2 tbsp olive oil
1 large onion , finely chopped
2 celery sticks , finely chopped
1 large carrot , finely chopped
70g smoked pancetta , diced (optional)
1 large Savoy cabbage , shredded
2 fat garlic cloves , crushed
1 heaped tsp sweet smoked paprika
1 tbsp finely chopped rosemary
1 x 400g can chopped tomatoes
1.7l hot vegetable stock
1 x 400g can chickpeas , drained and rinsed
shaved parmesan (or vegetarian alternative), to serve (optional)
crusty bread , to serve (optional)

Steps:

  • Heat the oil in a casserole pot over a low heat. Add the onion, celery and carrot, along with a generous pinch of salt, and fry gently for 15 mins, or until the veg begins to soften. If you're using pancetta, add it to the pan, turn up the heat and fry for a few mins more until turning golden brown. Tip in the cabbage and fry for 5 mins, then stir through the garlic, paprika and rosemary and cook for 1 min more.
  • Tip the chopped tomatoes and stock into the pan. Bring to a simmer, then cook, uncovered, for 30 mins, adding the chickpeas for the final 10 mins. Season generously with salt and black pepper.
  • Ladle the soup into six deep bowls. Serve with the shaved parmesan and crusty bread, if you like.

1/4 cup mayonnaise
1/4 cup sour cream
3 tablespoons white wine vinegar
2 teaspoons sugar
1 teaspoon celery seeds
1/2 teaspoon hot sauce
Kosher salt and freshly ground pepper
1/2 head green cabbage, shredded (about 8 cups)
2 English cucumbers, sliced into half-moons
2 carrots, grated
2 scallions, sliced

Steps:

  • Whisk the mayonnaise, sour cream, vinegar, sugar, celery seeds, hot sauce, 1 teaspoon salt and a few grinds of pepper in a large bowl.
  • Add the cabbage, cucumbers, carrots and scallions; toss. Season with salt and pepper.

SIMPLE CUCUMBER SOUP

The most simple yet one of the best soups I had so far. A simplified version of my mum's cucumber soup. No need for salt, pepper, or seasonings, just a good vegetable broth. I like to have it with a good slice of toasted bread and some good cheese.

1 tablespoon butter, or more to taste
1 tablespoon olive oil
1 small yellow onion, chopped
1 large clove garlic, minced
2 large English cucumbers, peeled and thinly sliced
2 small zucchinis, peeled and thinly sliced
3 cups vegetable broth

Steps:

  • Melt butter with the oil in a large saucepan over medium-high heat. Cook and stir onion and garlic in the butter mixture until tender, 3 to 5 minutes. Add cucumber and zucchini slices; cook and stir until softened, 2 to 3 minutes. Pour vegetable broth over the mixture; bring to a boil, reduce heat to medium-low, and let simmer until the vegetables are cooked through, 20 to 25 minutes. Remove from heat and cool a few minutes.
  • Pour soup into a blender no more than half full. Cover and hold lid in place with a towel; pulse a few times before leaving on to blend. Puree in batches until smooth.

2 medium leeks, white and light green parts only
1 tablespoon extra-virgin olive oil
1 medium yellow onion, diced small
2 medium carrots, diced small

1 medium Yukon Gold potato, peeled and diced small
6 cups low-sodium chicken broth
2 bay leaves
1/2 head (1 1/2 pounds) green cabbage, cored and thinly sliced
Coarse salt and ground pepper
2 teaspoons white vinegar
1 tablespoon chopped fresh thyme leaves

Steps:

  • Halve leeks lengthwise; rinse thoroughly, pat dry, and cut into 1/2-inch slices. In a large Dutch oven or heavy pot, heat oil over medium-high. Add onion, carrots, and celery; cook, stirring occasionally, until softened, about 5 minutes. Add leeks and garlic and cook, stirring, until leeks begin to soften, 2 minutes. Add potato, broth, and bay leaves and bring to a boil. Stir in cabbage and season generously with salt and pepper.
  • Return soup to a boil, then reduce to a rapid simmer. Cover and cook until vegetables are tender, 15 to 20 minutes. Remove from heat; stir in vinegar and thyme. Season with salt and pepper.

1 tsp rapeseed oil
small bunch spring onions , roughly chopped
1 cucumber , roughly chopped
1 large round lettuce , roughly chopped
225g frozen peas
4 tsp vegetable bouillon
4 tbsp bio yogurt (optional)
4 slices rye bread

Steps:

  • Boil 1.4 litres water in a kettle. Heat the oil in a large non-stick frying pan and cook the spring onions for 5 mins, stirring frequently, or until softened. Add the cucumber, lettuce and peas, then pour in the boiled water. Stir in the bouillon, cover and simmer for 10 mins or until the vegetables are soft but still bright green.
  • Blitz the mixture with a hand blender until smooth. Serve hot or cold, topped with yogurt (if you like), with rye bread alongside.

MOM'S CABBAGE SOUP



Mom's Cabbage Soup image

On rainy days, I often want comfort food-something to warm my belly and my soul! This very easy cabbage soup recipe is something my mother would make for me on days just like this. Her version has a ham hock, but you can use kielbasa instead, or go no-meat, the way I did.

Number Of Ingredients 17

2 tablespoons olive oil
1 large onion, chopped
4 stalks celery, chopped
1 cup chopped carrots (from 4 medium carrots, peeled)
2 cloves garlic, minced
Kosher salt and freshly ground pepper
Crushed red pepper flakes
Handful fresh cherry tomatoes, halved (about 10 small cherry tomatoes)
One 28-ounce can diced tomatoes
64 ounces vegetable stock (2 quarts) (8 cups), plus more if desired
1 medium head cabbage, cored and chopped (about 1 3/4 pounds)
One 15-ounce can cannellini beans, drained and rinsed
1/2 cup chopped fresh flat-leaf parsley
1 loaf your favorite French bread, sliced on the diagonal
Olive oil, for brushing and drizzling
Minced garlic, for topping (optional)
Flaky or crystal sea salt, for sprinkling

Steps:

  • For the soup: Heat the olive oil in a stockpot over medium heat. Add the onion, celery, carrots and garlic and cook, stirring often, until the onions are translucent (not browned), about 8 minutes. Add salt, black pepper and crushed red pepper flakes to your desired preference. Then stir in the fresh tomatoes, canned tomatoes and vegetable stock and bring the entire mixture to a boil.
  • Once boiling, stir in the cabbage and beans and keep it simmering, stirring occasionally, until the cabbage is tender, 35 to 40 minutes. Add more stock or water if you prefer more liquid and taste and season with more salt and pepper, if necessary. When finished, sprinkle over and stir in the parsley for color and flavor.
  • Ladle the soup into bowls and serve with crostini or garlic bread, if desired.
  • For the crostini: Preheat your oven to 350 degrees F.
  • Place the bread slices on a baking sheet. Brush the tops with olive oil. You can also smear minced garlic over the top, if desired.
  • Bake until crunchy and golden brown, 15 to 20 minutes. Take the crostini out of the oven, drizzle the tops with olive oil and sprinkle sea salt over the top.

20 baby carrots, chopped in very small pieces or 20 baby carrots shredded carrots
6 -8 cups shredded cabbage
6 -8 cups cucumbers, chunks peeled and seeds removed
2 quarts water
1 teaspoon salt or 1 teaspoon salt substitute
1/4 cup margarine
1 tablespoon parsley flakes or 1 tablespoon dried cilantro
1 bay leaf
2 teaspoons Bon Appetit seasoning mix
1 dash chili powder
1 dash nutmeg
1 (12 ounce) can evaporated milk
3 cups milk
1 teaspoon white pepper (optional)
1/8 teaspoon turmeric (optional)

Steps:

  • In large stockpot, add water, carrots, cabbage and cucumber, salt, margarine and cilantro and bay leaf.Cover.
  • Cook 20 minutes on low heat.
  • Take off heat, remove bay leaf.
  • Add 2 tsps bonapetite seasoning and dash of chili powder and a dash of nutmeg.
  • Add evaporated milk and regular milk.
  • Reheat slowly.
  • If there are any pieces remaining, you may carefully mash with a potato masher.
  • Note: When serving to children I did not add pepper and turmeric.
  • The grated carrots give a nice color to the soup along with the chili powder and if you had turmeric you will get a buttery color.
  • Taste and add more salt if necessary.

This is a chunked full vegetable soup with lots of vitamins. Made for my special kids who had usually never tasted a fresh vegetable before. There are no onions, garlic or peppers in any of the soups.

1 large head cauliflower, cut in flowerettes, then cut vertically, thin slices
10 stalks celery, thinly sliced with leaves
6 large carrots, grated
2 quarts water
1/2 cup margarine
1 teaspoon salt or 1 teaspoon salt substitute
1 (12 ounce) can evaporated milk
2 cups milk
2 cups frozen peas (optional)
2 cups cheddar cheese

Steps:

  • In large stockpot add carrots, celery and cauliflower to 2 quarts water. Add margarine, salt.
  • Cook 20 to 25 minutes on low heat, covered.
  • Take off heat, add evaporated milk, two cups of milk and optional frozen peas.
  • Put back on burner and heat on low and stir until warm and hot to serve. Do not boil.
  • Ladle in serving bowls, pass the cheese if they want a soup topper. Serve with triscuits or a whole wheat cracker. This is a very rich soup. If you want to add more water, feel free.

BEEF CABBAGE CARROT SOUP

1 lb ground beef (drain off fat)
1/2 head cabbage (chopped)
1 small sweet onion (sliced)
4 -6 carrots (sliced)
2 stalks celery (sliced)
2 cups beef stock
1/2 cup red wine
3 beef bouillon cubes (I used Knorr)
3 cups water
1 (16 ounce) can red kidney beans, undrained
2 (6 ounce) cans tomato paste
1 (28 ounce) can tomatoes, chopped and liquid added to soup
1 tablespoon dark brown sugar
2 tablespoons Worcestershire sauce
2 pinches caraway seeds
2 pinches fennel seeds
1/4 teaspoon black pepper
3/4 teaspoon garlic salt
1/4 teaspoon garlic powder

Steps:

  • Chop onion, cabbage, carrots and celery. Saute in 2 tbsp olive oil. (Do not brown!) Just saute till the vegetables are tender. Remove to Large Pot.
  • Use same pan as above and cook ground beef (you may substitute ground turkey) then drain off fat. Add to Pot.
  • Add remaining ingredients and stir well. (I pinch the fennel seed and caraway seed between my fingers to slightly break open the seeds instead of throwing in whole seeds.)
  • Bring to a boil, then reduce heat to a simmer. Simmer for 3-4 hours till all vegetables are very tender. Serve with a crusty bread. Enjoy!

CREAM OF ZUCCHINI, CARROT AND CUCUMBER SOUP

2 zucchini, cut into half-rounds (2 c)

1 tablespoon curry powder
6 cups canned chicken or 6 cups vegetable broth
1 cup heavy cream or 1 cup milk

Steps:

  • Melt butter in large soup pot. Add onions and garlic. Add vegetables, curry, and broth, bring to a boil, then simmer, covered, for 20 minutes.
  • Remove from heat. Allow to cool lukewarm. Using a food processor or blender, puree the soup. Return to pot; add cream or milk; heat briefly and serve hot (or chill and serve cold the next day).

1 tbsp vegetable oil
200g firm tofu, chopped into small chunks
250g cooked potatoes (leftover roast potatoes work well), chopped into chunks
3 eggs
100g green beans, halved lengthways
250g Chinese cabbage, finely shredded
½ cucumber (or 1 baby cucumber), thinly sliced
100g beansprouts
1 carrot, shredded
handful coriander, leaves picked and roughly chopped
handful prawn crackers
4 tbsp crispy onions
50g peanut butter
3 tbsp kecap manis (or 2 1/2 tbsp soy sauce and 1/2 tbsp honey)
2 tsp shrimp paste or dried crayfish
1 tbsp fish sauce
1 tbsp soft dark brown sugar
1 garlic clove, crushed
2 fat red chillies (I like Scotch bonnets - use only 1 if you don't like it too spicy), finely chopped
150ml coconut milk
juice 1 lime

Steps:

  • Heat the oil in a large frying pan or wok and boil a small saucepan of water. Fry the tofu for a few mins each side until brown and crispy, then transfer to a plate. Add the potatoes to the frying pan and cook for a few mins until they are warmed through and starting to crisp, then tip onto the same plate and set aside to cool.
  • Add the eggs to the boiling water and cook for 7 mins, then plunge them straight into cold water. Fill the saucepan with fresh water, bring to the boil and add the beans. Cook for 2-3 mins until just tender. Drain and run under cold water until cool.
  • To make the peanut dressing, put the peanut butter and kecap manis in a bowl and mash together with a fork until smooth and combined. Whisk in the remaining ingredients.
  • Put the tofu, potatoes, beans, cabbage, cucumber, beansprouts, carrot and coriander in a large bowl or arrange on a platter. Drizzle over half the dressing, reserving the rest for people to help themselves. Break the prawn crackers in your hands and scatter over. Peel and quarter the eggs, and serve on top with the crispy onions. Toss together just before serving.

1 large onion, finely chopped
4 garlic cloves, minced
2 carrots, thinly sliced
8 cups green cabbage, shredded
2 1/2 cups chicken broth
3/4 cup fresh dill, snipped
1/3 cup tomato paste
3/4 teaspoon ginger
salt and pepper
1/3 cup sour cream

Steps:

  • In a big soup pot, heat the oil over moderate heat. Add the onion and garlic and sauté for 7 minutes or until the onion is soft.
  • Add the carrots and sauté for 5 minutes or until the carrots are crisp-tender.
  • Stir in the cabbage, cover and cook, stirring occasionally for 10 minutes or until the cabbage is wilted.
  • Add the broth, 2 ½ cups water, dill, tomato paste, ginger, salt and pepper. Bing to a boil. Reduce heat and simmer for 15 minutes or until the cabbage is very tender. Stir the sour cream into the soup.
