This is a Greek inspired version of the Mexican 7-Layer Dip and it's vegetarian! Serve with pita chips.

1 (10 ounce) container hummus spread
1 teaspoon Greek seasoning
5 ounces feta cheese
3 ounces Kalamata olives, pitted and sliced
1 large English cucumber, diced
1 pound tzatziki sauce
1 pint grape tomatoes, diced
3 green onions, chopped
2 (8 ounce) packages pita chips

Steps:

  • Spread hummus evenly in a pie dish and sprinkle with Greek seasoning. Layer feta cheese over humus, breaking up any large pieces. Layer Kalamata olives and diced cucumber on top. Spread tzatziki sauce carefully on top. Top with tomatoes and green onions. Chill until ready to serve.

8 ounces hummus (store bought or homemade)
1 cup 0% fat Greek yogurt
1 clove garlic (finely minced)
1 tsp chopped fresh dill
Juice of 1/2 small lemon
Pinch kosher salt
Freshly ground black pepper
2 tbsp red onion (minced)
1 cup English cucumber (about ½ large, ½-inch dice)
1 cup Roma tomato (seeded, ½-inch dice)
1/4 cup crumbled feta cheese
1/4 cup Kalamata olives (sliced)

Steps:

  • In a small bowl, combine yogurt, garlic, dill, lemon juice, salt and freshly ground pepper. Set aside.
  • In an 8"x8" or 7" x 11"glass dish, layer the hummus, yogurt mixture, red onion, cucumber, tomatoes, feta and olives.
  • Serve with whole grain pita chips or baked corn chips.

Steps:

  • With an electric mixer, combine the cream cheese, seasoning, garlic, and lemon juice until light and fluffy.
  • Spread in the bottom of a pie plate or a small, shallow baking dish.
  • Spread a layer of hummus.
  • In order, create layers by sprinkling the cucumbers, tomatoes, olives, onions, Feta cheese, and parsley.
  • Cover with plastic wrap and chill overnight.
  • Serve with pita chips, fresh vegetables, and/or flatbread.

1 tsp taco seasoning mix (all natural like Trader Joe's)
1/4 cup cilantro (finely chopped)
1 tsp garlic powder
1 1/2 cup plain Greek yogurt (non-fat)
1 cup salsa (low sodium)
3 medium avocados (pitted & skin removed)
1/2 cup cilantro (finely chopped)
1 tsp taco seasoning (all natural like Trader Joe's)
1/2 small jalapeño (finely diced)
3 cups iceberg lettuce (finely shredded)
1 cup Tex Mex (Colby Jack or Cheddar cheese, shredded)
1/4 cup black olives (pitted & sliced)

Steps:

  • In a small bowl, mash beans with a fork. Add remaining Bean Layer ingredients and mix. Spread the mixture in 8 x 11 baking (clear) dish or onto any other large serving platter.
  • Spread White Layer over the beans followed by a Salsa Layer.
  • In a small bowl, mash avocados with a fork and add remaining ingredients from Guacamole Layer. Mix and spread on top of Salsa Layer.
  • Place a layer of lettuce over the Guacamole Layer and top with cheese. Garnish with black olives. Serve immediately with any healthy tortilla chips.

This is like the classic Mexican 7-layer dip, only in a Mediterranean way! I sometimes make this and leave the meat out - it is still good and vegetarian thataway! Serve with fresh-baked pita chips. I estimated amounts, use more or less to your taste. Serving size is approximate too.

2 cups hummus
1/2 lb ground lamb
1/2 cup finely chopped red onion
1/2 cup chopped seeded cucumber
1/2 cup chopped seeded tomatoes
1 cup tzatziki (Greek yogurt dip)
1/4 cup chopped kalamata olive
1/4 teaspoon of fresh mint, finely chopped

Steps:

  • Spread hummus on platter. I usually use a pretty garlicky kind, stir in some olive oil and lemon zest, a little cayenne.
  • Brown lamb - can use beef or turkey- in skillet with garlic and some oregano and marjoram. Drain well. I usually brown my meet, drain and rinse it with boiling water and then add some spices. Layer meat on top of hummus.
  • Layer onion, cucumbers, tomatoes and tzaziki (greek yogurt dip). The amounts I gave are approximate, use more or less to your preference.
  • Scatter olives and mint over top. Serve with fresh-baked pita chips and watch it dissappear!

1 medium cucumber, peeled and seeded
Kosher salt
2 cups 2-percent Greek yogurt
2 tablespoons extra virgin olive oil
1 large clove garlic, finely grated
1/2 teaspoon dried mint or oregano
2 cups fresh parsley leaves, chopped (about 1 large bunch)
1/2 cup chopped, pitted kalamata olives
1 teaspoon lemon zest
4 scallions, chopped
Two 14-ounce cans artichoke hearts, drained, coarsely chopped
2 cups chopped jarred roasted red bell peppers (about 14 ounces)
2 cups crushed pita chips, plus more for serving
2 cups prepared hummus
1 cup crumbled feta (about 8 ounces)

Steps:

  • Shred the cucumber on a box grater, toss with a large pinch of salt and let drain in a strainer for 10 minutes. Squeeze out any remaining liquid. Mix the drained cucumber with the yogurt, olive oil, garlic and mint in a medium bowl.
  • Toss together the parsley, olives, lemon zest and scallions in a small bowl. Place the artichokes in a piece of cheesecloth or in a strainer and squeeze dry. Repeat with the peppers.
  • Layer the dip in a medium 3-quart clear glass trifle bowl or your favorite small serving bowl. Spread out the artichokes on the bottom, then top, in even layers, with the cucumber-yogurt mixture, peppers, pita chips, hummus, feta and the olive-herb mixture.
  • Wrap and refrigerate until chilled, at least 1 hour or overnight (if refrigerating overnight then top with the olive-herb mixture right before serving). Serve with pita chips.

1 pint yellow cherry tomatoes, quartered
Juice of 1 lemon
1/4 cup chopped fresh parsley
8 pitas, cut into wedges

Steps:

  • In a shallow glass bowl or baking dish, begin layering in the ingredients in the following order: hummus, roasted red bell peppers, tzatziki, diced cucumbers, olives, feta and cherry tomatoes.
  • Squeeze over the lemon juice and garnish with the parsley.
