Steps:
- Completely dissolve gelatin in boiling water, stirring about 3 minutes.
- Add ice cubes and stir constantly until gelatin is thickened, about 2-3 minutes. Remove any unmelted ice.
- Using wire whip, blend in whipped topping; then whip until smooth.
- Fold in fruit if using.
- Chill if necessary, until mixture will mound.
- Spoon into pie crust.
- Chill 2 hours.

- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, mix together cherries, cherry pie filling, currants, cranberries, gooseberries, apples, sugar, cinnamon, and almond extract. Allow to set 15 minutes.
- Spoon equal amounts of fruit mixture into 3 pastry-lined 9 inch pie pans. Dot each pie with 1 tablespoon butter. Cover each pie with top pastry. Seal edges and cut steam vents in tops.
- Bake in preheated oven for 45 to 50 minutes, until golden brown.

This is very versatile. You can put it in glasses or small cups and it is great for the coming summer. This could even be put into a long cake pan with a graham cracker crust on bottom. After refrigeration it could be cut into squares. You get more servings that way.

- Boil 2/3 Cup of water mix with Jell-O till Jell-O is dissolved well, Now use a 2 Cup measure put in ½ Cup water & add ice cubes till it comes up to the 1 Cup mark mix well take out any excess cubes that has not melted now add cold water then add cool whip fold in until it's mixed very well (with out fruit) pour into pie shell & refrigerate for about 6 Hrs or overnight is best.
- If adding fruit:.
- Frozen or can drain VERY WELL! Fresh fruit cut into bite size pieces, now add this right after you mix the cool whip in & pour into shell.

- Preheat the oven to 300 degrees F (150 degrees C). Line two loaf pans with parchment paper.
- Coat cherries, raisins, almonds, and pineapple with 1 cup flour.
- Beat sugar, butter, and eggs together until creamy. Sift remaining flour with baking powder and salt. Add to butter mixture; stir in vanilla and almond extracts. Fold in the fruit and almond mixture. Spoon batter into the prepared pans and spread evenly.

PASSION FRUIT PIE
Chef Nicholas Hudson of the Cage Aux Folles Restaurant in Barbados got this from someone in St Thomas, according to the February 1987 edition of Bon Appetit. I'm a huge fan of anything passion fruit. Enjoy this easy pie. Cooking and prep times do not include 4 hours freezing time or 30 minute thawing before serving.

Steps:
- For crust: Preheat oven to 350ºF. Combine crumbs, butter and sugar in medium bowl. Press mixture into bottom and up sides of 9 inch pie pan. Bake until set, about 8 minutes. Cool.
- Filling: If using fresh passion fruit, cut in half and scoop out pulp. Blend gently in food processor until seeds separate from pulp but do not crush seeds. Strain puree.
- Put 3/4 cup puree in heavy medium saucepan. Mix in yolks, 1/2 cup sugar, gelatin and salt. Stir constantly over low heat until sugar and gelatin are dissolved and it has thickened so your finger drawn across the back of the spoon leaves a trail, about 3-4 minutes. Do not boil.
- Strain puree/egg mixture into a medium bowl and cool stirring occasionally.
- Using electric mixer, beat egg whites and cream of tartar into soft peaks. Add remaining 1/2 cup sugar slowly and continue beating until stiff but not dry.
- Fold whites into fruit puree.
- Whip cream in another bowl and fold into fruit mixture. Fold in citron is using.
- Spoon filling into crust, cover with plastic and freeze at least 4 hours. (Can be prepared up to three days ahead).
- Let pie stand at room temperature 30 minutes before serving.
- Garnish with candied violets or shaved chocolate, if desired.
