3 pounds ground beef
2 medium onions, chopped
1 green pepper, chopped
1 red pepper, chopped
2 teaspoons minced garlic
1 (29-ounce) can tomato sauce
1 (29-ounce) can diced tomatoes, not drained
1 cup beef broth
2 jalapeños, minced
2 tablespoons brown sugar
1 tablespoon apple cider vinegar
1 tablespoon chili powder
2 teaspoons cumin
1 teaspoon crushed red chilies
1 teaspoon hot sauce
2 cans kidney beans or black beans, drained

Steps:

  • 1. Sauté beef, onions, peppers and garlic in oil until meat is no longer pink. 2. Add remaining ingredients and bring to a boil. Reduce heat and simmer for 1-1 1/2 hours. Server over rice or with cornbread. Tips Put lots of toppings on the table-black olives, shredded lettuce, avocado, parve sour cream, tortilla chips, and let every one have fun dressing their own chili. 2 Medium Onion (peeled and finely diced)
4 Cloves Garlic (peeled and finely chopped)
1 (400g) Can Red Kidney Beans (drained)
1 (400g) Can Cannellini Bean (drained)
1 (400g) Can Black Beans (drained)
2 (400g) Cans Chopped Tomatoes
200 ml Vegetable Stock
2 Teaspoons Chipotle Paste
1 Teaspoon Smoked Paprika
1 Tablespoon Chocolate Powder
1 Medium Lime (juiced)
10 g Coriander (finely chopped)
1 Tablespoon Olive Oil

Steps:

  • Heat the the olive oil in a large pan over a medium-high heat. Toss in the onion and garlic and fry for 2-3 minutes until soft.
  • Mix the chipotle paste, smoked paprika and chocolate powder into the cooking onions. Then pour in the chopped tomatoes, canned beans and vegetable stock. Stir the pan to evenly combine all the ingredients. Then bring to a simmer and cook for 20 minutes.
  • Remove the pan from the heat and mix in the lime juice and chopped coriander. Season to taste.

2 pounds chuck roast, cut into small cubes
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
2 pounds ground beef
1 pound fresh chorizo
8 cloves garlic, minced
1 large onion, chopped
1 jalapeno, minced
Two 12-ounce bottles pale lager beer
One 14-ounce can chopped tomatoes
1/2 cup tomato paste
2 guajillo chiles
2 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon Mexican oregano
2 bay leaves
Two 15-ounce cans pinto beans, drained and rinsed
Two 15-ounce cans red kidney beans, drained and rinsed
Two 15-ounce cans black beans, drained and rinsed
1/4 cup masa harina
Diced tomatoes
Cubed avocado
Grated Cheddar cheese
Sour cream
Lime wedges
Fresh cilantro leaves

Steps:

  • Heat a Dutch oven over medium heat. Season the chuck roast with salt and pepper. Add the oil to the pot and sear the chuck roast until browned, 7 to 8 minutes. Remove from the pot. Add the ground beef and chorizo and cook until browned, 7 to 8 minutes; drain off excess fat if necessary. Add the garlic, onion and jalapeno and cook for 2 minutes, then return the chuck roast back to the pot with the beer, tomatoes and tomato paste.
  • Using scissors, snip the guajillo chiles into small strips. Add to the pot and bring to a boil. Mix in the chili powder, cumin, oregano, bay leaves and 2 tablespoons salt. Reduce to a simmer and simmer for 1 1/2 hours.
  • Remove the bay leaves. Add the beans to the pot. Combine the masa and 1/2 cup water in a small bowl, then stir the mixture into the pot. Continue to simmer until the chili thickens slightly, an additional 15 minutes.
  • Serve with fixins: diced tomatoes, cubed avocado, grated Cheddar, sour cream, lime wedges and cilantro leaves.

Add the cumin and cook, stirring, for 1 minute. Add the ground beef; raise the heat to high and cook, breaking up the meat with a spoon, until the meat is no longer pink. Stir in the tomatoes, water, chipotle and adobo sauce, oregano and salt and pepper. Simmer, partially covered, stirring from time to time, for 30 minutes. Steps:

  • Heat 2 Tbsp. oil in large heavy pot over medium-high. Cook salsa, cumin, chili powder, oregano, and garlic powder, stirring, until fragrant and slightly reduced, 1-2 minutes. Add black, pinto, and kidney beans, tomatoes, broth, 3/4 tsp. salt, and 1/4 tsp. pepper. Bring to a simmer, stirring occasionally. Reduce heat to medium and continue to simmer, stirring occasionally, until flavors are blended and chili is thickened, about 15 minutes. Taste and season with salt and pepper, if needed.
  • Pour oil into a medium skillet to a depth of 1/2". Heat over medium-high until thermometer registers 375°F. Working in 2 batches, fry tortilla strips, turning occasionally, until crisp and pale golden, about 2 minutes per batch. Add the turkey, 1 teaspoon salt and a few grinds of pepper and cook, breaking up any clumps with a wooden spoon, until brown, about 8 minutes. Remove the turkey and set aside. Add the garlic, celery, onion and 1/4 teaspoon salt to the pot and cook, stirring occasionally, until the vegetables have softened, about 8 minutes. Add the chile powder and tomato paste and cook, stirring, 1 minute.
  • Return the turkey to the pot and add the diced tomatoes, beans, green chiles and chicken broth. Increase the heat to medium-high and bring to a simmer, then reduce the heat and simmer until the vegetables are tender and the flavors have melded, about 30 minutes.
  • Serve the chili topped with the cheese, sour cream and scallions.

SPICY THREE-BEAN PANTRY CHILI

This vegetarian chili gets its rich flavor from caramelizing tomato paste and warming herbs, rather than long hours of cooking. Everyone has their own chili recipe or a variation of someone else's. Heck, there are probably already TWO on this site that could be just like this one. I have been making this chili for more than 25 years. The ingredients have been tweaked here and there over the years until I found just the right flavor and this is it! All I know is when I make a pot of this chili, there are never any leftovers. Like any recipe, if you leave out or change an ingredient, it doesn't come out the same way. Try it this way, then go ahead and create your own version. If you like your chili really hot, instead of hot sauce use Recipe #88224. But most of all just ENJOY IT!

1 medium yellow onion (diced)
1 large green bell pepper (diced)

2 (16 ounce) cans of bushs best chili magic chili starter (I like the Texas Medium or the Louisiana Hot)
20 ounces warm water

Steps:

  • Lightly oil the bottom of a 3-quart pot with olive oil and lightly sauté the onions, peppers and garlic. Do not brown.
  • Add the ground sirloin and brown. Do not drain off fat; this adds to flavor of the chili.
  • Mix all the dry ingredients and the hot sauce in the warm water and stir until well dissolved.
  • Pour this seasoned water mixture into the meat, peppers, garlic and onions.
  • Add the beans and the tomatoes and green chilies.
  • Mix to blend all items. Bring to a gentle boil.
  • Reduce heat and simmer for 45 minutes to an hour, stirring occasionally.
  • Serve with bread or crackers.

1 yellow or orange pepper , deseeded and chopped
2 garlic cloves , finely grated
1 tsp cumin seeds
½ tsp chilli flakes
1 tsp smoked paprika
1 tsp ground coriander
1 tsp dried oregano
400g can chopped tomatoes
2 tsp vegetable bouillon powder
400g can three bean salad (cannellini, flageolet and adzuki), drained
handful of coriander , chopped, plus extra leaves to serve
1 small avocado , stoned, halved and chopped or mashed
1 lime , cut into wedges

Steps:

  • Heat the oven to 200C/180C fan/gas 6 and bake the potatoes for 50 mins-1 hr, or until tender.
  • Meanwhile, heat the oil in a non-stick frying pan and fry the pepper and garlic for a few minutes. Stir in the cumin seeds, chilli flakes and spices, then tip in the tomatoes, bouillon powder and beans. Bring to a simmer, cover and cook for 15 mins, or until reduced to a thick sauce. Stir in the chopped coriander.
  • Cut a cross into the tops of the baked potatoes and gently press on the sides to open them out. Spoon over the chilli, then top with the avocado and squeeze over some of the lime wedges. Scatter over some coriander leaves and serve with the remaining lime wedges.
