- 1. mix flour, salt, yeast and pizza seasoning together. Add cheeses and mix by hand. Pour mixture into water and combine until well moistened. Turn dough into a large, well-grased, sealable container and close lid. sit for 12 hours on counter.
- 2. Turn dough onto floured cookie sheet. Dust with flour and fold edges into the middle several times. Each time you fold add a few pinches of the prosciutto until it is gone. Turn dough over with folded-in side under, and shape into ball.
- 3. sprinkle with flour and cover with plastic wrap. Sit for 2 1/2 hours.
- 4. put dutch oven into oven and pre-heat to 500 degrees. remove dutch oven, remove lid and gently and carefully drop dough into it. replace lid. bake for 30 minutes. remove lid and bake an additional 10 minutes.
- 5. remove dutch oven from oven and dump bread onto dry surface at once. Allow to cool.

- Step 1: Mix flour, malt powder and yeast in a stand mixer. Combine salt with flour mixture in the mixer bowl - this is done separately from the first mixing so the salt doesn't retard the action of the yeast. Step 2: Add water to mixing bowl and mix into flour with dough hook on low to moisten. Knead for seven minutes on medium speed. Mix in prosciutto on low speed. Dough should be slightly tacky but not sticky. If dough is too sticky knead in more flour a little at a time. If the dough is too dry, spray with a bit of water and knead. Step 3: Shape dough into a ball and place on a lightly floured surface. Sprinkle dough with flour, cover with plastic wrap and let rest for 20 minutes. Step 4: Roll dough into an 18" cylinder and form into a ring. Ensure the ends stick together and place on parchment paper on a large cookie sheet. Spray dough with cooking spray and cover with plastic wrap. Let rise in a warm draft-free place until doubled for about 1 hour. I usually heat my oven to the lowest setting and then shut it off before placing dough into it to allow it to rise. Also, I like to let the last rise happen overnight but I didn't have time for that this time. Step 5: Use a pizza stone or baking sheet on a low shelf of the oven and place a baking sheet on the lowest shelf of the oven (or on the bottom of the oven if your heating element isn't on the bottom of the oven). Preheat oven to 450 degrees for at least 10 minutes. Step 6: Transfer bread to pizza stone or baking sheet in the preheated oven and brush with about 1/3 of melted butter. Add about half to a dozen ice cubes into the baking sheet on lowest shelf of the oven. Step 7: Bake 15 minutes. Remove parchment paper and turn bread front to back to allow for even baking. Brush bread with about another 1/3 of melted butter. Add another dozen ice cubes. Bake another 5 minutes. Reduce temperature to 400 degrees. Bake another 10 to 15 minutes. Step 8: Turn off oven and leave bread in the oven with door propped open for another 5 minutes. Step 9: Remove bread from oven and brush with the remaining butter. Allow to cool but if you aren't having company or bringing this bread to a function, this bread tastes delicious slightly warm and crispy. Use this bread to make Saveur's stuffing.
CHEESE AND PROSCIUTTO FOCACCIA

Ever since learning how to make focaccia using "The Easiest, Bestest Focaccia Bread" recipe on Zaar, I like experimenting with new toppings for the hearty, easy, quick treat. This recipe originally called for 1 loaf of frozen white bread dough, but I'll use the recipe above for the focaccia and proceed with their toppings. YUM! - Prepare and cook your favorite recipe for focaccia bread (or get store bought!). If you use the frozen bread dough listed above, roll out dough onto lightly floured surface into a rectangle. Tranfer to greased baking sheet and let rise for 25 minutes. Bake for 18 minutes. *Before baking either your favorite recipe or the frozen bread dough, brush uncooked dough with mixture of garlic, oil and rosemary.
- Remove cooked focaccia bread from oven and top with prosciutto, dried basil and cheese.
- Return to oven and bake 3 minutes or until cheese is melted.

A pandoro mold is traditionally used in Italy to make a sweet bread, but any heavy nine-cup mold may be used. Cooking times may vary.

- In bowl of electric mixer fitted with a dough hook, mix yeast and sugar with warm water; stir until dissolved. Let stand until foamy, 10 minutes.
- Add flour, salt, and pepper to yeast mixture. Mix on low speed until a smooth ball is formed (dough will be slightly sticky), 5 minutes. Transfer to a lightly floured surface, and pat into a 10-by-10-inch square. Scatter prosciutto and Fontina on top; press in.
- Pull four corners of dough into center, form a ball, and transfer, seam side down, to a lightly oiled large bowl. Cover with plastic wrap. Let rise in warm, draft-free place until doubled in volume, 1 hour.
- Heat oven to 425 degrees with rack placed in lower third. Punch down dough, pull four corners of dough into center to form a ball, and place in lightly oiled pandoro mold, seam side up. Cover with plastic; let rise until it is even with the top of the mold and slightly mounded, 30 minutes. Brush top with egg glaze. Bake until top is a dark golden brown, 35 minutes. Cover bread with a tent of aluminum foil; reduce heat to 350 degrees. Continue baking until base of bread sounds hollow when tapped and sides are golden brown, 30 to 40 minutes. Unmold bread onto cooling rack, top side down, until completely cool, 1 hour. (If sides of bread are not brown, set bread on oven rack, top side down, for another 5 minutes, until golden.) Bread will keep wrapped in plastic wrap for 1 to 2 days, although fresh bread always tastes best.
GOAT CHEESE AND PROSCIUTTO SAVORY BREAD PUDDING
A wonderful, savory bread pudding. I have subbed the mushrooms for roasted butternut squash and the chevre with whole milk ricotta with tasty results.

- Toast bread cubes in 350 degree oven for 10 minutes or so, stirring halfway through. Leave oven on at 350.
- In a bowl, mix together eggs, yolk, milk, and cream until thoroughly blended.
- In another bowl, toss together bread cubes, prosciutto, shallot, mushrooms, pine nuts, thyme, and pepper.
- Spray or lightly butter a 9x9 square baking pan and pour in the bread mixture, pat to distribute evenly. Crumble the chevre over all and mix in slightly with hands.
- Pour egg mixture over bread cubes. Sprinkle with shredded cheese such as parmesan or gruyere, for a golden crust.
- Bake in a 350 degree oven for 30-40 minutes, or it springs back when you poke it in the middle. Alternately, when a thermometer inserted into center reads above 145 degrees it is done.

- Place the two slices of cheddar on a cutting board, then top those with the two slices of Gruyere, then top each stack with a slice of Havarti. Cut each stack of cheese slices into 9 squares (like a tic tac toe board). Cut each slice of prosciutto crosswise. Wrap each small stack of cheese squares in a piece of prosciutto, encasing the cheese as best you can, but not being fussy about it (you will have one leftover little stack of cheese; that’s yours for snacking). Place the prosciutto wrapped cheese into the freezer for 30 to 60 minutes.
- Preheat the oven to 375°F. Line a rimmed baking sheet with parchment paper or foil. Separate the can of biscuits into individual biscuits and then use your fingers to gently separate each biscuit each one in half horizontally, creating two thinner rounds.
- Place a prosciutto-wrapped cheese square on one of the rounds, until half of the rounds have been topped with the squares, then place a second round of biscuit dough on top of the wrapped cheese. Use your fingers to gently pinch and seal the biscuits, working your way around the circles.
- Place them at least 1-inch apart on the prepared baking sheet. In a small bowl combine the melted butter and honey and brush the mixture on top of the biscuits. Sprinkle with salt. Bake for about 12 to 15 minutes, until golden brown on top. Serve warm or hot.
