Steps:
- Preheat the oven to 450 F (232 C).
- In a large bowl, whisk together flour, baking powder, and salt together. If you want to add any herbs or spices you can add them here.
- Add the pieces of cold butter and cut into the dry ingredients with a pastry cutter or fork until the consistency of coarse meal. If you want to add any cheeses or other add-ins you can stir them in here before adding the milk.
- Add 3/4 cup of the milk and stir just until combined. You can use any milk you like or buttermilk if you want a tangy flavor. If the batter is very dry, add a little more milk until the consistency of a very thick batter. Do not over-mix. The batter will be quite lumpy.
- Drop large mounds (about 1/4 cup each. I use a 2 oz scoop) onto a baking sheet. You can also use a cast iron skille that has been greased with butter.
- Bake at 450 F (232 C) for 18-22 minutes until golden brown
- Brush with melted butter if desired.

Steps:
- Heat the oven to 190C/170C fan/gas 5. Cream the butter in a large bowl with a wooden spoon or in a stand mixer until it is soft. Add the sugar and keep beating until the mixture is light and fluffy. Sift in the flour and add the optional ingredients, if you're using them. Bring the mixture together with your hands in a figure-of-eight motion until it forms a dough. You can freeze the dough at this point.
- Roll the dough into walnut-sized balls and place them slightly apart from each other on a baking sheet (you don't need to butter or line it). Flatten the balls a little with the palm of your hand and bake them in the oven for around 10-12 mins until they are golden brown and slightly firm on top. Leave the cookies on a cooling rack for around 15 mins before serving.

Steps:
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone baking mat and set aside.
- In a food processor combine the flour, baking powder and salt, process for 1 second, then add the cold butter pieces and process for 5 seconds, or until the butter is pea size and no larger chunks remain. Alternatively, if you don't have a food processor, you could cut the butter into the flour mixture.
- Pour the flour mixture into a bowl, then pour in buttermilk and honey. Stir with a wooden spoon and then knead with your hands for 30 seconds (the ingredients should combine to form a doughy mass, but don't over-knead the dough or else it will result in dense biscuits). It will seem as if there is not enough liquid, but there is (if the dough is really not coming together, you can add a teaspoon or two more of buttermilk; alternatively, if the dough is too wet, you can add a teaspoon or two of flour)
- Transfer the dough to a floured surface and, using your hands, flatten it into a 1/2 inch disk.
- With a biscuit cutter, cut out six biscuits and place them on the prepared baking sheet. Brush the tablespoon of melted butter onto the biscuits. Bake for 18 to 20 minutes, or until golden brown. Remove from the oven, allow to cool for a few minutes and serve. Enjoy!
