and nuts.
- Spread batter into prepared pan. Bake for 35 minutes (do not overbake).

- Preheat the oven to 350˚F (180˚C).
- Add the butter and 1 cup (175 g) of chocolate chips to a large microwave-safe bowl. Microwave for 1½ minutes, then let sit for 3 minutes before whisking together.
- Add the granulated and brown sugars, vanilla, and salt. Whisk to combine.
- Whisk in the eggs until fully combined.
- Sift the flour and cocoa powder into the bowl and fold in with a spatula. Add the remaining chocolate chips and fold to incorporate.
- Line a 9-inch (23-cm) square baking pan with parchment paper and grease with nonstick spray. Spread the batter evenly in the pan.
- Bake for 35-40 minutes, until a toothpick inserted in the center comes out with a few moist crumbs attached.
- Let cool completely before cutting.

"ONE POT" BROWNIES
This recipe was submitted by Mrs. Stuart Padnos for a cookbook fund raiser put out by members of the Junior Welfare League, Holland, Michigan about 30 or so years ago. My mom brought the cookbook back to me as a souvenir of their trip. I've made these brownies all these years and have great luck with them every time. I like to top them with an easy cooked chocolate fudge icing that I got from a bowling partner several years ago. These brownies are like a chocolate cake-not gooey like some recipes and I do personally like them plain without nuts or raisins.

Steps:
- Melt chocolate and butter in heavy pot.
- (I like to use a cast iron skillet) Let cool slightly, then add sugar and mix well.
- Add eggs, mix well, then beat in flour.
- Add vanilla.
- Add nuts or raisins, if desired.
- Stir well.
- Bake in 9 1/2 x 13 inch greased pan for 20-25 minutes at 375 degrees.
- Do Not Overbake.

A BIG PAN OF ONE-POT BROWNIES
Steps:
- HEAT the oven to 350°F. Grease a 9 x 13-inch baking pan.
- MELT the butter in a medium saucepan over low heat. Add the chocolate, stirring until melted.
- REMOVE the pan from the heat and stir in the sugar, flour, eggs, vanilla, and bottled smoke, if using.
- POUR the batter into the pan. Sprinkle the top with the nuts.
- BAKE for 25 to 28 minutes, until the sides just begin to pull away from the pan. The center will seem set, but soft. Let the brownies cool in the pan on a rack for about 1 hour. Cut into bars.
FUDGY ONE-POT BROWNIES

- Preheat the oven to 350 degrees F. Generously butter a 13-by-9-inch baking pan or spray it with nonstick cooking spray.
- Place the butter and chocolate in a medium-size saucepan over low heat and let melt together, stirring until smooth. Remove the saucepan from the heat and stir in the cocoa powder, sugar, and salt, then blend in the vanilla. Beat in the eggs one at a time, stirring to mix quickly so they don't have a chance to cook at all before they are blended in. Blend in the flour.
- Scrape the thick batter into the prepared baking pan and smooth the top with a spatula. Bake until the edges just begin to pull away from the sides of the pan and a wooden skewer or toothpick inserted into the middle comes out clean, 25 to 30 minutes.
- Let the brownies cool in the pan on a wire rack. When completely cool, cut them into 12 or 24 squares.
ONE BOWL BROWNIES
This is the only "regular brownie" recipe I use anymore. It is from the Baker's chocolate box. My favorite is to frost these with almond-flavored buttercream icing tinted pale pink! Yum! Chocolate and cherries!
