2 cups old-fashioned oats
1/2 cup pecan halves
1/2 cup sliced almonds
1/4 cup sunflower kernels
1/2 cup packed brown sugar
1/2 teaspoon salt
1/4 cup butter, cubed
1/4 cup honey
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/2 cup dried cherries
1/2 cup dried blueberries
PARFAITS:
2 cups fresh blueberries
2 cups fresh raspberries
2 cups chopped fresh strawberries
4 cups honey Greek yogurt

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first 6 ingredients. In a small saucepan, mix butter, honey and cinnamon. Cook over medium heat until blended, 3-4 minutes. Remove from heat; stir in vanilla. Pour over oat mixture; stir to coat., Spread evenly into a greased 15x10x1-in. baking pan. Bake until crisp and dark golden brown, 35-40 minutes, stirring every 10 minutes. Cool completely on a wire rack. Stir in dried fruit., In a small bowl, combine berries. Layer 1/4 cup of the berries, yogurt and granola into 8 parfait glasses. Repeat layers. Top with remaining berries.

6-1/2 cups frozen unsweetened raspberries
1/4 cup packed brown sugar
1/4 cup orange juice
2 tablespoons cornstarch
1/2 teaspoon grated orange zest
2 cups fresh blueberries
2 cups fresh blackberries
2 cups granola without raisins
4 cups vanilla Greek yogurt
Additional brown sugar, optional

Steps:

  • Place raspberries and brown sugar in a blender; cover and process until pureed. Press through a sieve; discard seeds. , In a small saucepan, combine the raspberry puree, orange juice, cornstarch and orange zest. Cook and stir over medium heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from the heat; cool., In eight parfait glasses, layer half of the raspberry sauce, berries, granola and yogurt. Repeat layers. Sprinkle with additional brown sugar if desired. Serve immediately.

MIXED BERRY AND YOGURT PARFAIT

Making your own granola is easier than it looks, and it will add a nice touch to this quick and easy parfait.

Number Of Ingredients 11

1/3 cup low-fat plain yogurt
1/3 cup fresh or frozen mixed berries
1 tablespoon maple syrup
1 tablespoon Easy Homemade Granola, recipe below
2 tablespoons maple syrup
1 teaspoon extra-virgin raw coconut oil
1/2 cup old-fashioned oats
1/4 cup sliced raw almonds
1/4 cup raw sunflower seeds
Kosher salt
Nonstick cooking spray

Steps:

  • Fill a small single-serving (6 ounce) container with a third of the yogurt. Top with a third of the berries. Drizzle 1 teaspoon of maple syrup over the berries. Repeat two more times with the rest of the yogurt, berries and maple syrup. Pack the granola separately so that it can be mixed into the parfait when ready to eat. Pack the parfait with an ice pack or frozen juice box so that it stays cold until lunchtime.
  • Heat an oven to 350 degrees F.
  • Heat the maple syrup with the coconut oil in a small skillet over medium-low heat, just to melt the oil. While still warm, toss the maple syrup mixture together with the oats, almonds, sunflower seeds and a pinch of salt in a medium bowl. Spray a baking sheet with the nonstick cooking spray. Spread the granola on the sheet tray in a thin layer. Bake for a total of 20 minutes, tossing the granola halfway through. Let cool to room temperature and store in an air-tight container in the refrigerator for up to 1 month.

This tasty dish is a combination of honey-flavored yogurt and a blend of all your favorite berries - strawberries, raspberries, blueberries and blackberries. It's a healthful way to start your day or make a light dessert.

2 tablespoons cold water
1 tablespoon cornstarch
1 (600 g) package europe's best 4-Field Berry Mix, frozen
1/4 cup candied ginger, chopped (optional)
2 tablespoons lemon juice or 2 tablespoons orange juice
2 cups plain yogurt
2 tablespoons maple syrup or 2 tablespoons honey

Steps:

  • Combine water and cornstarch. Reserve.
  • Place remaining filling ingredients in a medium saucepan. Bring to a boil stirring occasionally. Let mixture boil for 1 minute.
  • Meanwhile, stir reserved cornstarch mixture and add to boiling fruit. Simmer 1-2 minutes until fruit has thickened. Cook and refrigerate until ready to use. Can be refrigerated for up to 5 days.
  • YOGURT FILLING:.
  • Combine yogurt and sugar. Can be refrigerated for up to 2-3 days.
  • ASSEMBLY:.
  • Use 3/4 cup cold filling and 1/2 cup yogurt layered in glass or small bowl. Sprinkle with 1/4 cup topping if desired.
  • TIPS: Fruit filling can be made ahead and kept on hand to use for breakfast, after school snack or for quick dessert anytime.
  • For a burst of tropical flavor, try using Europe's Best Sunburst Mango instead of the 4-Field Berry.

FOUR BERRY JAM

This is one of my favorite jams, especially since I can make it any time of the year using frozen fruit. It's really delicious! The mixture of fruits tastes so summery! I've been making it for years; I think I got it from Taste of Home magazine, but I can't remember now for sure. Prep time includes estimated time to cook jam and ladle into jars, cook time is time to sit and seal.

Number Of Ingredients 6

1 cup fresh blackberries (or frozen unsweetened, thawed and undrained)
1 cup fresh blueberries (or frozen unsweetened, thawed and undrained)
1 1/2 cups fresh strawberries (or frozen unsweetened, thawed and undrained)
1 1/2 cups fresh raspberries (or frozen unsweetened, thawed and undrained)
1 (1 3/4 ounce) box pectin (not low-sugar or no-sugar varieties)
7 cups sugar

Steps:

  • Prepare your jars in advance--sterilize them and keep the jars, lids, and rings warm while preparing the jam. Have all tools ready and handy (ladle, towel, wet cloth, canning jar funnel, etc).
  • Crush berries in a large, non-reactive (such as stainless steel) saucepot. Stir in pectin until dissolved.
  • Bring to a full, rolling boil over high heat, stirring constantly to avoid scorching (reduce heat to medium-high if needed).
  • Stir in sugar. Return to a full, rolling boil and boil for exactly 1 minute (starting from when you can no longer stir the bubbles down).
  • Remove from heat and quickly skim off any foam. You must move quickly at this point to prevent the jam from cooling off too much.
  • Quickly ladle hot jam into hot, sterilized jars, leaving 1/4 inch headspace.
  • Wipe rims with a clean, warm, damp cloth to ensure a good seal. Place lids on jars and screw rings on snugly but not too tight. Flip jars upside down. Let stand upside down for 5 minutes, then turn right-side up again. Let sit for one hour.
  • After one hour, check seals. If any lids are still popped up (there is a bump in the center of the lid that should be down if the jar is sealed, and up if not), then refrigerate and use immediately, or process in a hot water bath for 10 minutes.
  • Store jars in a cool, dark place until ready to use; use within 1 year.
