FRESH BLUEBERRY SHERBET
This is my new favorite frozen summertime treat. This recipe is easy, requires no cooking and cooling of the blueberries and yields a smooth and velvety sherbet packed with fresh, natural blueberry flavor. "Preparation Time" includes time needed to churn in an ice cream maker as well as time needed to cure in the freezer.

- Make sure your ice cream maker's freezer bowl is frozen solid (you don't want to hear even the slightest sloshing noise when shaken). Keep in the freezer until absolutely ready to pour mixture into the machine.
- Into a 5-quart capacity food processor, using the chopping blade, place blueberries, sugar and lemon juice. Puree until smooth and foamy. Then pour in heavy whipping cream and pulse 3-5 times until mixture thickens slightly.
- Using a fine wire mesh sieve, strain for a smoother consistency. If you don't mind a naturally pulpy texture, don't worry about straining.
- Place mixture into the freezer tub of your ice cream maker and follow the manufacturers instructions for freezing. It took only 15 minutes for my machine to churn and freeze.
- With a spatula, turn sherbet into a freezer container. Freeze for 3-5 hours or until desired texture.

FABULOUS FAT-FREE FRUIT SORBET
This is such a wonderful summertime treat! I have used all kinds of fruit combinations in this; use your imagination. Far richer and intense in flavour than anything you can buy, and yet it's almost all just healthy fruit. The fruits that work best have a fairly smooth fleshy texture; things like mangoes, muskmelons, peaches, apricots, and bananas. But also good are strawberries, pineapple, blueberries and the like. Seedy or watery fruits can be used, but it is best to use them mixed with something that has a smoother denser texture, and to use less of them. Cook time is tempering time, but prep time does not include freezing time.

- Prepare the fruit by peeling, if necessary, and cutting it into chunks.
- Place on a plate or tray covered with plastic wrap.
- Make sure everything is as spread out as possible.
- Cover with more plastic wrap.
- Freeze overnight.
- Whiz the fruit through a food processor until very finely chopped.
- Add the sugar and lemon juice, adjusting either according to the sweetness and acidity levels of the fruit you are working with; if you use pineapple use orange juice or water instead of lemon or lime juice and add a little vanilla extract if it seems appropriate.
- Feel free to taste the mixture!
- Blend thoroughly, until very smooth. Scrape down the sides of the food processor regularly.
- This may take up to five minutes.
- Spoon into serving dishes or a covered storage tub and return to the freezer until dessert time.
- Put in the fridge to temper 15 minutes before serving.
MARGARITA PARFAITS
Ole! What a way to finish a summer dinner. Light and refreshing with a touch of tequila. Change the yogurt flavor and the garnish for a new desert every time.

- Fold yogurt mixture into dessert topping until well incorporated.
- Spoon into magarita glasses and garnish with a slice of lime.

STRAWBERRY ICE CREAM SODA
A wonderful summertime treat made with sweet, ripe strawberries. Modified from recipe I found in GOING SOLO IN THE KITCHEN.

- Sweeten crushed strawberries to taste with sugar (I place strawberries with sugar in blender or processor& pulse a couple of times).
- Place puree in tall glass; stir in cream and club soda.
- Add scoop of vanilla ice cream.
- If desired, garnish with fan cut whole strawberry or sprig of fresh mint.
- I have used turbinado sugar for a different taste; also can use half& half in place of cream for a thinner, less rich soda.
- Other berries would work well.
