BACON, EGG AND CHEESE BREAKFAST BURGERS

Bacon, Egg and Cheese Breakfast Burgers image

Don't decide between a bacon cheeseburger and a bacon-egg-and-cheese sandwich: Combine them!

Provided by Food Network Kitchen

Time 40m

Yield 4

Number Of Ingredients 8

1 1/2 pounds 80/20 ground beef
Kosher salt and freshly ground black pepper
8 slices bacon
4 slices Cheddar or American cheese
4 soft hamburger buns, split
4 tablespoons unsalted butter, melted
4 large eggs
1/3 cup spicy ketchup

Steps:

  • Preheat the oven to 350 degrees F.
  • Shape the beef into 4 patties, each about 5-inches in diameter. Sprinkle the outside of the patties generously with salt and pepper and set aside.
  • Lay the bacon in a large nonstick skillet and cook over medium heat, until brown and crispy, about 4 minutes per side. Transfer to a paper-towel-lined plate to drain. Pour off and reserve all but about 1 tablespoon of the bacon drippings and increase the heat to medium-high.
  • Add the burgers to the skillet, and cook until well browned on the outside and medium-rare on the inside, about 4 minutes per side. Transfer the cooked burgers to a rimmed baking sheet and top each with a slice of cheese. Brush the insides of the buns with the melted butter and put on a second baking sheet buttered side-up. Bake until the cheese melts, about 3 minutes and the buns are lightly toasted, about 10 minutes.
  • Meanwhile, wipe out the skillet. Heat 1 tablespoon of the reserved bacon drippings over medium-high heat. Break the eggs into the skillet and cook until the whites are set and the yolks are still runny, about 5 minutes. Season with salt and pepper.
  • Put a burger patty on each of the bottom buns and top each with 2 slices of bacon and a fried egg. Spread the top bun with some of the spicy ketchup and put on top of the burger.

HAM AND EGG PIE

Ham and Egg Pie image

My brand new husband described this pie as his mother made it. I developed the recipe from his description and the entire family relished it throughout our 52 years of marriage.

Categories     Savory Pies

2BLEU'S COUNTRY HAM BACON (AND EGGS)

2bleu's Country Ham Bacon (And Eggs) image

Here's how to turn that salt cured ham into a delicious breakfast bacon. Do not use the ham slice you find in the refrigerated section of your grocery store. You can however, use leftover bone-in baked ham as even the smallest pieces will taste so good (nibblers). A cast iron skillet works best for a true country breakfast. The eggs are optional for this recipe, but if you have never slow cooked your eggs, or never tried them with garlic powder, it's a real treat! Leftover ham is great to chop up and use in green beans or collard greens for dinner.

Provided by 2Bleu

Categories     Breakfast

Time 1h5m

Yield 2 serving(s)

Number Of Ingredients 8

12 ounces salt-cured smoked country ham steaks
2 cups water
1 tablespoon vegetable oil
1 tablespoon butter
6 eggs
1 teaspoon kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon black pepper

Steps:

  • Cut the ham slices into about 3" pieces, removing the bone if it has one. The pieces do not have to be cut even, as I usually separate around the fat, leaving some fat for flavor.
  • CURED HAM ONLY: (If using leftover baked ham, see instructions below). Place the salt cured ham slices in a large *cast iron* pan (it's okay if they overlap at this point) and add the water, enough to cover the ham slices completely. The water may cook down some, so add more as you go as this removes the saltiness from the ham. The more water in the pan, the better.
  • Cook over med heat to a gentle simmer for about 10-15 minutes until most of the salt has dissipated into the water, turning the ham a few times to 'shake the salt out'. Remove ham slices and (using a good potholder) rinse and wipe the skillet with a clean dishcloth. Just a quick rinse/wipe to remove any salt and residue.
  • For BOTH types of ham: Place pan back on stove-top at a medium heat. Add the oil to the pan followed by the ham slices. Lay them in a single layer enough to fill pan but not overcrowd them. Do in batches if necessary. Cook for about 10-20 minutes depending on thickness, turning occasionally until browned. Drain ham onto paper towels. Add more oil to the pan if necessary for the next batch, although the ham will usually make it's own in the pan from the previous batch. You only need enough to cover the bottom of the pan.
  • EGGS: (about 15 minutes to cook) To a *nonstick* skillet, melt butter over medium-low heat (slow cooked scrambled eggs turn out extremely smooth and creamy). Beat eggs and seasonings until very well blended. When butter has melted, pour in the eggs. As they begin to firm, push them around a bit using a spatula. Continue cooking eggs low and slow while ham is cooking in the iron skillet. The ham should be done first, just place a piece of foil over top to keep warm.
  • When the eggs are about a minute from your desired doneness, place onto plates and serve with ham. (remember: scrambled eggs continue to cook after you remove them from the heat).

QUICK AND EASY BACON, EGG AND CHEESE

Quick and Easy Bacon, Egg and Cheese image

Any New Yorker will tell you a good bacon, egg and cheese (BEC) sandwich is the best way to start your day, and most likely you already have everything you need in your pantry to whip one up. The key elements to a great BEC are the melted cheese, scrambled egg that nestles perfectly onto the bread without falling off and salty crispy bacon. To make sure the cheese stays melted, we fold it into the center of the eggs just as they finish cooking so it stays warm. We found that by preparing eggs like an omelet ''package'' instead of scrambling them and topping them with cheese allowed us to adjust the size of our eggs to perfectly fit the size of our bread and hold our cheese in the ideal melted state. When you can't get to your corner deli or coffee cart, you can whip up this breakfast icon in the time it takes to walk out the door.

Provided by Food Network Kitchen

Time 10m

Yield 1 serving

Number Of Ingredients 7

2 large eggs
2 tablespoons whole milk
Kosher salt and freshly ground black pepper
1 teaspoon vegetable oil
2 slices sharp Cheddar cheese, about 1 ounce (see Cook's Note)
2 slices cooked bacon (see Cook's Note)
2 slices toasted white bread or 1 kaiser roll, split

Steps:

  • Whisk the eggs, milk, a pinch of salt and a couple of grinds of black pepper in a small bowl until smooth and combined. Heat the vegetable in a medium non-stick skillet over medium-low heat.
  • Once the skillet is warm, pour the egg mixture in and allow it to cook undisturbed until the edges are set, about 1 minute. Use a spatula to gently lift the edges of the egg and allow the uncooked egg to run underneath. Once the egg is fully set, about 4 minutes, place the slices of cheese in the center of the egg. Carefully lift each side of the egg and folder it over the cheese to form a square package about the size of your toasted bread. Flip the eggs over gently, keeping the package intact, and allow the folded side to cook and melt the cheese, about 30 seconds more.
  • Assemble the sandwich by layering the bacon on 1 slice of toast and then topping with the warm eggs. Top with the remaining slice of toast and serve immediately.

LOW-CARB BACON AND EGG QUICHE

Low-Carb Bacon and Egg Quiche image

I'm trying to go low-carb, and I found this recipe on Recipegal.com. It's so easy to make and tastes great! We use cheddar as nobody likes swiss cheese but me. It originally calls for a quiche pan, but I just used a 9-inch pie pan with great results! I also sprayed it with non-stick canola cooking spray, instead of the butter as the recipe originally called for.

Provided by Troop Angel

Categories     Cheese

Time 1h

Yield 4 serving(s)

Number Of Ingredients 5

6 large eggs
1 cup heavy cream
1 cup grated cheddar cheese or 1 cup swiss cheese
