Easy Homemade Blackberry Sauce is the perfect fresh and fruity addition to jazz up your favorite breakfast classics and tasty desserts.

4 cups blackberries (fresh or frozen)
1 cup granulated sugar
1 tablespoon fresh lemon juice
1 tablespoon cornstarch
1 tablespoon water (ONLY need if using fresh berries)

Steps:

  • Combine the blackberries and sugar in a medium saucepan over medium heat.
  • Stir frequently until the sugar mixes with blackberry juice and melts, about 2-3 minutes.
  • In a small bowl combine lemon juice and cornstarch. Pour the slurry into the saucepan with the blackberries.
  • Bring the sauce to a boil and allow it to cook for another 2 minutes as the sauce has thickened
  • Transfer to an air-tight container and store in the fridge.

1 fluid ounce blackberry schnapps
¼ lemon, juiced, or to taste

Steps:

  • Place blackberries in a small saucepan; mash gently with a fork. Stir sugar, schnapps, and lemon juice into mashed blackberries; cook, stirring constantly, over medium heat until blackberries break down and mixture begins to boil, 5 to 10 minutes. Cool slightly before serving.

This blackberry sauce recipe comes from "Preserved" by Nick Sandler and Johnny Acton. Serve this with peaches and sponge fingers, or over ice-cream (or indeed as a base for home-made blackberry ice-cream) for a speedy dessert. Posted for Zaar World Tour 2005.

1 tablespoon brandy
2 tablespoons cornstarch

  • Place the blackberries, sugar, and brandy into a saucepan, and place over medium heat. Slowly bring to a simmer, and cook until the blackberries have softened, about 10 minutes. Dissolve the cornstarch in the water, and stir into the simmering berries. Continue cooking and stirring until the sauce has thickened and reached your desired consistency, about 10 minutes.

PAN-FRIED VENISON WITH BLACKBERRY SAUCE



Pan-fried venison with blackberry sauce image

Blackberries are delicious in savoury sauces, and this version is the perfect match for the richly flavoured venison

1 tbsp olive oil
2 thick venison steaks, or 4 medallions
1 tbsp balsamic vinegar
150ml beef stock (made with 2 tsp Knorr Touch of Taste beef concentrate)
2 tbsp redcurrant jelly
1 garlic clove , crushed
85g fresh or frozen blackberry

Steps:

  • Heat the oil in a frying pan, cook the venison for 5 mins, then turn over and cook for 3-5 mins more, depending on how rare you like it and the thickness of the meat (cook for 5-6 mins on each side for well done). Lift the meat from the pan and set aside to rest.
  • Add the balsamic vinegar to the pan, then pour in the stock, redcurrant jelly and garlic. Stir over quite a high heat to blend everything together, then add the blackberries and carry on cooking until they soften. Serve with the venison, celeriac mash (see below) and broccoli.

1/3 cup sugar
3/4 cup water
1/4 cup flour

Steps:

  • Put the cranberry sauce and the blackberries in the pan.
  • Heat, stirring until the cranberry sauce melts or dissolves or whatever you want to call it.
  • Stir in the sugar.
  • Bring the sauce and berries to a boil.
  • Mix the water and flour in a cup and pour into the sauce.
  • It will thicken really quick.
  • Stir, take it off the stove.
  • Serve hot or warm, on waffles or pancakes or ice cream or pork.
