- In a large bowl put the hot water and yeast. Stir to mix and let set for 5 minutes.
- Add flour one cup at a time along with the salt.
- Stir to combine. Dough will be shaggy and messy.
- Cover with plastic wrap and let set for 12 - 18 hours.
- DO NOT REFRIGERATE.
- To bake: Preheat oven to 450 degrees.
- Place 5 - 6 qt. pot and lid in oven. Any type of pot can be used as long as it's oven-proof to 450 degrees and it has a lid. I used an enamelware Staub pot.
- Right after the pan is placed in the oven, dump your dough onto a heavily floured surface.
- Flour your hands and shape the dough into a ball.
- Cover with plastic wrap from your bowl and let rest for the 30 minutes it takes to heat the pot.
- After 30 minutes, remove the pot from the oven and carefully place the dough inside. Remember it is VERY hot.
- Cover and bake for 25 minutes.
- Remove lid and bake for 10 minutes more.
- After removing from oven lift bread out of the pan.
- Place on rack and cool completely.
- Don't forget to pat yourself on the back for producing a perfect loaf of bread!

Steps:
- Preheat the oven to 375 degrees F.
- Add the flour, salt, and powdered sugar to a food processor and pulse to combine. Add in the vanilla, the butter and the 1 teaspoon of water. Pulse together just until a dough is formed. Put the dough on a sheet of plastic wrap and roll into a log, about 2 1/2 inches in diameter and 5 inches long. Tightly twist each end of the wrap in opposite directions. Chill the dough in the refrigerator for at least 30 minutes.
- Slice the log into 1/3-inch thick disks. Arrange on nonstick cookie sheets, parchment lined or silpat lined baking sheets, 2 inches apart. Bake until the edges are just light brown, about 12 to 14 minutes, rotating the pans half way through the baking process. Remove from the oven and let cool on the cookie sheets for 5 minutes. Transfer to wire racks and cool until room temperature. Enjoy!
- Variations:
- Pulse together the tea with the flour and salt in a food processor just until the tea is in small pieces evenly distributed throughout the flour. Then add the powdered sugar, vanilla, the butter and the 1 teaspoon of water. Continue as instructed above.
- Pulse the toasted and chopped pecans into the dough and then shape into a flattened round disk. Wrap in plastic wrap and refrigerate for 1 hour. On a flour dusted surface, roll the dough out to approximately 1/3-inch thick. (If the dough is too hard to roll or begins to crack, let it rest at room temperature for a few minutes until pliable.) With a sharp knife, cut the dough into rectangle shapes about 1 by 3-inches. Arrange on the prepared baking sheets and follow the cooking instructions as above. Dust slightly cooled cookies with powdered sugar through a fine mesh strainer.

- Add the water and mix until the dough forms a ball.
- Cover the bowl with plastic wrap (sprayed with cooking spray) and a damp tea towel.
- Let dough sit covered at room temperature for 18-24 hours.
- After 24 hours (or at least 1 hour before you want to serve) preheat the oven to 450 degrees F.
- Place a 2 3/4 quart dutch oven (or a 2.4L baking dish) with a lid in the oven while it is preheating. (Note: Readers have used a 5 qt. dutch oven with success).
- While oven is preheating, transfer the dough from the bowl onto a floured surface.
- Form the dough into a ball, adding a few TBS more flour if needed. The dough should still be slightly loose. Then cover it with a floured towel while the oven is preheating. (Important note: The dough ball will be loose and "floppy." That is how it should be as this is a very moist bread which is what makes it so irresistible. You will not have a firm ball, it will look a little flat).
- Carefully remove the hot baking dish from the oven. Remove the lid and spray the dish with cooking spray or line it with parchment paper.
- Gently put the dough ball into the baking dish so it's evenly distributed.
- Cover and bake for 30 minutes.
- Remove the lid and bake for an additional 15 minutes, or until the loaf is golden brown.
- Remove the loaf from the baking dish and let it cool on a rack before slicing. To keep it warm, cover with a tea towel.

- You can use butter spray to grease skillet, but it works best if you put a little oil in the skillet and put it in the oven while it is preheating. Remove skillet and tilt to coat pan bottom with oil right before you pour in the batter.

- Day 1 (Around 12 pm)Make the dough: Add the un-fed starter, gluten-free flour, water, and salt to the bowl of a stand mixer. Use the dough hook to mix until all ingredients are combined, the dough comes together, and there isn't any loose flour left. Bulk Fermentation: Gently form the dough into a ball and place in a lightly oiled and floured medium glass bowl. Loosely cover and leave in a draft-free place for 6-10 hours. 6 hours if your house is on the warm side and up to 10 hours if your house is cooler. I generally let mine rise for about 8 hours. At this point, you don't want your dough to double in size. 2nd Proof/Retard (around 8pm): After the first rise, transfer the bowl to the refrigerator to finish proofing in the refrigerator for 12 hours. You can keep the dough in the same bowl or you can gently reshape it and place it in a floured Banneton Basket. Day 2 (Around 8 am)Place your Dutch Oven on the center rack and preheat the oven to 500 degrees. Let the Dutch Oven preheat at 500 degrees for at least 30 minutes. When the Dutch Oven has preheated, remove from the dough from the refrigerator. Turn the dough out onto a piece of lightly floured parchment paper. With generously floured hands, gently re-shape to a tighter ball and use the flour to smooth the dough. The dough should be completely coated with a layer of flour. (Skip this if you proofed in a Banneton Basket) Use a sharp knife or bread lame to slash the bread, you want the slash to be at least 1-inch deep. You can make it decorative or keep it simple to start and just do an X in the middle. Remove the Dutch Oven from the preheated oven. Use the corners of the parchment paper to lift the dough and carefully place it in the Dutch Oven so you don't burn yourself. Place 2 large ice cubes in the Dutch Oven between the parchment paper and sides of the DO and quickly cover with the lid. Place the Dutch Oven back on the center rack and lower the temperature to 450 degrees. Bake at 450 for 40 minutes. After 40 minutes lower the oven temperature to 425 degrees and then remove the lid from the Dutch Oven. Bake for an additional 40 minutes, uncovered, at 425 degrees. When the bread is done, it should have an internal temperature of at least 210 degrees and the bottom of the bread should sound hollow when you knock on it. Cool completely on a wire rack before slicing and serving.

- Gather the ingredients.
- Combine the water and yeast in the bowl of an electric stand mixer or standard mixing bowl; let stand for about 5 minutes.

Cover with a clean kitchen towel and let them rise for about 15 minutes longer (while the oven preheats).
- Place a pan of hot water on the bottom of the oven. Preheat the oven to 400 F.
- With a very sharp knife or baker's lame, cut shallow slits along the top of the baguettes before baking.
- Bake the baguettes for 15 to 20 minutes, until golden brown.

- Combine 1/4 cup of your sourdough start with two cups of flour, 1 1/2 cups of water, and 1 teaspoon of salt.
- Leave in a glass bowl on your counter (if it’s a cold winter’s night, you may want to leave it close to a heat source) for 16-17 hours covered with plastic wrap.
